PEPPERONI PIZZA QUICK BREAD



Pepperoni Pizza Quick Bread image

A quick bread full of pepperoni and cheese that takes 10 minutes to prepare and is ready to serve in a little over an hour. Great with soup or salad or as a stand alone snack or appetizer!

1 cup all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
1/2 teaspoon fresh ground pepper
1/4 teaspoon baking soda
2 large eggs
2 tablespoons extra virgin olive oil
3/4 cup buttermilk
1 1/2 cups shredded mozzarella cheese, divided
1/2 cup parmesan cheese, shredded
1/2 cup cheese, of choice shredded (I like Asiago)
1 cup quartered pepperoni slice
1/2 cup quality marinara sauce
1 teaspoon italian seasoning
1 (8 ounce) jar giardiniera

Steps:

  • 1. Preheat the oven to 350 F and spray a loaf bread pan with non stick cooking spray.
  • 2. Add the flour, baking powder, salt, pepper, and baking soda to the bowl of a stand mixer and mix to combine. Slowly add the eggs and Olive oil, mixing until just combined. Add buttermilk, 1 1/4 cup of the mozzerella cheese, the 2 other cheeses, and the pepperoni and mix until just combined. Pour half the batter into the prepared bread pan, top evenly with the marinara sauce, then pour the remaining batter over the sauce. Top with the Italian seasoning and the remaining 1/4 cup mozzarella cheese.
  • 3. Bake for 45 to 55 minutes or until a toothpick comes out clean from the center. Let cool for 15 minutes before removing from the pan. Slice the bread and serve with Giardiniera relish on the side.

Perfect-Every-Time Pizza Dough and Pepperoni Pizza image

Homemade pizza should be a staple recipe for every cook, and it's really easy to make. Not only that, but it's a great recipe to get friends and family involved. I like making the dough and shaping it into balls ahead of time. You can use them right away or even freeze them for the future. This dough also works for making calzones, dinner rolls and flatbreads.

1 cup (235 ml) warm water (100 degrees F [38 degrees C])
1 teaspoon active dry yeast
1/2 teaspoon extra-virgin olive oil
2 teaspoons (12 g) kosher salt
3/4 cup (90 g) bread flour or Italian 00 flour
1 1/2 cups (180 g) all-purpose flour
All-purpose flour or cornmeal, for dusting
1/2 cup (120 ml) Easy Homemade Tomato Sauce (recipe follows)
Drizzle of extra-virgin olive oil
2 cups (230 g) shredded low-moisture mozzarella cheese
16 to 24 slices pepperoni
1/4 cup (25 g) shaved Parmesan cheese
2 tablespoons (6 g) dried oregano
1/4 cup (60 ml) extra-virgin olive oil
2 teaspoons (7 g) minced garlic
4 anchovy fillets, roughly chopped, optional
Two 28-ounce (784-g) cans diced tomatoes, drained
2 teaspoons (2 g) dried oregano
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 teaspoons (8 g) sugar (optional, see Cook's Note)

Steps:

  • Make the dough: In a large bowl, stir together the warm water, yeast, olive oil and salt until the salt dissolves. Let this mixture rest for about 10 to 20 minutes, until slightly foamy.
  • Transfer the yeast and water mixture to the bowl of a stand mixer, making sure to scrape all the yeast into the bowl. Add the flours to the mixing bowl. Attach a dough hook and knead on medium speed for about 4 minutes. The mixture will come together into a ball that pulls away from the sides.
  • Transfer the dough ball to a clean area to knead. Flour the station and knead well for about 2 minutes. Cut the ball in half and shape each into round balls. Place each ball in a lightly oiled bowl, cover with plastic and let rise in the fridge overnight. This overnight fermentation will give the dough a pleasant sourness. You can do this on the counter in an hour or two, but you won't have the same flavor from a slow rise.
  • Make the pizza: Place a pizza steel or stone on the middle rack of the oven and preheat to its highest setting. Let the oven heat up for at least 45 minutes.
  • Dust the surface of a pizza peel or the back of a baking sheet with flour or cornmeal. Stretch one ball of dough out into a 12-inch (30.5-cm) round and place on the peel or baking sheet. Place half the sauce in the center of the stretched dough and spread it out evenly with a spoon. You want to cover all but 1/2 inch (1.3 cm) of the edge.
  • Drizzle the pizza with a tiny bit of olive oil. Rain half the mozzarella over the pizza. Place half the pepperoni on the pizza in an even pattern. Sprinkle with half the Parmesan and half the dried oregano.
  • Slide the pizza onto the heated steel or stone in the oven. Bake until the crust is golden brown and the cheese is bubbling, 4 to 8 minutes. Remove from the heat and let rest for 2 to 5 minutes before slicing and serving. Meanwhile, repeat with the remaining dough ball and pizza ingredients to make a second pizza.
  • Heat the olive oil in a deep skillet over medium-high heat. When the temperature gets to about 375 degrees F (190 degrees C), stir in the garlic and the anchovies and sizzle for about 30 seconds.
  • Pour in the tomatoes, bring to a simmer and cook for about 10 minutes, until the sauce reduces and thickens slightly. Lower the heat if the sauce starts to boil. Stir in the oregano, salt, pepper and sugar, if using, and cook for an additional minute. Remove the sauce from the heat and use immediately or store in airtight containers or even resealable plastic bags in the refrigerator or freezer until ready to use.

