10-MINUTE TUNA MELT
This variation of a classic sandwich uses mayonnaise, but not where you think! Mayo is brushed on the outside of the sandwich in place of butter to make the sandwich golden and crispy as it heats in a skillet. Plain Greek yogurt takes mayo's place in the salad-along with crunchy celery, roasted red bell peppers and scallions-for a satisfying lunch with less saturated fat.

Steps:
- Stir tuna, celery, roasted red pepper, scallion, yogurt, mustard and pepper together in a medium bowl until well blended.
- Spread 1 teaspoon mayonnaise (or butter) on one side of each slice of bread. Flip 2 of the slices and top each with half of the tuna mixture, 1 slice cheese and another slice of bread, mayonnaise-side up.
- Heat a large skillet over medium heat. Place the sandwiches in the pan and cook, turning once, until the cheese is melted and the bread is golden, 3 to 5 minutes per side. Serve immediately.

HEALTHY TUNA MELTS
Quick and easy to make for lunch or dinner! My husband asked me to make him a tuna melt. I'd never eaten one (I don't like tuna except for grilled tuna steaks), let alone made one, so I tried this recipe from The Complete Cooking Light Cookbook. I've made this for him a few times now, and he says they're good! He's not big on English muffins so we normally use whole wheat toast instead.

Steps:
- Preheat broiler.
- Combine first 6 ingredients and spread 3 tablespoons of the mixture on each muffin half.
- Top each half with 1 tomato slice and 1 tablespoon cheese.
- Broil 5 minutes or until the cheese is melted.
EASY TUNA MELT
Steps:
- Drain the tuna then place in a mixing bowl.
- Add finely diced onion and celery, mayonnaise, lemon juice and all the herbs and spices.
- Mix well, taste and adjust seasoning if necessary. Place slices of bread on a sheetpan then toast under a hot grill/broiler.
- Flip over then top half the slices with tuna filling, cheese and sliced tomatoes.
- Place back in the oven and allow the cheese to melt.
- Remove from the oven, sandwich with the remaining slices of bread and serve.
