2 cups all-purpose flour
1 tablespoon green tea powder (matcha)
½ teaspoon baking soda
½ teaspoon salt
1 cup packed brown sugar
¾ cup unsalted butter, melted
½ cup white sugar
1 tablespoon vanilla extract
1 egg
1 egg yolk
1 ½ cups white chocolate chips

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease baking sheets or line with parchment paper.
  • Sift flour, matcha, baking soda, and salt together in a bowl. Beat brown sugar, butter, and white sugar together in a large bowl using an electric mixer until blended; beat in vanilla extract, egg, and egg yolk until light and creamy.
  • Mix flour mixture into creamed butter mixture until dough is just blended; fold in chocolate chips using a wooden spoon. Drop cookie dough, 1 heaping tablespoon per cookie, onto the prepared baking sheet 2 to 3 inches apart.
  • Bake in the preheated oven until edges are lightly browned, 8 to 10 minutes. Cool cookies on the baking sheet for 2 to 3 minutes before transferring to a wire rack to cool completely.

2 1/2 cups all-purpose flour
1 teaspoon matcha green tea powder
1 teaspoon baking powder
1 pinch salt
1 cup butter, at room temperature
1 1/4 cups granulated sugar
2 large egg yolks
1 1/2 teaspoons vanilla extract
sugar, for sprinkling (optional)

Steps:

  • In a medium bowl,combine flour, Matcha powder, baking powder, and salt, set aside.
  • In a large bowl, cream the butter and sugar, beat in the egg yolks.
  • Beat in the vanilla extract.
  • Gradually blend in the dry ingredients.
  • Cover and chill for one hour.
  • Preheat the oven to 375 degrees. Lightly grease 2 baking sheets, or line with parchment paper.
  • On a floured surface, roll out the dough to a thickness of 1/4 inch.
  • Using a 2-inch cookie cutter, cut out cookies and place 1 inch apart onto the prepared baking sheets.
  • Bake for 10-12 minutes, until lightly colored.
  • Sprinkle granulated sugar over the hot cookies and transfer to wire racks to cool.

1 cup all-purpose flour
1/4 cup granulated sugar
1/4 cup confectioners' sugar
1 tablespoon green tea powder (matcha)
1/4 teaspoon salt
1/2 teaspoon vanilla
1 teaspoon water
1/2 cup butter, cubed (unsalted is reccomended, if using salted, omit the salt in the recipe.)
1/2-1 cup sugar, for coating

Steps:

  • Preheat oven at 375.
  • Blend all dry ingredients.
  • Add vanilla, water, and butter, mix until dough forms.
  • Roll cookies into 1 inches balls, coat in sugar.
  • Flatten each cookie with a glass coated in sugar (for spherical cookies, skip this step).
  • Bake 12 minutes or until edges are golden brown. Allow 5 minutes to cool before transferring to wire racks.
