MAURA'S LEMON & SOY VINAIGRETTE
This simple, versatile dressing works well with green salads, but is also wonderful on hot & cold veggie dishes. You could even use it as a marinade to add a subtle little punch of flavor!

Steps:
- In a small bowl, combine lemon juice, rosemary, pepper, and bay leaf.
- Microwave for 1 minute.
- Remove and discard bay leaf from lemon juice.
- Pour juice into a small glass jar, or your favorite dressing cruet.
- Add vinegar, sugar, soy sauce, and oil.
- Shake thoroughly to blend all of the ingredients.
- Don't forget to shake well before serving!

SOY VINAIGRETTE
I was introduced to this recipe when I was a little girl. Our neighbor used to make it and we would drink it by the capful! (I also ate whole lemons and limes) If you enjoy pungent flavors, drizzle this over a green salad and it should hit the spot. Amounts are approximate, so adjust to your palate.

LEMON-SOY VINAIGRETTE
When my husband was diagnoised with pancreatitis, we had to switched to a very low fat diet. We began eating alot more baked and grilled fish. This recipe is my favorite marinade for any type of light, white fish.

- In a small bowl combine minced garlic and next 4 ingredients. Slowly whisk in olive oil until emulsified. Store in an airtight container 1-2 days. Remove from refrigerator and wish briskly to re-emulsify. Pour over (for oven bakeing) or brush over continuously (for outdoor grilling). I prefer to bake my fish using this recipe.
SHALLOT-SOY VINAIGRETTE
From Ming Tsai's Simply Ming. If you cannot find Chinese Black Vinegar, use Balsamic. This works beautifully on everyday tossed greens and other impromptu salad combinations or as a marinade for poultry, meat, and fish.

- In a blender or food processor, combine the mustard, shallots, vinegars, soy sauce, and sugar and purée.
- With the machine running, slowly drizzle in the oil until an emulsion is formed.
- Season with salt and pepper, remembering that not much salt will be needed because of the soy sauce.
- Use or store. Lasts 2 weeks, refrigerated.
