MEAT LOAF-STUFFED PEPPERS
With my husband-who won't eat the same thing twice-I've had to learn to be creative with leftovers (around here, we call it "recycled food"). I put this recipe together to use up leftover meat loaf. When it's dressed up with homegrown peppers, he doesn't know he really is getting yesterday's main course! Actually, leftovers are both coming and going in this recipe-if I have any peppers left over, I use them to make my spaghetti sauce. Although we live close to Houston, there's a pasture near our house and we can hear the cows that graze there. We have two sons, 4 and 2.

- Remove tops and seeds from peppers. Immerse in boiling water for 3 minutes; drain. Pour 1 cup of spaghetti sauce into a shallow baking dish; set aside. , In a saucepan, combine meat loaf, rice, onion, chopped green pepper and remaining spaghetti sauce. Cook and stir over medium-high heat for 5-10 minutes or until heated through. Stuff each pepper with meat loaf mixture; place on sauce in baking dish. , Bake, uncovered, at 375° for 15-20 minutes or until heated through. Sprinkle with the cheese and let stand until melted.

- Preheat broiler. In a large skillet, cook turkey and beef over medium heat until no longer pink, 5-7 minutes, breaking into crumbles; drain., Prepare rice according to package directions. Add rice to meat mixture., Cut peppers lengthwise in half; remove seeds. Place on a foil-lined 15x10x1-in. baking pan, cut side down. Broil 4 in. from heat until skins blister, about 5 minutes. With tongs, turn peppers. , Fill with turkey mixture; top with enchilada sauce and sprinkle with cheese. Broil until cheese is melted, 1-2 minutes longer. If desired, top with cilantro.

- Preheat oven to 350 degrees F (175 degrees C). Spray a 9x11-inch baking dish with cooking spray.
- Cut 3/4 each of onion, green bell pepper, red bell pepper, and yellow bell pepper into thin slices. Dice remaining 1/4 of onion and peppers.
- Mix ground beef, diced onion and peppers, tomato sauce, crushed crackers, brown sugar, egg, Worcestershire sauce, chicken stock, olive oil, steak seasoning, garlic, and pepper together in a bowl until well-combined.
- Spread 1/2 of the beef mixture into the bottom of the prepared baking dish. Top meat with sliced onion and peppers, leaving a 1-inch border. Spread remaining beef mixture over vegetables, tucking in sides to seal vegetables in the center of the meatloaf. Pour ketchup over the top of the meatloaf.
- Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

I found this for the World Tour. This woman has a lot of great recipes: Patricia Wriedt - Mexico City - [email protected] and I must give her the credit! I altered her recipe just enough to be easier to read. She says, "Here are all the recipes I have write in English. I think some of them are not in correct English but I think the people understand this. Saludos, Patricia. " I did some research & found that cashews & pecans are native to Mexico so I think they would be good choices for '1/2c nuts'.

- * Bread: put a piece of bread in a dish with some milk, the amount of milk the bread can absorb in one hour is enough(I think bread will absorb all it will in about 5 minutes!). Grind the bread in a blender adding the amount of milk it needed for to mix.
- Poblanos: peel and devein the poblanos as usual, fry it in a little amount of vegetable oil.
- Hard boiled eggs: cut the eggs in a cube pieces.
- Meat: Mix the bread with the meat, spices, 1 egg and salt. Divide in two parts, put in a mold one part, then put the slices of poblano, the nuts and hard eggs, cover with the other half of the meat.
- Cook in the oven at 350F for 1 hour.

- Heat oven to 350°F
- Combine ground beef, onion, bread crumbs, egg, chipotle pepper, salt and black pepper in large bowl, mixing lightly but thoroughly.
- Divide beef mixture in half. Shape each half into 8 x 4-inch loaf. Place 1 loaf on rack in broiler pan. Arrange half of the poblano pepper strips lengthwise over loaf, leaving 1/4-inch border around edge. Sprinkle cheese over peppers; top with.
- remaining peppers. Place remaining loaf on top; press edges of loaves together to seal, reshaping loaf if necessary.
- Brush adobo sauce over top and sides of meatloaf.
- Bake in 350°F oven 1 hour and 10 minutes to 1 hour and 20 minutes to medium (160°F) doneness, until beef is not pink in center and juices show no pink color.
- Let stand 10 minutes. Cut into slices.

