MAW MAW'S COUNTRY-STYLE STEAK
Putting this one aside for when real meat-and-potatoes buddies roll on through... in cold weather. I like having a few slow cooker recipes up my sleeve & this one fills the bill nicely. Use tough cuts of meat & tenderize yourself or have your butcher tenderize them (they can do it fast - I prefer their method). Serve with mashed taters, collards & buttery fresh dinner rolls & dinner's done! Adapted from Beverly Mills and Alicia Ross' Desperation Dinners via (of all places) the Miami Herald.

- Cut any large pieces of steak into roughly 4-inch-wide pieces after tenderizing vigorously (or get your butcher to tenderize). Place a single layer of steak in the bottom of a slow cooker.
- Peel and slice the onion into ¼-inch-wide rings. Place half the rings over the steak. Sprinkle with half the pepper. Layer the rest of the steak over the rings and top with the remaining onion and pepper.
- In a small bowl, combine the soup, gravy mix and 1 cup lukewarm water; mix well. Pour the mixture over the steak, and cover the slow cooker. Cook on high heat for 6 hours or low heat for 10 hours. Remove steak to a large platter, and spoon the gravy on top. Serve immediately.

PERFECTLY EASY COUNTRY STYLE STEAK
Quick, easy, inexpensive, low in fat, and taste WONDERFUL! Cubed steak is normally very lean, and becaused tenderized ("cubed") makes a wonderful steak gravy meal. No need to flour the meat; the soup will provide the necessary thickness for gravy.

- 1. Spray small to medium non-stick skillet(one that has a lid) with Pam. Heat to med/hi heat. Place cubed steak in heated pan, lightly brown on each side. Mix soup and 1/2 soup can of water. Pour over steak. Reduce heat to simmer, and cook at least 1 hour, covered. Check/stir as needed--the smell is so wonderful, you will have to peek!
- 2. Meat will be fall-apart tender, with a rich brown gravy. I serve with mashed potatoes or rice, baby lima beans, fresh sliced tomatoes....and have a very happy husband!
COUNTRY STYLE STEAK
I saw this on Alton Brown's show "Good Eats" and it looked very interesting. I have never seen it done this way. Will try in the next few days.

- Preheat the oven to 300 degrees F.
- Cut the meat with the grain into 1/2-inch thick slices and season on both sides with salt and pepper. Place the flour into a pie pan. Dredge the pieces of meat on both sides in the flour. Tenderize the meat, using a needling device, until each slice is 1/4-inch thick. Dredge in the flour again and set aside.
- Add enough of the vegetable oil or bacon fat to just cover the bottom of a 4 to 5-quart Dutch oven set over medium-high heat. Once the oil begins to shimmer, add the steaks to the pan, being careful not to overcrowd. Cook until golden brown on both sides, approximately 2 minutes per side. Remove the steaks to a plate and repeat until all of the steaks have been browned.
- Remove the last steaks from the pot and add the chicken broth and thyme and whisk until the liquid just comes to a boil. Return the steaks to the pot and make sure they are all submerged in the liquid. Cover the pot and place it in the oven on the middle rack. Cook for 11/2 hours or until the meat is tender and falling apart.

COUNTRY STYLE STEAK
This steak recipe is very similar tasting to the country style steak at K&W Cafeteria style restaurants. I use Uncle Ben's boil in bag rice with this as it tastes almost the same as K&W, but mine may be a little better, if I do say so myself! ;)

- 1. Combine flour, salt, pepper and garlic powder in a shallow dish.
- 2. dredge cube steak in flour mixture, coating evenly. reserve 1/4 cup leftover flour.
- 3. brown cube steaks in hot oil over medium high heat about 4 minutes on each side. Remove steaks to a 9x13 baking dish.
- 4. add reserved flour mixture to pan drippings to make a flour paste. Add more oil or flour if necessary. Pour broth into pan and stir until smooth and thickened. Pour gravy over meat.
- 5. Cover pan with foil and bake in a 350 degree oven for 2 hours. Serve with hot cooked rice or mashed potatoes.
EASY COUNTRY STYLE STEAK
Perfect for when you need something easy that the kids will love. My kids would beg for this with rice or potatoes and, of course, bread to soak up the gravy. Certainly may use sliced onions rather than chopped.Note: After some of the reviews I realized that even though it is quick to put together the cooking does take some time so I have changed the title.

