I created this recipe when my children were young and "meat loaf shy". They loved the potato surprise inside and the sauce that has a mild zip. Occasionally, I tuck canned green beans in the center of the potatoes to create a one-dish meal. -Dava Beck, Amarillo, Texas

1-1/3 cups water
1/3 cup milk
2 tablespoons butter
1-1/2 teaspoons salt, divided
1-1/3 cups mashed potato flakes
1 egg, lightly beaten
1/2 cup quick-cooking oats
1/2 cup chopped green pepper
1/3 cup chopped onion
3/4 teaspoon pepper
1 pound lean ground beef
1 can (11-1/2 ounces) spicy hot V8 juice
1/4 cup ketchup

Steps:

  • In a large saucepan, bring water, milk, butter and 1/2 teaspoon salt to a boil. Remove from the heat; stir in potato flakes. Let stand for 30 seconds. Fluff with a fork; set aside., In a large bowl, combine the egg, oats, green pepper, onion, pepper and remaining salt. Crumble beef over mixture and mix well., On a piece of waxed paper, pat beef mixture into a 12x8-in. rectangle. Spoon mashed potatoes lengthwise down the center third to within 1 in. of edges. Bring long sides over potatoes to meet in center; seal seam and edges., Place seam side up in a greased 13x9-in. baking dish. Bake, uncovered, at 350° for 30 minutes; drain. Pour V8 juice over loaf. Top with ketchup. , Bake 18-22 minutes longer or until meat is no longer pink and a thermometer reads 160°. Let stand for 5 minutes before slicing.

Forget mashed potatoes as a side dish and reinvent meatloaf with this spud-stuffed version. The potatoes are ready in no time, thanks to your microwave, and could easily become a weeknight go-to recipe all on their own.

1 pound russet potatoes (about 2 medium), scrubbed clean
1/2 stick (4 tablespoons) unsalted butter, cut into pieces, at room temperature
1/3 cup sour cream
2 teaspoons finely chopped fresh chives
Kosher salt
1/2 cup breadcrumbs
2 tablespoons extra-virgin olive oil
1/2 medium onion, diced
2 cloves garlic, minced
2 teaspoons dried oregano
Kosher salt and freshly ground black pepper
2 1/2 pounds meatloaf mix (or a combination of ground beef and pork)
1/3 cup grated Parmesan
2 teaspoons Worcestershire sauce
2 large eggs, lightly beaten
1/2 cup ketchup
1 teaspoon dark brown sugar
1 teaspoon apple cider vinegar
1 pound frozen peas
2 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
Unsalted butter, at room temperature, for serving
Coarsely ground black pepper, for serving

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with foil.
  • For the mashed potatoes: Poke each potato with a fork several times and microwave until soft, about 15 minutes (or use your microwave?s potato setting). Cool until you are able to handle them with a towel, about 2 minutes. Halve the potatoes and scoop out the flesh with a spoon and discard the skin. Mash the potatoes and butter in a medium bowl until smooth then fold in the sour cream, chives and 1 teaspoon salt until well combined. Set aside.
  • For the meatloaf: Toast the bread crumbs in a dry skillet over medium heat until browned and fragrant, about 1 minute. Transfer to a large mixing bowl and set aside. Add the oil, onions, garlic, oregano, 1/2 teaspoon salt and 1/2 teaspoon pepper to the skillet and cook, stirring, until onions are tender, about 8 minutes. Let cool slightly. Add the onion mixture to the bread crumbs along with the meatloaf mix, Parmesan and Worcestershire sauce. Toss and mix gently. Add the eggs and mix it completely into the meat mixture.
  • Transfer 1/2 of the meatloaf mixture to the prepared baking sheet and gently press into a 12- by-3-inch rectangle. Gently create a well down the middle of the meatloaf mixture with a 1/2-inch wall on all four sides. Spoon the mashed potato mixture into the well. Working with a quarter of the remaining meatloaf mixture, gently flatten the mixture with the palms of your hands. Lay the meatloaf mixture over 1/2 of the mashed potatoes. Repeat with the remaining meatloaf mixture ensuring the potatoes are completely enclosed.
  • For the glaze: Whisk together the ketchup, brown sugar and vinegar in a small bowl. Spoon the glaze evenly over the entire loaf.
  • Bake until an instant read thermometer registers 160 degrees F in the center of the loaf, about 45 minutes.
  • While the meatloaf is cooking, cook the peas according to package directions. Toss with the butter and season with salt and pepper. Keep warm.
  • Slice and serve the meatloaf with butter, black pepper and the peas.

