12 3 to 4 inch long pickling cucumbers
2 cups water
1 ¾ cups white vinegar
1 ½ cups chopped fresh dill weed
½ cup white sugar
8 cloves garlic, chopped
1 ½ tablespoons coarse salt
1 tablespoon pickling spice
1 ½ teaspoons dill seed
½ teaspoon red pepper flakes, or to taste
4 sprigs fresh dill weed

Steps:

  • In a large bowl, combine the cucumbers, water, vinegar, chopped dill, sugar, garlic, salt, pickling spice, dill seed, and red pepper flakes. Stir, and let stand at room temperature for 2 hours, until the sugar and salt dissolve.
  • Remove the cucumbers to three 1 1/2 pint wide mouth jars, placing 4 cucumbers into each jar. Ladle in the liquid from the bowl to cover. Place a sprig of fresh dill into each jar, and seal with lids. Refrigerate for 10 days before eating. Use within 1 month.

2 tablespoons whole mustard seeds
1 tablespoon whole allspice berries
2 teaspoons whole coriander seeds
1 teaspoon red pepper flakes, or more to taste
1 teaspoon ground ginger
2 bay leaves, crumbled
2 cinnamon sticks, broken in half
6 whole cloves

Steps:

  • Place mustard seeds, allspice berries, whole coriander seeds, and red pepper flakes into a small glass jar with a tight-fitting lid. Shake to combine. Add ground ginger to seeds and shake again. Sprinkle crumbled bay leaves over spice mixture and place cinnamon stick halves into the jar. Seal and shake to combine. Mixture can be stored in the tightly sealed jar for up to 1 month without loss of flavor.

2 pounds pickling cucumbers (4 to 5 inches long)
2 1/2 cups sugar
2 cups distilled white vinegar (5% acidity)
1/4 cup McCormick® Onions, Minced
2 tbsps non-iodized salt
2 tsps McCormick® Mixed Pickling Spice
2 tsps McCormick® Mustard Seed
1 tsp McCormick® Turmeric, Ground

Steps:

  • Wash cucumbers well with cold water. Trim ends and cut into 1/8-inch thick slices. Place cucumber slices into 4 hot sterilized pint or 8 half-pint canning jars.
  • Mix remaining ingredients in medium saucepan. Bring to boil on medium-high heat, stirring to dissolve sugar and salt. Reduce heat to low; simmer 5 minutes.
  • Ladle over cucumbers, leaving 1/4-inch headspace. Stir each jar well. Cool. Cover with metal lids and screw on bands.
  • Refrigerate pickles. Shake jars once a day for 3 to 5 days to redistribute seasonings and blend flavors. Store in refrigerator up to 2 months.

2 tablespoons black peppercorns
2 tablespoons mustard seeds
2 tablespoons coriander seeds
2 tablespoons dill seed
1 tablespoon allspice berries
1 teaspoon crushed red pepper flakes
10-12 bay leaves (, crumbled)
10-12 pounds pickling cucumbers (, scrubbed clean and kept whole or sliced)
2 cups apple cider vinegar
2 cups white vinegar
4 cups water
5 tablespoons pickling salt
Homemade pickling spice (recipe above) (, 2-3 tablespoons per jar)
Dried dill weed from a 2-ounce package (, 2-3 fronds and stalks per jar)
10-18 small Thai red peppers (, split down the middle but not separated, leaving seeds intact (2-3 per jar))
20-30 whole garlic cloves (, peeled and lightly smashed (4-5 per jar))

Steps:

  • Add all of the ingredients to a small bowl and stir to mix.
  • Prepare your jars and lids for canning. I run my jars through the dishwasher to sterilize and remove them while still warm. Add the lids to a small pot of simmering boiled water to pull from for the canning process.
  • In a large stock pot to avoid contaminationbring the vinegars, water and salt to a simmer.
  • To each sterilized jar add: 2-3 tablespoons of pickling spice, 2-3 fronds and stalks of dried dill weed, 2-3 Thai red peppers depending on your preference and 4-5 whole garlic cloves to each jar. Pack the whole or sliced cucumbers into the jars so they are tight but aren't damaged in the process. The cucumbers should sit below the neck of the jar. Trim the cucumbers if they're poking up too high.
  • Pour the brine into the jars leaving 1/2 inch headspace, just covering the cucumbers.
  • Wipe the rims of the jars and use tongs to place the lids and rings (that have been sterilized in simmering water) on top of the jars. To avoid contamination, do not touch the lids where they sit on the jars with your fingers.
  • Process in a canner water bath of boiling water for 10 minutes. Remove the jars from the pot and allow them to cool on a dishtowel on the counter. As the jars cool you will hear them pop as they seal. Sealed jars should feel solid when tapped and be concave in shape.
  • Store in a dry cool place. Pickles will be ready to try in about 7-10 days but get even better over time. They can be stored for up to 1 year.

3 tablespoons whole black peppercorns
3 tablespoons yellow mustard seeds
4 teaspoons allspice
1 cinnamon stick, crumbled
3 3/4 pounds Kirby cucumbers, scrubbed
1/2 cup Kosher salt or 1/3 cup pickling salt, plus coarse salt for pickling liquid
2 1/2 cups distilled white or apple cider vinegar
2 1/2 cups water
2 tablespoons pickling spice (see above, or use store-bought)
Dill and garlic (optional)

Steps:

  • For the pickling spice, blend 3 tablespoons whole black peppercorns, 3 tablespoons of yellow mustard seeds, 4 teaspoons of allspice and 1 cinnamon stick, crumbled. Makes 1/2 cup.
  • On the first day:Trim blossom ends from cucumbersand cut lengthwise intoquarters or halves. Put in a bowl;add salt (A). Cover with coolwater and mix to dissolve salt (B). Place a small plate inside bowl on top of cucumbers to keep them submerged. Let stand at cool room temperature or in refrigerator for 12 to 18 hours.
  • On the second day:Prepare jars as described inGeneral Rules. Drain cucumbers,rinse, and drain again. Bringvinegar, water, and 1 teaspoon Koshersalt to a boil.
  • Lift jars out of hot water one at a time, draining water. Fill with cucumbers (C). (It helps to lay jar on side and fill edges first, then center -- this keeps cucumbers from falling over.) If desired, add 2 cloves garlic and 2 or 3 sprigs dill to each jar. Sprinkle 2 teaspoon pickling spice into quart jars. (If you're going to store pickles for longer than a month, rather than adding spices directly, put them in a cheesecloth bag and simmer in pickling liquid for 5 minutes. Remove before filling jars.) Fill with boiling pickling liquid. Leave 1/2-inch headspace.
  • Slide a nonmetallic spatulaor chopstick between cucumbersand jar; release air bubblesby pressing gingerly on cucumbers.Repeat 2 or 3 times.
  • Wipe rim and threads of jarwith a clean, damp cloth. Removelid from hot water and place onjar. Screw band down, just untilresistance is met. As each jar isfilled, set it onto rack in boiling-watercanner. Keep canner waterat a simmer.
  • After all jars are filled andplaced on rack, bring water to aboil. Lower rack into canner.Water level must cover caps onjars by 1 to 2 inches. If needed,add more boiling water.
  • Put lid on canner. As soon asjars are lowered, start countingtime. Return to a boil. Processquarts 15 minutes at a gentlebut steady boil.
  • Remove jars from canner and set them upright on a dry towel or rack to cool. Do not retighten bands. Let jars cool for 12 hours minimum, 24 hours maximum. After jars have cooled, check lids for a good vacuum seal by pressing on center of each. If center is pulled down and does not flex, remove band and gently try to lift lid off with your fingertips. If lid does not flex and you cannot lift it off, seal is set. Wipe lid and jar surface with a damp cloth to remove food particles and residue. Label. Store jars in a cool, dry, dark place. Pickles will continue to absorb brine over time, deepening the intensity of both flavor and color (D).