Mmmm...mmm... This is the recipe that my momma passed down to me. Born and raised in the South, and my momma was raised on a farm, so my family knows a lot about southern cookin'. With this recipe, don't be shy to add other spices to it. This goes great with mashed potatoes, green beans and sweet tea. You can use the gravy from the steak for the mashed potatoes.

- Preheat oven to 350 degrees F (175 degrees C).
- Mix the flour, black pepper, seasoned salt, and garlic powder together in a shallow bowl, and coat the cube steaks thoroughly with the flour mixture, patting the flour onto the steaks to get a good coating. Retain 3 tablespoons of seasoned flour.
- Heat the olive oil in a skillet over medium heat, and pan-fry the cube steaks until golden brown on both sides, about 5 minutes per side. Place the steaks into a 9x12-inch baking dish. Whisk the retained seasoned flour into the beef broth until smooth, and pour the broth over the steaks. Cover the dish with aluminum foil.

- 1. Wash and pat dry cube steaks. Sprinkle with salt and dredge in flour, set aside. In large skillet, brown the cube steaks in hot oil a couple of minutes on each side, then lay into slow cooker and set aside.
- 2. In deep skillet (I use a cast-iron fryer), melt grease. While grease is melting, mix flour with salt, pepper, and sugar. When grease is melted, add flour mixture and brown well, stirring constantly. Add milk while stirring constantly. Continue to stir and bring gravy to a boil, but Do not allow to thicken.
- 3. Pour gravy over browned cube steaks and add additional salt and pepper, if desired. Turn slow cooker on high and cover. After about 1 hour, turn cooker down to low and cook for about three more hours, gently stirring occasionally.
- 4. About the last hour of cooking, check on the gravy. If too thick, thin down with a little water or milk, stirring or whisking gently. If too thin, mix a couple of tablespoons cornstarch with water to make a pourable paste. Slowly and gently stir into gravy. You must be very gentle when stirring so as not to break up the tender meat too much.
- 5. When gravy is the desired consistency and meat is tender, turn slow cooker off or to keep warm. Serve over rice or mashed potatoes and with your favorite veggies.

Posting for Zaar World Tour 5. Another find off realcajunrecipes.com by Maw-Maw's Kitchen and her friend Donna who supplies her Seven Steaks. A common Cajun dish is smothered 7 steaks. Cooked very simply with very browned onions, garlic, bell pepper, and generally served with hot cooked rice. The seven-bone or center chuck gets its name from its bone, which is shaped like the number seven. This steak lends itself well to braising.

- Wipe the steaks dry and season the seven steaks with salt, black pepper,cayenne, garlic and onion powder or use any type Cajun seasoning combination. In a cast iron skillet, heat the oil over medium-high heat, add the steaks and brown the meat on both sides. Remove the meat from the pan after browning; add the sliced onions, bell pepper and garlic; sauté until the onions are soft and starting to caramelize.
- Return the steaks to the skillet and the add beef stock or water. There should be enough stock or water to cover the meat mixture. Stir to blend and then bring the mixture to a boil. Reduce the heat to simmer. Cover and cook approximately one hour or until fork tender. The water will reduce and the result will be a light brown oniony gravy. If the gravy is to thin; move the lid on the skillet and allow some steam to escape thereby reducing the thinness of the gravy. Serve the gravy and meat over rice or creamed potatoes with sweet petit pois peas and sliced cabbage slaw. With this dish you just "gotta lick the bone".

CROCK POT MELT-IN-YOUR-MOUTH COUNTRY STYLE STEAK
I got this recipe from a friend at work about 8 years ago. It's been my husband's favorite meal ever since. He's requesting it for his special Father's Day Dinner this weekend. This meal is so super easy and so rewarding. I usually put it all together in the crock pot before I leave for work in the morning and, when I get home, it's ready to serve. Cooks up a delicious gravy and goes great with mashed potatoes!