Steps:

1 large onion
3/4 teaspoon salt (or to taste)
1 (8-ounce) can tomato sauce (divided)
1 1/2 pounds ground beef (85% lean)
1 cup soft breadcrumbs
2 tablespoons stock, water, or milk
1 teaspoon Dijon mustard
1 1/2 teaspoons seasoned salt
1/4 teaspoon ground black pepper
2 tablespoons minced onion

Steps:

  • Heat the oven to 350 F.
  • Grease a 2-quart baking dish or shallow casserole.
  • Peel the potatoes and cut them into 1/4-inch rounds. Put the potatoes in a bowl.
  • Slice the onion into quarters. Mince one of the quarters and set aside. Slice the remaining quarters and add them to the potatoes. Toss the potatoes and onions with 3/4 teaspoon of salt and transfer them to the baking dish.
  • Remove 2 tablespoons of the tomato sauce from the can and set aside.
  • In a large bowl, combine the ground beef with the reserved minced onion, breadcrumbs, the remaining tomato sauce, the stock or water, mustard, seasoned salt, and pepper. Mix well.
  • Spread the meatloaf mixture over the potatoes and pat it to an even thickness.
  • Bake uncovered at 350 F for 1 hour and 10 minutes. If the potatoes are still too firm, cover the baking dish with foil and cook for about 10 minutes longer. Spread with the reserved 2 tablespoons of tomato sauce a few minutes before it's ready.

Steps:

  • Preheat oven to 450°F. Combine zucchini, peppers, and onions in medium bowl. Add oil and 1 tablespoon rosemary; toss to coat. Spread evenly on rimmed baking sheet; sprinkle with salt and pepper. Roast until vegetables are tender, about 25 minutes. Remove from oven; cool.
  • Preheat oven to 375°F. Mix ground beef, mozzarella, panko, basil, marjoram, 1 1/2 teaspoons salt, 1/2 teaspoon pepper, dried crushed pepper, 1 tablespoon rosemary, and 1 cup roasted vegetables in large bowl. Whisk 1/2 cup ketchup, eggs, and wine in medium bowl. Add to beef mixture; stir with wooden spoon until well incorporated; spoon into 9x5x3-inch loaf pan, forming rounded top.
  • Spoon 1/2 cup ketchup over top of loaf. Bake meatloaf until cooked through, juices run clear, and top is browned, about 1 hour 10 minutes. Remove pan from oven; let meatloaf rest 20 minutes.
  • Rewarm remaining vegetable mixture in large nonstick skillet. Turn meatloaf out; cut into 1-inch-thick slices. Top with warm roasted vegetable mixture; serve with mashed potatoes.
  • *Flaky panko crumbs are the best substitute for fresh breadcrumbs in almost anything, including meatloaf. Look for them in the Asian foods section of the supermarket and at Asian markets.

4 tablespoons butter (1/4 cup)
1 tablespoon minced garlic (about 3 large cloves)
1/2 teaspoon fine sea salt
1/3 cup extra virgin olive oil
minced chives (for garnish, optional)

Steps:

  • Place raw red potato cubes in a large steamer basket over a large pot of boiling water. Cover and steam until very tender, 25 to 30 minutes.
  • When potatoes are nearly tender, melt butter in a small saucepan. Add garlic; cook and stir until fragrant, about 1 minute. Add salt and olive oil; stir until just heated through. Remove from heat.

Now a famous recipe thanks to being featured on Rachael Ray Show, I've lost track of how many wrote me to say this is the greatest meatloaf they've ever had. Done Bundt-style so it's served like a cake and filled with mashed potatoes in the hollow ring center, this epic meal is all cooked and ready at the same time.