1 teaspoon dried oregano, crushed
1 teaspoon dried basil, crushed

½ teaspoon onion powder
½ teaspoon sugar
½ teaspoon salt
¼ teaspoon black pepper
3 ¼ cups all-purpose flour, or more as needed
2 (.25 ounce) envelopes FLEISCHMANN'S® Pizza Crust Yeast or RapidRise® Yeast
1 tablespoon sugar
1 ½ teaspoons salt
1 ⅓ cups very warm water (120 degrees F to 130 degrees F)
⅓ cup oil
1 (6 ounce) package HORMEL® Pepperoni
1 cup shredded mozzarella cheese, or more to taste

Steps:

  • For sauce: Combine all sauce ingredients with 1/2 cup water in a medium bowl; set aside for flavors to develop while making crust. Freeze remaining paste .
  • For crusts: Combine 2 cups of flour with the dry yeast, sugar and salt. Add the water and oil and mix until well blended (about 1 minute). Gradually add enough remaining flour slowly, until a soft, sticky dough ball is formed.
  • Knead for about 4 minutes, on a floured surface, until dough is smooth and elastic. Add more flour, if needed. (If using RapidRise® Yeast, let dough rest, covered, for 10 minutes.)
  • Divide dough in half. Pat each half (with floured hands) into a 12-inch greased pizza pan OR roll dough to fit pans.
  • For pizzas: Preheat oven to 425 degrees F. Top crusts with sauce, pepperoni and cheese.
  • Bake for 18 to 20 minutes until crusts are browned and cheese is bubbly. For best results, rotate pizza pans between top and bottom oven racks halfway through baking.

1/4 ounce active dry yeast (1 package is approximately 2 1/4 teaspoons)
1 cup warm water (105-115 degrees)
1 teaspoon sugar
1 teaspoon salt
2 tablespoons olive oil
2 1/2 cups flour (stir to remove any lumps)
1/2 cup chopped onion
1 (8 ounce) can tomato sauce
1 ounce parmesan cheese, grated (equals 1/4 cup)
2 teaspoons dried oregano
1/4 teaspoon salt
1/4-1/2 teaspoon minced garlic
1/8 teaspoon pepper
4 ounces pepperoni, sliced (equals 1 cup ~ use 70% less fat turkey pepperoni for less fat puddles!)
8 ounces mozzarella cheese, shredded (equals 2 cups)

  • Dough directions:.
  • Preheat oven to 425 degrees (400 degrees if using Pyrex pizza pans).
  • Dissolve yeast in warm water. Stir in remaining dough ingredients: beat vigorously, about 20 strokes.
  • Allow dough to rest about 5 minutes while preparing sauce.
  • Sauce:.
  • Mix sauce ingredients; set aside.
  • Assembly:.
  • Divide dough in half. On lightly greased baking pans, pat/press each half into 12 inch circles. Use floured finger tips when pressing dough into circles.
  • Spread sauce on each circle. Arrange pepperoni on top and sprinkle with mozzarella cheese. Or, for crispy pepperoni, put it on top of the mozzarella!
  • Bake for 18-20 minutes or until crust is brown and topping is hot and bubbly. Makes 2 pizzas.
  • To freeze and bake later: double wrap and freeze assembled pizza (without baking) on the pizza pan ~ bake frozen pizza at 400 degrees for 25 minutes.

This is my best home made pizza recipe. I like it, you might like it.... but be careful, its definitely not for the weight watcher.

1/2 lb sliced deli pepperoni (very thin)
1/2 lb ground beef
16 -20 ounces desired pizza sauce (can or jar )
2 lbs fresh mozzarella cheese
1/4 cup fresh ground parmesan cheese
1 large very thin pizza crust

Steps:

  • Brown your ground beef on med heat until done. Preheat your oven to 375 degrees. On your premade thin crust, cover with an ample amount of pizza sauce. Use half of your thinly sliced pepperoni. The pepperoni should be thin enough to crush up into a ball. They may come partially undone but that's ok. Put the balled pepperoni on top of the sauce in an even spread. Now use about half of your ground beef the same way. Next shred your fresh mozzarella. The bag stuff just isn't the same. Add the mozzarella cheese evenly. Now use the rest of your ground beef on top followed by the rest of your pepperoni (either balled like before or not, your choice). The thin pepperoni may burn a bit if you do not ball it up. Now top off with your oregano and parmesan cheese. Bake in the preheated oven for between 10 and 15 minuets depending on how brown you want the cheese and how dark and crispy you want the crust. *note* store bought crust will burn if the oven is too hot or if you overcook the pizza. It will be hard. Taking the pizza out as soon as you can see the edges turning golden brown and the middle of the pizza is bubbly and rising. Otherwise the cheese in the center may not be fully cooked, or you will cause the crust to burn. Getting it just right may take some practice, but in the end this is a fantastic pizza in my opinion. Also fun for the whole family.
