SWEDISH MEATBALL CASSEROLE
Here is an updated version of a popular dish using frozen precooked meatballs to speed up the prep time.

Steps:
- Heat oven to 375°F. Spray 2-quart round casserole with no-stick cooking spray. Set aside.
- Cook noodles according to package directions. Drain.
- Melt butter in 10-inch skillet until sizzling; add mushrooms. Cook, stirring occasionally, 5-6 minutes or until softened.
- Combine water and gravy mix in 3-quart saucepan. Cook over medium heat 3-5 minutes or until mixture comes to a boil and is thickened. Remove from heat; stir in sour cream and nutmeg. Add cooked egg noodles, mushrooms, meatballs and parsley; gently stir to coat.
- Spoon noodle mixture into prepared casserole. Bake 30-40 minutes or until heated through.

- In a large pan, heat some oil and sauté the red onion for about 2-3 minutes. Add the garlic and cook for another minute. Then add the bell pepper, the celery, and the vegan sausage. Cook for another 3 minutes.
- Stir in the cooked rice, the kidney beans, the crushed tomatoes, the spices, the soy sauce, and the Tabasco and cook for about 5 minutes.
- Season with salt and cayenne pepper and stir in the green onions and the chopped parsley.

THE BEST MEATBALLS
I never knew how to make good meatballs until I found this recipe. I normally make mine with just ground beef and they still taste great. I've used the combination of pork, beef and veal and they are equally good. Definitely use fresh bread crumbs and freshly grate your cheese instead of using the canned variety...it really does make a difference.

Steps:
- Combine beef, veal, and pork in a large bowl. Add garlic, eggs, cheese, parsley, salt and pepper.
- Blend bread crumbs into meat mixture. Slowly add the water 1/2 cup at a time. The mixture should be very moist but still hold its shape if rolled into meatballs. (I usually use about 1 1/4 cups of water). Shape into meatballs.
- Heat olive oil in a large skillet. Fry meatballs in batches. When the meatball is very brown and slightly crisp remove from the heat and drain on a paper towel. (If your mixture is too wet, cover the meatballs while they are cooking so that they hold their shape better.)

JAMBALAYA BALLS
Steps:
- Preheat the oven to 450°F. Drizzle the olive oil into a 12 × 17-inch rimmed baking sheet and use your hand to evenly coat the entire surface. Set aside.
- Combine the ground pork, ground chicken, sausage, shrimp, rice, onions, bell peppers, eggs, bread crumbs, tomato paste, garlic, paprika, red pepper flakes, cayenne, and salt in a large mixing bowl and mix by hand until thoroughly incorporated.
- Roll the mixture into round, 3/4-inch meatballs, making sure to pack the meat firmly. Place the balls in the prepared baking dish, being careful to line them up snugly and in even rows vertically and horizontally to form a grid. The meatballs should be touching one another.
- Roast for 14 minutes, or until the meatballs are firm and cooked through. A meat thermometer inserted into the center of a meatball should read 165°F.
- Allow the meatballs to cool for 5 minutes in the baking dish before serving.

- Combine tomatoes, rice, water, green pepper, onion, garlic, 3/4 teaspoons salt, oregano, thyme and bay leaf in 3 quart casserole.