- Preheat oven to 375 degrees F (190 degrees C).
- Combine ground beef, 1/2 of the tomato sauce, and 1/2 of the Colby-Jack cheese together in a large bowl; add tortilla chips, onions, eggs, green chile peppers, chili powder, and salt and mix well. Pack meat mixture into an 8x4-inch loaf pan.

- Soak the toothpicks in water for 15 minutes.
- Combine the cream cheese, sun-dried tomatoes, garlic, and cilantro in a large bowl. Mix well.
- Preheat an outdoor grill for medium heat, then lightly oil the grate.
- Cut a slit lengthwise through each pepper without slicing it in half.
- Cut another slit about ¼ inch from the stem across the previous slit, forming a 'T'.
- Remove seeds, as desired, using a paring knife.
- Fill each pepper with the cream cheese stuffing mixture using a small spoon.
- Wrap each pepper with a slice of raw bacon.
- Slide 1 toothpick through the center of each pepper to hold onto the bacon.
- Grill the stuffed peppers for 15 minutes.
- Turn, then cook for 10 minutes until the bacon is crisp.

- 1. Preheat oven to 375 degrees F. These are some of the main ingredients I used.
- 2. Cut the onions, peppers & garlic and process in food processor or by hand to desired size.
- 3. Using a very large bowl, add in the ground beef.
- 4. Next add in the chopped veggies & dry ranch dressing & mix together to blend.
- 5. Now add in both parmesan cheeses, catsup or BBQ sauce & stir to mix together.
- 6. Drain diced tomatoes throughly before adding to meat mixture.
- 7. Measure out the coconut flour and add to meat mixture along with the spices & evaporated milk and mix until mixture holds together. NOTE: COCONUT FLOUR HELPS TO KEEP THE MEAT MIXTURE TOGETHER.
- 8. Wash & prep poblano peppers, cut in half, spray a large casserole dish with non stick cooking spray, and add in the pepper halves. I needed to use 2 dishes.
- 9. Shape Meat mixture to fill each poblano pepper half. Then repeat until all are filled.
- 10. Top each half with a half strip of bacon. I pre cooked mine in the microwave for a couple of minutes to remove some of the fat. Then pour sauce in bottom of dish around peppers. If you are making two dishes as I did, then reserve half of the sauce for the other casserole dish.
- 11. Now cover each dish with a lid or tightly with aluminum foil. Then place in preheated 375 degrees F. oven & bake for 50 minutes.
- 12. Remove lid or cover after 50 minutes, then top each portion with shredded mozzarella cheese. Return to oven for 10 to 15 minutes or until cheese melts.
- 13. Remove from oven allow to sit for a few minutes before serving with some of the added sauce if desired. - Preheat oven to 350 degrees and line two baking sheets with aluminum foil. Place 8 poblano halves on each baking sheet, cut side facing up and bake on two center racks for 10-12 minutes, rotating baking sheets halfway through. Remove from oven and let cool briefly.
- In a large bowl, add the ground beef through the tabasco sauce, then add half of the monterey jack cheese and half of the pepper jack cheese. Mix by hand until all the ingredients are thoroughly and evenly incorporated. Spoon mixture into each poblano half, pressing the mixture down to fill the whole cavity. Mound excess meatloaf mixture up in the center of each pepper, as the meatloaf will shrink as it cooks. Place both baking sheets on the two center racks and bake for 40 minutes, rotating the baking sheets halfway through.
- Remove baking sheets from the oven and spoon 2 tablespoons of salsa onto each meatloaf, then sprinkle with the remaining monterey and pepper jack cheese, then sprinkle with the crumbled queso fresco. Place sheets back into the oven and bake until cheese is melted and bubbly, about 8-10 minutes. Remove from oven and let sit for a couple minutes before serving.
