MAWMAW'S TEA CAKES image

I used to make these with my grandmother. Now, I'm teaching my grand children how to make them :-) If they are rolled out, they are crisp. But I have used less flour and made them like drop cookies, and they are softer that way.

Number Of Ingredients 9

3 cup(s) sugar
3 - eggs
1/2 cup(s) buttermilk
1 cup(s) shortening
2 teaspoon(s) baking powder
3/4 teaspoon(s) baking soda
1 teaspoon(s) salt
3 teaspoon(s) vanilla extract (see note below)
- all-purpose flour (about 3 or 4 cups)

Steps:

  • Mix all ingredients together. Add enough flour to get desired consistency ( about 3 or 4 cups ). Roll out on floured board. Cut with cookie cutter, and place on a greased cookie sheet.
  • Bake in a pre-heated oven at 375 degrees, until lightly browned.
  • NOTE: If you like lemon flavor, you can replace the vanilla extract with lemon extract. I have done this before and also put a lemon glaze on the top of the cookies after cooling.

3 cup(s) sugar (plus 1/2 cup more for crispy cookie)
2 cup(s) butter (some use oil)
5 cup(s) flour
5 - eggs
4 teaspoon(s) soda
1 teaspoon(s) salt
2 teaspoon(s) vanilla

Steps:

  • Cream butter gradually adding sugar. Add eggs one at a time, slowly adding other ingredients with vanilla last.
  • The cookie dough should be divided to form balls of 2 cups size or so that are then rolled out to be about 1/4" thick and cut with circle cutters. (Or you can roll dough into quarter size balls and flatten out on cookie sheet)
  • Cookies should be baked in a 400 degree oven on a lightly greased cookie sheet for about 10 minutes until lightly golden.
