EASY KUMQUAT JAM RECIPE
An easy kumquat jam recipe that makes great use of this little citrus.

- Place the seeds in a small, food safe bag or some cheesecloth. Tie the top.
- Put the chopped kumquats and water in a heavy pot. Let the seeds hang into the kumquats and water and place the lid on to keep the top of the bag from submerging. The seeds contain pectin which helps the jam to set.
- Allow to rest for a minimum of 8 hours.
- Remove the bag and squeeze as much as you can from it (this is the natural pectin which helps the jam set). With a large bowl nearby, measure the amount of jam mixture that you have in the pot with cups. This number of cups is a better measurement of how much sugar you should use. Example, if have 9 cups of mixture, use 9 cups of sugar. My mother always uses a little less, but if you like it sweeter use the same amount.
- Move the pot to a cooktop over medium heat. Slowly bring to a boil, stir and reduce heat to simmer for about 20 minute or until the rind has softened.
- Next, add the sugar; stir and bring to a rolling boil (do not simmer) for approximately 30 to 45 minutes. The less sugar, you use, the longer it will need to boil to reach the setting point (105C or 220F).
- The jam is ready when it congeals when dripped onto a plate from the freezer, if you do not have a candy thermometer.
- Remove the pot from the heat and using an immersion blender, carefully blend the jam.
- Rinse the jam jars and lids with boiling water then immediately ladle the jam into the jars. It's helpful to have a widemouth funnel, but not necessary. Clean the rim with a damp cloth and put the lid on tightly, as soon as possible. Finally, set aside and allow to cool completely and refrigerate.

HOW TO MAKE SPICED KUMQUAT MARMALADE (NO PRESERVATIVE RECIPE)
Spiced Kumquat Marmalade: An easy and delicious kumquat marmalade recipe using kumquats, ginger, sugar, spices and without preservatives. It's perfect to use with bread, crepes or desserts. Stays in the fridge for 4-5 weeks.

- In a large pot, add chopped kumquats, water, juice, sugar, spices.
- Mix everything and marinate for 15 minutes.
- Place the same pot on high flames till the first boil comes.
- Stir on high flames for 5 minutes and then reduce the flame and cover cook for 30 minutes.
- Stir every 5 minutes.
- After 30 minutes, the marmalade mix would have thickened a little and it will coat the back of the spoon evenly.
- Turn off the heat.
- You can remove the cinnamon stick and cloves (as per choice).
- Let the marmalade cool and it will thicken up as it cools.
- Pour into sterilized bottle/jar and keep in a fridge for later use.
- Slather evenly on toast / cheese or fruits and enjoy.

HOMEMADE KUMQUAT MARMALADE

Steps:
- Thinly slice kumquats; remove and discard seeds.
- Combine kumquats, 3 cups water and lemon juice in a large Dutch oven; bring to a boil. Reduce heat and simmer, uncovered, for 20 minutes, stirring often. Add remaining 1/2 cup water. Stir in pectin; bring to a boil, stirring constantly. Stir in sugar; bring to a boil. Boil 4 minutes, stirring constantly. Remove from heat; skim foam off top of mixture and discard.
- Pour hot mixture into hot, sterilized canning jars*, filling about 1/4-inch from the top. Cover with metal lids and screw on bands. Cook jars in boiling water bath for 5 minutes.

- Prepare JARS: Boil jars on rack in large stockpot filled with hot water 10 min. Meanwhile, place flat lids in saucepan; cover with water. Bring to boil; remove from heat. Let jars and lids stand in hot water until ready to use. Drain well before filling.
- Prepare PECTIN MIXTURE: Gradually add pectin to boiling water in medium bowl, stirring constantly. Let stand 10 min. or until pectin is completely dissolved, stirring occasionally.
- Trial BATCH: Measure 1 cup unset jam or jelly, 2 Tbsp. sugar and 1 Tbsp. Pectin Mixture (from step 2) into small saucepan. Bring to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Boil 30 sec., stirring constantly. Remove from heat. Skim off any foam. Pour jam or jelly into prepared jar; cover. Let stand 24 hours before checking set. Refrigerate remaining Pectin Mixture.
- Remainder OF BATCH: Do not remake more than 8 cups of jam or jelly at one time. If Trial Batch sets, follow the recipe above, using listed measures of sugar and Pectin Mixture for each 1 cup of jam or jelly. Measure jam or jelly into stockpot. Bring to full rolling boil; boil 30 sec., stirring constantly. Remove from heat. Skim off any foam with metal spoon. Ladle into sterilized jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Discard any leftover pectin mixture.
- PROCESS JARS: Bring boiling-water canner, half full with water, to simmer. Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle boil. Process 5 min. for jelly, or 10 min. for jam. Remove jars and place upright on towel to cool completely. After jars cool, check seals by pressing middle of lids with finger. (If lid springs back, lid is not sealed and refrigeration is necessary.)

MCP KUMQUAT JELLY
Apple and fresh kumquat juices, sugar and fruit pectin are cooked briefly, then processed in a canner to produce gleaming jars of homemade jelly.

- Bring boiling-water canner, half full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain jars well before filling.
- Remove seeds from kumquats; discard seeds. Place kumquats in large saucepan. Add water; cover. Simmer 10 min. or until kumquats are softened. Place three layers of damp cheesecloth or jelly bag in large bowl. Pour kumquats into cheesecloth. Tie cheesecloth closed; hang and let drip into bowl until dripping stops. Press gently. Measure exactly 2 cups juice into 6- or 8-qt. saucepot.
- Add apple juice and pectin to juice in saucepot; mix well. Add butter to reduce foaming. Bring to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Stir in sugar. Return to full rolling boil and boil exactly 2 min., stirring constantly. Remove from heat. Skim off any foam with metal spoon.
- Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle boil. Process 5 min. Remove jars and place upright on a towel to cool completely. After jars cool, check seals by pressing middles of lids with finger. - Take one pound of kumquats. Pick them over to make sure that you don’t have any that are turning to mush. Cut off the stem end and slice the kumquat into quarters.
- When all the kumquats are quartered, use a knife to scrape away the inner membrane and any seeds. This will leave you with a small piece of rind with some pulp still attached.
