Ugandan Matoke image

Matoke (or Matooke) refer to the plantain or plantain banana in Uganda, where plantains are a staple crop. In Uganda, plantain bananas are often wrapped in plantain leaves and steamed until tender. This dish can be made with or without the meat.

8 -10 plantains
1 lemon, juice of (optional)
oil (for frying)
1 onion, chopped
2 -3 tomatoes, chopped (or canned whole tomatoes, drained)
1 green bell pepper, chopped
3 -4 garlic cloves, crushed
1 chili pepper, chopped (optional)
cayenne pepper (to taste) or red pepper (to taste)
1 lb ground beef (optional) or 1 lb beef stew meat, cut in bite-sized pieces (optional)
1 cup beef broth (optional) or 1 cup beef stock (optional)

Steps:

  • Peel the plantains, cut into cubes, sprinkle with lemon juice, and set aside.
  • Heat oil in a large pan. Fry the Onion, tomatoes, green pepper, hot pepper, and garlic together. Add spices to taste. Add meat or broth. Continue frying and stirring until the meat is nearly done or until the broth is starting to boil.
  • Reduce heat. Add plantains. Cover and simmer over low heat until plantains are tender and meat is done. Serve matoke (matooke, if you prefer) hot.

Green Plantain Green Bananas Stew is a delicious wholesome spicy plantain stew that's delicious served as an accompaniment to a main meal. It is also eaten during fasting periods.

Number Of Ingredients 10

Ingredients:
5 green bananas -raw plantain (Matoke)
2 medium ripe tomatoes
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons sunflower oil
1 tablespoon lemon juice
2 green chillies.
150 ml water
1 tablespoon fresh chopped coriander for garnishing

Steps:

  • Method:
  • Peel the green bananas- plantain and slice them in to 5mm thick round slices with a serrated knife from your knifes set. Soak them in cold water.
  • Chop the tomatoes into small pieces.
  • Slit both the chillies and remove the membrane and seeds and cut into 4 pieces.
  • Heat oil in a pan when it is hot add 1/4 teaspoon cumin seeds and let them splutter.
  • Drain the bananas and add to the pan followed by the tomatoes, salt and pepper and chillies
  • Mix well and add the water.
  • Bring the stew to boil , than reduce the heat and simmer for 10 minutes or until bananas are tender and sauce has thickened. Add the lemon juice and stir.
  • Transfer to serving dish and garnish with fresh coriander.

Ndizi Mbichi (Matoke) na Nyama ya Ng'ombe | Matoke With Beef image

Ndizi mbichi (matoke) na nyama ya ng'ombe or matoke with beef is a Kenyan dish (and most of the African continent). This dish also has vegetables like hoho (bell peppers), green garden peas and carrots. It's also spicy with a tropical flavour courtesy of the coconut cream.

Number Of Ingredients 20

12 Matoke (- should be completely raw)
1 kg Beef on bone (- Should be pre- boiled and cut into bite sized pieces)
1 Large red onion (- finely diced)
2 Large tomatoes
1 Tbs ginger garlic paste
1 Medium sized green hoho (green bell pepper) (- cored and diced into 1/2" cubes)
1 Medium sized red hoho (red bell pepper) (- cored and diced into 1/2" cubes)
1 Tbsp Curry powder
1 tsp Turmeric powder
1 tsp Black mustard seeds
1 tsp Cumin seeds
1 Dry bay leaf
2 Tbs Sunflower oil (- or any neutral flavoured oil)
150 ml Thick coconut cream
1 Chilli beef bullion (- you could use a plain one or leave it out altogether)
Salt (- to taste)
Freshly cracked black pepper (- to taste)
Bunch of dhania (coriander) leaves
1 cup of 1/2" inch carrot cubes
1 cup Green garden peas (- blanch them first)

Steps:

  • Add sunflower oil to your pan and let it come to temperature
  • Add the finely diced red onions and the curry powder - mix well. Cook until the onions start turning brown at the edges.
  • Add the ginger garlic paste then cook it for about a minute until fragrant.
  • Next, add the tomatoes, turmeric powder, chilli beef bullion, the dry bay leaf, freshly cracked black pepper and the pre-boiled beef.
  • Then, add enough beef stock to just cover the top of the beef, stir everything together, cover sufuria and leave to simmer for about ten minutes.
  • Add the matoke with just enough of the beef stock to ensure that the matoke cooks without completely being submerged. Simmer for about five minutes.
  • Add the carrots and coconut cream at once then cover and leave to simmer for about five minutes.
  • Add the coloured hohos along with the blanched green garden peas, mix everything in. Use an extremely gentle touch. Simmer for about three minutes until the hohos just start softening.
  • Finally add the dhania leaves and turn off the heat
