MAW MAW'S COUNTRY-STYLE STEAK
Putting this one aside for when real meat-and-potatoes buddies roll on through... in cold weather. I like having a few slow cooker recipes up my sleeve & this one fills the bill nicely. Use tough cuts of meat & tenderize yourself or have your butcher tenderize them (they can do it fast - I prefer their method). Serve with mashed taters, collards & buttery fresh dinner rolls & dinner's done! Adapted from Beverly Mills and Alicia Ross' Desperation Dinners via (of all places) the Miami Herald.

- Cut any large pieces of steak into roughly 4-inch-wide pieces after tenderizing vigorously (or get your butcher to tenderize). Place a single layer of steak in the bottom of a slow cooker.
- Peel and slice the onion into ¼-inch-wide rings. Place half the rings over the steak. Sprinkle with half the pepper. Layer the rest of the steak over the rings and top with the remaining onion and pepper.
- In a small bowl, combine the soup, gravy mix and 1 cup lukewarm water; mix well. Pour the mixture over the steak, and cover the slow cooker. Cook on high heat for 6 hours or low heat for 10 hours. Remove steak to a large platter, and spoon the gravy on top. Serve immediately.

Cooked very simply with very browned onions, garlic, bell pepper, and generally served with hot cooked rice. The seven-bone or center chuck gets its name from its bone, which is shaped like the number seven. This steak lends itself well to braising.

- Wipe the steaks dry and season the seven steaks with salt, black pepper,cayenne, garlic and onion powder or use any type Cajun seasoning combination. In a cast iron skillet, heat the oil over medium-high heat, add the steaks and brown the meat on both sides. Remove the meat from the pan after browning; add the sliced onions, bell pepper and garlic; sauté until the onions are soft and starting to caramelize.
- Return the steaks to the skillet and the add beef stock or water. There should be enough stock or water to cover the meat mixture. Stir to blend and then bring the mixture to a boil. Reduce the heat to simmer. Cover and cook approximately one hour or until fork tender. The water will reduce and the result will be a light brown oniony gravy. If the gravy is to thin; move the lid on the skillet and allow some steam to escape thereby reducing the thinness of the gravy. Serve the gravy and meat over rice or creamed potatoes with sweet petit pois peas and sliced cabbage slaw. With this dish you just "gotta lick the bone".

- Preheat oven 200 degrees.
- Flour and brown steaks in a small amount of oil in skillet.
- Place steaks in 8x12 casserole.
- Add mushroom soup, water, and onion to meat drippings in skillet in which meat was browned.
- Simmer together and add kitchen bouquet, Pour over steaks and bake covered for 2 hours.

- Preheat the oven to 300 degrees F.
- Cut the meat with the grain into 1/2-inch thick slices and season on both sides with salt and pepper. Place the flour into a pie pan. Dredge the pieces of meat on both sides in the flour. Tenderize the meat, using a needling device, until each slice is 1/4-inch thick. Dredge in the flour again and set aside.
- Add enough of the vegetable oil or bacon fat to just cover the bottom of a 4 to 5-quart Dutch oven set over medium-high heat. Once the oil begins to shimmer, add the steaks to the pan, being careful not to overcrowd. Cook until golden brown on both sides, approximately 2 minutes per side. Remove the steaks to a plate and repeat until all of the steaks have been browned.
- Remove the last steaks from the pot and add the chicken broth and thyme and whisk until the liquid just comes to a boil. Return the steaks to the pot and make sure they are all submerged in the liquid. Cover the pot and place it in the oven on the middle rack. Cook for 11/2 hours or until the meat is tender and falling apart.

Perfect for when you need something easy that the kids will love. My kids would beg for this with rice or potatoes and, of course, bread to soak up the gravy. Mmmm...mmm... This is the recipe that my momma passed down to me. Born and raised in the South, and my momma was raised on a farm, so my family knows a lot about southern cookin'. With this recipe, don't be shy to add other spices to it. This goes great with mashed potatoes, green beans and sweet tea. You can use the gravy from the steak for the mashed potatoes.

- Preheat oven to 350 degrees F (175 degrees C).
- Mix the flour, black pepper, seasoned salt, and garlic powder together in a shallow bowl, and coat the cube steaks thoroughly with the flour mixture, patting the flour onto the steaks to get a good coating. Retain 3 tablespoons of seasoned flour.
- Heat the olive oil in a skillet over medium heat, and pan-fry the cube steaks until golden brown on both sides, about 5 minutes per side. Place the steaks into a 9x12-inch baking dish. Whisk the retained seasoned flour into the beef broth until smooth, and pour the broth over the steaks. Cover the dish with aluminum foil.

CROCK POT MELT-IN-YOUR-MOUTH COUNTRY STYLE STEAK
I got this recipe from a friend at work about 8 years ago. It's been my husband's favorite meal ever since. He's requesting it for his special Father's Day Dinner this weekend. This meal is so super easy and so rewarding. I usually put it all together in the crock pot before I leave for work in the morning and, when I get home, it's ready to serve. Cooks up a delicious gravy and goes great with mashed potatoes!

- Pre-heat oven to 350F.
- In a very large mixing bowl, combine bread crumbs, crumbled cornbread, crumbled biscuits, yellow onions, celery, green onions, fresh parsley, sage, salt and pepper.
- Toss well.
- Add melted butter and eggs; mix.
- Add chicken broth, a little at a time, mixing lightly, but well.
- Add enough broth to make mixture extra moist.
- Place mixture into a well-greased baking dish.
- Bake about 45 minutes or until top is golden brown.
- ~NOTE~This can be made ahead of time by mixing everything together, placing it in the well-greased baking dish, covering with foil, and refrigerating.
- To bake, remove from refrigerator and let sit at room temperature for about 30 minutes.
- Then, remove foil and bake for about 45 minutes.
