LOVER'S LOAF
When I met my current boyfriend, I tried to lure him over to my house by promising to cook my favorite meatloaf. It doesn't sound very romantic, but this recipe is much fancier and delicious than your mother's meatloaf. Luckily for me, he was impressed. Serve this meatloaf with mashed potatoes. The juice from the meatloaf will act as a gravy. Since the recipe makes 2 loaves, you can freeze one or deliver the wrapped loaf to a neighbor with cooking instructions attached and a bottle of red wine.

- Preheat oven to 400 degrees F (200 degrees C).
- Place spinach in a microwave safe bowl with a splash of water. Cover, and microwave until the spinach has wilted, about 5 minutes. Drain and allow to cool.
- In a large bowl, mix together beef, pork, eggs, bread crumbs, and Romano cheese. Season with salt and pepper. Divide into two equal portions, and roll each into balls.
- Place a 15-inch long piece of plastic wrap on your work surface and lightly sprinkle with flour. Place one of the balls onto the plastic wrap and pat into a thin, 8-inch by 10-inch rectangle. Cover evenly with half of the spinach and 3 slices of prosciutto, then shingle three slices of provolone running along the edge facing you.
- Using the plastic wrap to lift the meat, roll the loaf starting from the cheese side into a firmly packed spiral, peeling away the plastic wrap as you go. Make a second loaf with remaining ingredients.
- To bake, pour wine into a broiler pan bottom. Oil the slotted top with some of the olive oil before placing the loaves on and brushing them with remaining oil. Cover loaves with a sheet of aluminum foil and bake in preheated oven for 40 minutes.
- Remove the foil and pour water into the pan. Continue baking for another 35 minutes, until the internal temperature reaches 160 degrees F (72 degrees C). Allow to rest 10 minutes before slicing into 1-inch thick slices to serve.

PROSCIUTTO-STUFFED MEAT LOAF
An amazing blend of flavors-including prosciutto, sun-dried tomatoes, fresh basil and cheese-make this rolled loaf something special.

- In a large skillet, saute onion in oil and butter for 2 minutes. Add garlic; cook 1 minute longer. Add mushrooms; cook 6-8 minutes longer or until mushrooms are tender and no liquid remains. Stir in salt and pepper. , In a large bowl, combine the eggs, bread crumbs, Parmesan cheese, parsley, thyme and mushroom mixture. Crumble beef and sausage over mixture; mix well., On a large piece of heavy-duty foil, pat beef mixture into a 15x10-in. rectangle. Layer the prosciutto, Havarti, basil and tomatoes to within 1 in. of edges. Roll up jelly-roll style, starting with a short side and peeling foil away while rolling. Seal seams and ends. , Place seam side down in a greased 13x9-in. baking dish. Bake, uncovered, at 350° for 75-85 minutes or until no pink remains and a thermometer reads 160°. Let stand for 5 minutes. Using two large spatulas, carefully transfer meat loaf to a serving platter.

ITALIAN MEATLOAF ROLL-UP
Adapted from a recipe from Rachael Ray's 30 Minute Meals. Original recipe calls for raisins and pine nuts - not my thing. I have prepared it with ground beef and pork only, no veal. Easy to prepare on a weeknight!!

Steps:
- Pre-heat oven to 350°F.
- Mix meat and remaining meatloaf ingredients.
- Flatten meat mixture out on a wax paper lined cookie sheet in a thin layer 1/2" thick x 12" long x 6 to 8" wide.
- Cover meat with a layer each of arugula (or spinach), prosciutto and cheese.
- Use the wax paper to help roll up the meat into a large log working across the 6 or 8" side, resulting in a 12" log.
- Seal ends, place seam side down on a cookie sheet (I line with foil). Drizzle lightly with extra virgin olive oil.
- Roast meat roll for approximately 40 minutes.

MEAT LOAF STUFFED WITH PROSCIUTTO AND SPINACH
Steps:
- Line a work surface with a 15-inch-long sheet of plastic wrap. In a bowl, mix the flour with the remaining 1/2 cup of bread crumbs. Sprinkle half of the crumb mixture all over the plastic wrap. Transfer half of the meat loaf mixture to the plastic and press it into a 12-by-10-inch rectangle, about 1/2 inch thick. Lay half of the spinach leaves over the meat, leaving a 1-inch border on the short sides. Arrange half of the carrots over the spinach, and top with half the prosciutto and sliced cheese. Starting from the long end of the plastic wrap closest to you, tightly roll up the meat loaf, tucking in the filling and using the plastic wrap to guide you; discard the plastic. Repeat with another 15-inch sheet of plastic and the remaining bread crumbs, meat mixture, spinach, carrots, prosciutto and cheese. Drizzle each meat loaf with 2 tablespoons of oil. Put the rosemary sprigs in the bottom of a broiler pan and pour in the red wine. Cover with the broiler pan grate. Set the meat loaves about 2 inches apart on the grate. Bake in the center of the oven for 40 minutes. Turn the broiler pan around and pour the water through the grate. Continue baking for about 35 minutes longer, or until an instant-read thermometer inserted in the center of each meat loaf registers 165°. Transfer the meat loaves to a carving board and cover loosely with foil. Discard any cheese from the bottom of the pan and strain the pan juices into a small saucepan. Boil the pan juices over high heat until reduced to 1 cup, about 5 minutes. Pour into a serving bowl and season with salt and pepper. Using a serrated knife, slice the meat loaves 1 inch thick and serve, passing the pan juices at the table. Make Ahead - The unbaked meat loaves can be refrigerated overnight. Let return to room temperature before baking.

- Preheat oven to 350 degrees F. Place oven rack in middle of oven. Grease a 13-inch by 9-inch baking dish or pan and line with either parchment paper or aluminum foil.
- In a large frying pan or skillet over medium-high heat, heat the olive oil and butter. Add onion and cook until softened, approximately 4 minutes. Add garlic and mushrooms; cook until the mushrooms are soft and the liquid has evaporated, approximately 6 to 8 minutes. Season to taste with salt and pepper; set aside to cool slightly before proceeding.
- In a large bowl, gently combine eggs, bread crumbs, Parmesan cheese, parsley, thyme, and cooled mushroom mixture. Crumble beef and sausage over the top and mix well. NOTE: I find that using my hands is the best way to mix all the ingredients together.
- Gently pat the meat mixture onto a 10-inch by 13-inch rectangle on a sheet of wax paper or plastic wrap. With the longer end facing you, layer the Filling Ingredients on the bottom 2/3's of the meat. First layer the prosciutto, then Havarti cheese slices, basil leaves, and then sun-dried tomatoes.