1/2 stick (4 tbsp) of salted butter
1/2 cup of half & half or heavy cream
5.2 oz of Boursin cheese (in deli/fancy cheese section of most markets or you can use 4 oz/half a brick of cream cheese or 4 oz of sour cream instead)
1 tsp of kosher salt
1 tsp of black pepper
1 tsp of garlic powder
1/2 tsp of Italian seasoning
1/4 cup of chives, sliced
1.5 lbs of baby white or Yukon potatoes, rinsed, skin-on and quartered
1.5 lbs of baby red potatoes, rinsed, skin-on and quartered
(NOTE: You can also use 3 lbs of Yukon Gold or Russet potatoes - just peel and quarter those)
5 cloves of garlic
1.5 cups of chicken broth (I used 1.5 tsp of Chicken Better Than Bouillon + 1.5 cups of water)
1/2 cup of ketchup
1/4 cup of barbecue sauce
1 tbsp of yellow mustard
1 tbsp of honey
1 tbsp of balsamic glaze
1 tsp of Worcestershire sauce
2 tbsp of brown sugar (either light or dark is fine)
1 lb of ground sirloin beef (85%-90% lean - the less lean, the better)
1/2 lb of ground pork
1/2 lb of ground veal
(NOTE: Although I think it's the best combo for the best flavor, if you don't want to use pork and/or veal, you can add more ground beef instead. Whatever combo of meat you use, just make sure it totals 2 lbs)
Half a yellow onion, grated (a cheese grater works great)
1/2 cup of grated Parmesan cheese
1 cup of breadcrumbs
3 tbsp of crushed garlic
1 tbsp of seasoned salt
2 tsp of black pepper
2 tsp of dried oregano
2 tbsp of dried parsley
1/2 cup of whole milk
2 tbsp of ketchup
2 tbsp of barbecue sauce
2 eggs, slightly beaten

Steps:

  • In a large bowl, mix together all the meatloaf ingredients by hand for about 2 minutes until it clumps together and stays in a giant meatball formation. Spray a bundt pan (use this one for best results) with non-stick cooking spray and pack the meatloaf mixture into it. Cover with non-stick foil or spritz non-stick spray on the foil and puncture a hole in the middle of the foil so the steam can go through the bundt pan's center - DO NOT forget to do this (NOTE: If you don't want to use the bundt, you can shape the meat into a rectangular loaf and rest it on non-stick aluminum foil with the sides of the foil folded up so it covers all sides of the meatloaf with the top fully exposed. Just make sure the loaf is even in terms of shape or it may not cook evenly - which is why I suggest using this fabulous bundt pan for guaranteed even cooking results and a lovely ring shape)
  • Add the potatoes, chicken broth and garlic cloves to the Instant Pot. Rest the trivet on top of the potatoes and garlic (press it down good so the trivet rests flat) and then rest the bundt pan on top of the trivet. Secure the lid and hit "Manual" or "Pressure Cook" at High Pressure for 35 minutes (NOTE: I did this in a 6qt and it fits absolutely perfectly)
  • While the meatloaf's cooking, mix together all the ingredients for the meatloaf glaze in a bowl until well combined. Set aside when done
  • Once the Instant Pot has finished cooking, perform a quick release. Pre-heat the oven to 400 degrees while the steam's releasing
  • Using some tongs and a dish towel/oven mitt, remove the bundt from the pot. Pour out any excess drippings from the bundt into a hot-oil proof container over the sink, carefully securing the meatloaf in place with a spatula or dish/paper towel so it doesn't slide out (that would be a shame)
  • Line a baking sheet with non-stick foil or spray some non-stick cooking spray on regular foil. Place the foil-lined baking sheet over the bundt and, firmly holding them together with your hands protected from the heat, quickly flip upside down. The meatloaf will slide right out of the bundt and onto the foil. (If it breaks apart a little since it's super moist and tender, that's okay and you can easily place it back into formation). Brush the meatloaf glaze all over the meatloaf and pop it into the oven for 5-10 minutes until the glaze caramelizes (I went for 7 minutes). Keep an eye on it as all ovens vary! (NOTE: If you didn't use the bundt pan, just fold the foil sides down around the meatloaf, drain the drippings into a hot-oil proof container over the sink and then place the meatloaf on a baking sheet with the non-stick foil under it)
  • While the meatloaf's in the oven, use a potato masher to mash the potatoes to the desired consistency and then add in all the "Potatoes After Mashing" ingredients. Stir until well combined and adjust any seasonings to taste
  • Remove the meatloaf from the oven and carefully transfer to a serving dish or cake platter using two spatulas supporting the bottom. Place some of the mashed potatoes in the center of the ring (for presentation) and place the rest in a serving dish
  • Enjoy this epic feast!
