Steps:
- Preheat oven to 350 degrees F. In a large bowl, combine the ground beef, eggs, crushed crackers, onions, salt, and pepper. Mix these ingredients together using your hands. Knead until all ingredients are evenly mixed. Place the hamburger mixture into a loaf pan and pat down firmly and evenly. Using your finger, poke 1 inch deep holes into the top of the meat loaf, placing them about 1 inch apart. Pour the ketchup on top of the meat loaf and spread out evenly. Sprinkle the brown sugar out evenly over the ketchup. Place in the preheated oven and bake for approximately 75 minutes. Remove the meat loaf from the pan and place it on a platter. Be careful when removing the meat loaf from the baking pan. Use a fork to loosen it from the bottom of the pan if the meat loaf sticks. Use two forks to lift it from the pan. Slice the meat loaf to the desired thickness and serve.

MEAT LOAF WITH BROWN SUGAR-KETCHUP GLAZE
If you like, you can omit the bacon topping from the loaf. In this case, brush on half of the glaze before baking and the other half during the last 15 minutes of baking. If you choose not to special-order the mix of meat below, we recommend the standard meat loaf mix of equal parts beef, pork and veal, available at most grocery stores.

- Preheat the oven to 350 degrees. Line a baking sheet with tin foil then place a wire rack on top. Fold a piece of tin foil into a 10 x 6 inch rectangle and place on top of the wire rack; set aside.
- Chop some leftover rustic bread into cubes (I used roasted garlic bread) making sure to slice the bottom of the loaf off first (it's too hard for breadcrumbs). Once the bread is in cubes, place into a food processor, and pulse until you have fine bread crumbs.
- Heat the olive oil in a skillet over medium heat. Add the onion; cover and cook, stirring occasionally, until the onion has softened; about 5-7 minutes. Add the minced garlic and cook, stirring constantly, for 1 minute. Remove from the heat and set aside to cool.
- Whisk together the milk, egg, thyme, mustard, Worcestershire sauce, hot sauce, sea salt, and freshly cracked pepper, to taste in a small bowl. In another large bowl, mix the turkey, bread crumbs, parsley, cooked onion mixture, and egg mixture together with your hands until uniformly combined. Press the mixture together into a compact mass, then turn it out onto the foil rectangle on top of the wire rack. Using your hands, press the meat into an evenly thick loaf about 2 inches tall and 1 inch smaller than the foil on all sides.
