MAUI WOWIE SHRIMP SALAD



Maui Wowie Shrimp Salad image

From Roy's Hawaiian Fusion Cuisine website. It was inspired by Roy's love for vegetables and greens, this salad is a refreshing combination of feta, capers, shrimp, tomatoes and fresh lettuce. It was named after the great produce grown on the island of Maui.

2 teaspoons minced shallots
1 teaspoon capers
1/4 cup fresh lime juice
1/2 cup plus 1 tablespoon olive oil
3/4 teaspoon Dijon mustard
1 tablespoon honey
4 vine ripened tomatoes, sliced very thin (about 1 pound)
1/3 cup crumbled feta cheese
2 tablespoons capers
1/3 cup finely chopped sweet onion
12 large cooked shrimp, each cut crosswise into 3 pieces (grilled shrimp works great)
1/2 medium avocado, diced into pieces the same size as the shrimp
8 bibb lettuce, cut into 1/8 inch strips
4 popcorn shoot mixed sprouts (optional)

Steps:

  • DRESSING PREPARATION: Combine shallots, 1 teaspoon capers and lime juice in a blender and purée until smooth. Add olive oil and mustard and blend until well combined. Stir in honey.
  • TO ARRANGE SALAD: Arrange 5 slices of tomato on each of four plates, overlapping them to form a circle with a hole in the middle.
  • Combine feta, 2 tablespoons capers and onion, drizzle with some dressing and salt and pepper to taste and toss well.
  • Combine shrimp and avocado in another bowl, drizzle with some dressing and salt and pepper to taste and toss well. Drizzle lettuce with a little dressing and salt and pepper to taste and toss well.
  • Mound 1/4 of the lettuce in center of tomato ring. Spoon one 1/4 of the feta and shrimp mixture on top. Drizzle tomatoes and salad with some of the remaining dressing. Garnish with popcorn shoot sprouts, if desired.

16 ounces cooked rice
2 cups fresh pineapple
1 large red bell pepper
1 1/4 lbs large shrimp
3 tablespoons soy sauce
2 tablespoons brown sugar
1 1/2 tablespoons rice vinegar
1/2 teaspoon pepper
1/2 cup cilantro

Steps:

  • Preheat oven to 450°F. Place a rimmed baking sheet in oven (do not remove pan while oven preheats).
  • Place rice and wine in a bowl. Carefully remove pan from oven; spread rice mixture in an even layer in center of pan. Bake in preheated oven for 5 minutes; stir. Top rice with pineapple and bell pepper; bake at 450°F for 5 minutes. Arrange shrimp over rice mixture; bake at 450°F until shrimp are done, about 6 minutes.
  • Place soy sauce, sugar, and vinegar in a microwave-safe bowl. Microwave at high 45 seconds. Whisk until sugar dissolves. Drizzle over pan. Add black pepper; toss. Sprinkle with cilantro.

This recipe is great for hibachi on the beach or in your backyard. You can also broil it in your oven if you're not in Hawaii or near a beach. It's a easy way to prepare a shrimp dish that's 'ono' (delicious) and moist! You can serve this either as an appetizer (pupu) or entree. I prepare it either with or without the shells on - depending on how fast I want people to eat 'um up! Aloha from Hawaii!!! Enjoy!

2 tablespoons white sugar
2 tablespoons lemon pepper seasoning
1 tablespoon minced fresh parsley
2 tablespoons finely minced garlic
1 tablespoon oyster sauce
1 cup mayonnaise
2 pounds extra large shrimp (16-20), peeled and deveined, tail left on
12 (10 inch) wooden skewers

Steps:

  • In a large bowl, or large zip-top bag, mix together the sugar, lemon pepper, parsley, garlic, oyster sauce, and mayonnaise. Add the shrimp, and toss well to coat. Marinate in the refrigerator for 1 hour to overnight.
  • Preheat a grill for medium-high heat. Soak skewers in water.
  • Thread shrimp onto skewers, and grill until they are pink and firm, 2 to 3 minutes per side.

1 head romaine lettuce
2 roma tomatoes, diced
1 small maui onion, diced
2 ounces cooked shrimp
1 avocado, diced
1 teaspoon capers
2 tablespoons feta cheese, crumbled
2 stalks green onions, chopped
house vinaigrette
1/4 cup olive oil
1/8 cup red wine vinegar
1 tablespoon Dijon mustard
1 pinch black pepper
1 hard-boiled egg white, shredded
1 ounce roasted red peppers, diced or 1 ounce pimiento

Steps:

  • Shred lettuce into fine strips.
  • Combine and toss in a large bowl with diced tomatoes, onion and bay shrimp.
  • Add diced avocado.
  • For dressing: Whisk together ingredients. Olive oil, red wine vinegar, dijon mustard, black pepper, hard boiled egg whites shredded, and 1 ounce roasted red pepper diced or 1 ounce pimentos ( in a pinch I have used a quick dressing of olive oil, fresh squeezed lemon juice, salt, pepper and basil. Pretty much adjust it all to taste. It is a GREAT quick replacement and saves having to hard boil and egg and find pimentos or roasted red peppers.).
  • Pour over salad and toss lightly.
  • Sprinkle each portion with capers, crumbled feta and green onion.

1 head garlic
4 tablespoons unsalted butter
1 pound frozen large deveined, shell-on shrimp, thawed
2 tablespoons rice flour
1 tablespoon paprika
1 teaspoon cayenne pepper
1 ½ teaspoons kosher salt
2 tablespoons olive oil

Steps:

  • Separate garlic cloves into a bowl and place another bowl on top. Shake until all of the peels are knocked off the cloves, about 30 seconds, being careful not to shake too hard. Chop peeled cloves into relatively small pieces.
  • Melt butter in a saute pan over medium heat and add chopped garlic. Cook, stirring occasionally, until golden brown, 2 to 3 minutes. Transfer the garlic and butter into a small bowl and reserve.
  • Pat thawed shrimp dry with paper towels and add to a large mixing bowl.
  • Combine rice flour, paprika, cayenne, and salt in a small bowl. Sprinkle over the shrimp and use a large spoon or spatula to toss until completely coated.
  • Heat olive oil in a nonstick skillet over medium-high heat. Add some shrimp in a single layer and cook until browned and just barely cooked through, 2 to 3 minutes per side. Add some garlic butter and cook for another 30 seconds. Repeat with remaining shrimp and garlic butter. Serve immediately.
