I was hesitant about posting this recipe - it's the macaroni salad I grew up with, and pretty basic. But it is so darned good that I decided to go ahead.

MEAL-IN-ONE MACARONI SALAD
Great for those hot summer nights when it's too hot to cook, this is a very versatile recipe. We like it served with crisp breadsticks. Best if made a day or two before serving but can be served after 3 hours of chilling. Amount of salt to use will depend on type of meat used.

- Cook macaroni, drain well. Combine macaroni, celery, green pepper, meat, olives and onion in large bowl.
- In separate small bowl, blend together mayonnaise, vinegar, salt and dill weed. Add to macaroni mix and toss lightly. Cover and chill at least 3 hours. Just before serving, add tomatoes and cheese, tossing lightly.

- Heat the oil in a large pot over medium-high heat. Add the onion and cook, stirring occasionally, until softened 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the chili powder, smoked paprika, red pepper flakes (if using), 1 teaspoon salt and a few grinds of black pepper and stir to combine. Add the beef and break it up into small pieces with a large spoon; cook, stirring occasionally, until beef is cooked through and no longer pink in the center, 6 to 7 minutes. Stir in the tomato paste and Dijon until combined. Pour in the chicken stock and 1 teaspoon salt, stir to combine and bring to a boil, 6 to 7 minutes. Add the elbow macaroni and cook, stirring occasionally, until the sauce has thickened and the pasta is al dente, 9 to 11 minutes. Remove from the heat and stir in the Cheddar and cream cheese until smooth. Fold in the parsley. Garnish with more parsley, if desired.
- Store leftovers in an airtight container in the refrigerator for up to 5 days.

- Make Dressing:.
- In a small bowl combine olive oil, vinegar, onion, sugar, and salt and pepper. Mix to combine, set aside. Note: You can do this in advance and refrigerate.
- Bring large Pot of salted water to boil for pasta, Cook pasta according to package directions (al dente). Drain, and return to hot pot.
- To the pasta add the peas and carrots, dressing, mayonnaise, and optional ingredient. Toss well to combine. Taste for seasoning, add more salt and/or pepper if needed.
- Transfer to serving bowl. Garnish with chopped parsley.

- 3/4 cup sour cream or 3/4 cup plain Greek yogurt.

- 1/4 cup relish.
- 2 tablespoons pickle juice.
