SWEET AND SOUR PINEAPPLE MEATBALLS

Steps:
- Combine ground beef, onion, egg, 1 tablespoon cornstarch, salt, and pepper in a bowl. Use a cookie scoop to shape into meatballs.
- Heat oil in a large skillet over medium heat. Add meatballs and cook, turning often, until browned and no longer pink in the centers, 7 to 10 minutes. Remove meatballs from the skillet and drain oil, reserving 1 1/2 tablespoons of drippings.
- Drain pineapple chunks from the can, reserving juice; set pineapple aside. Add enough additional pineapple juice to make 1 1/2 cups total.
- Combine pineapple juice, sugar, 1/2 cup plus 1 tablespoon water, 1/4 cup plus 2 tablespoons vinegar, soy sauce, and remaining 2 1/2 tablespoons cornstarch in a bowl; mix well. Stir into drippings in the skillet.
- Cook over medium heat, stirring constantly, until smooth and thickened. Add meatballs, pineapple chunks, and bell peppers. Cook until thoroughly heated, coating well, about 5 minutes. Serve over hot cooked rice.

- In a large bowl, combine the first five ingredients. Crumble beef over mixture and mix well. Shape into 1-in. balls. , In a large skillet, brown meatballs in oil, turning often. Remove with a slotted spoon and set aside; drain., To the skillet, add the pineapple, green peppers, sugar, vinegar, oil and soy sauce. Cover and simmer until tender, about 5 minutes. Return meatballs to skillet; simmer until meat is no longer pink. , Combine cornstarch and water until smooth. Stir into skillet. Bring to a boil; cook and stir for 2 minutes or until thickened.

- Combine ingredients for meatballs and form into balls (approx. 36).
- In oiled skillet on medium heat, brown meatballs.
- After meatballs have been browned, add all other ingredients except the green peppers.
- Reduce heat, cover and simmer for 7 minutes.
- Add green peppers and cook for an additional 6 minutes or so uncovered until meatballs are completely cooked and veggies are to desired tenderness.
- Serve over rice or egg noodles.
- Enjoy!

- Combine the meatballs, pineapple, chicken stock, ketchup, onion, peppers and vinegar in a Dutch oven. In a small bowl, whisk the soy sauce with the cornstarch until smooth. Stir into the meatball mixture.
- Cook over medium-high heat, stirring often, for 10 minutes, or until the mixture comes to a boil and the sauce is thickened slightly. Stir in the rice and return to a boil. Remove from the heat.

- Mix together 1/4 cup barbecue sauce, beef, onion, 1/4 cup rice, seasoned salt and pepper in large bowl until blended. Divide mixture into 24 portions; roll firmly into 1-1/4-inch balls.
- Spray large skillet with cooking spray; heat over medium-high heat. Place remaining 3/4 cup barbecue sauce, pineapple and water in skillet; stir to combine. Place meatballs in skillet on top of sauce mixture.

- Make the sauce: Drain the pineapple, reserving juice (set pineapple chunks aside). In a small bowl, whisk the cornstarch and brown sugar together. Add the pineapple juice, vinegar, ground ginger, and soy sauce to the brown sugar mixture. Stir until smooth. Set bowl aside.
- Make the meatballs: In a large bowl, mix the ground beef, bread crumbs, chopped onion, egg, salt, ginger and milk until thoroughly blended (I use a fork to mix). Using your hands, shape the mixture into meatballs (approx. 12-15 -2" meatballs). In a large skillet, heat the shortening (or oil) on medium heat. When skillet is very hot, carefully add the meatballs, one at a time. Cook the meatballs, making sure you keep them turned so that all sides brown. When fully cooked (5-6 minutes), remove the meatballs from pan and place on paper towel lined plate to absorb any grease. Keep the meatballs warm.
- Drain the oil from the skillet after removing meatballs. Wipe skillet with paper towel to remove any small leftover "crumbles". Over medium heat, add the sauce mixture to the skillet. Cook, stirring constantly until it thickens and boils for 1 minute. Add the peppers, then the meatballs back into the skillet; gently stir until meatballs are evenly coated with sauce.

- Preheat your oven to 350 degrees. Make the meatballs by combining all meatball ingredients in a large bowl. Mix well and shape into about 1” meatballs.