HOW TO PICKLE CUCUMBERS (QUICK METHOD)



How to Pickle Cucumbers (Quick Method) image

Make your own pickles, no canning involved! Their mildly sweet flavor complements the savory dill and garlic. If you prefer a more classic dill pickle taste, then the honey can be left out.

¾ cup white vinegar
3 cloves garlic ((smashed))
¾ cup filtered water
1 TBSP sea salt ((or Himalayan salt))
½ cup honey ((optional))
2 heads fresh dill ((or 3 TBSP fresh leaves, or 2 TBSP dried))
3-5 small cucumber ((sliced))
½ onion ((thinly sliced, optional))

Steps:

  • In a small saucepan, combine the vinegar, garlic, water, salt, and honey if using.
  • Bring to a boil, then simmer for 5 minutes, whisking occasionally.
  • While waiting for the brine to cook, place the dill in the bottom of a quart-size jar.
  • Add a few layers of cucumber slices. The cucumbers can be sliced as thick or as thin as desired, but the thinner they are the faster they'll pickle.
  • Add a layer of onions (if using), then more cucumber slices, repeating until the jar is nearly full. Leave about ½ inch of head space at the top of the jar.
  • Pour the brine over the pickles, put the lid on, and place it in the fridge. If you don't have enough liquid to cover the pickles, then add some more vinegar and water in equal amounts until you do.
  • Wait at least 12 hours before eating the pickles (the longer you wait the more flavorful!).
  • Tip: Since these are going to be kept in the fridge, a canning jar isn't necessary. Whatever heat safe lidded glass jar you have on hand that's big enough will work.

8 cups onions, 3 pounds, sweet yellow or red onions thinly sliced
1/2 cup pickling salt
4 cups distilled white vinegar
4 1/2 cups sugar
2 tablespoons mustard seed
1 1/2 tablespoon celery seed
1 tablespoon ground turmeric

Steps:

  • Wash cucumbers well, soak cucumbers in cold water to crisp them up.
  • Cut and discard the blossom end of the cucumber to slow the enzymes which cause foods to continue ripening.
  • In a stainless steel or glass mixing bowl combine cucumbers and onions, add salt and mix. Cover the salted cucumber slices with 2-inches of crushed or cubed ice. Place into the refrigerator for 3 to 4 hours, add additional ice as needed.
  • In a non-reactive pot combine the herbs, sugar, and vinegar. Bring the brine to a boil, allow to boil for 10 minutes.
  • Drain the cucumbers and onions, add to the brine. Allow the mixture to return to a boil.
  • Using a slotted spoon, add cucumbers and onions to clean, sterilized jars leaving a 1/2-inch headspace.
  • With a ladle fill jars with the brine.
  • Remove air bubbles, add additional brine as needed.
  • Wipe the rims using a clean damp cloth, add warmed lids and rings finger tight.
  • Processing time is based on the altitude in which you reside, see the chart in the article.

8 pounds of pickling cucumbers
14 cloves of garlic
7 Tbs. pickling salt
7 tsp. pickling spice
7 dill heads
8 cups of water
8 cups of vinegar

Steps:

  • Wash and remove the spines on the pickling cucumbers. Cut into rounds or icicles if desired or leave them whole.
  • Combine vinegar and water in a large stockpot and bring to a boil.
  • In each quart-sized canning jar place 1 head of dill, 2 cloves of garlic, 1 tsp. of pickling spice, 1 tbs. of pickling salt.
  • Pack the cucumbers into the canning jars, then cover with hot brine leaving 1/2 inch of headroom.
  • Remove any air bubbles from the jars, wipe the rims clean and place the jar lids on finger tight.
  • Process in a water bath canner for 15 minutes or according to your altitude.
  • After canning remove the jars and place on a towel in a draft-free place to sit for 24 hours. Any jars that have not seeled in 24 hours need to be reprocessed or placed into the refrigerator.
