MASTER CLASS BARBECUE SAUCE
Got this off the web somewhere and modified it. It's the best barbecue sauce we've ever had, hands down! Adjust the cayenne to taste, we like it HOT!

Steps:
- Combine all dry ingredients in a nonreactive saucepan. Blend in the vinegar, honey, Worcestershire sauce, and the soy sauce. Bring the mixture to a boil.
- Stir in the ketchup, being careful that the mixture doesn't pop and splatter. Reduce the heat and simmer for 30 minutes, stirring occasionally.
- If canning, pour sauce into warm sterilized jars and process in a water-bath canner for 5 minutes. Otherwise, put into containers with tight-fitting lids and store in refrigerator.

Steps:
- Whisk together warm water, tomato paste and apple cider vinegar. This important step will help dissolve the tomato paste into the mixture.
- Add brown sugar, maple syrup, honey, and molasses and combine well. Add the spices and stir to incorporate.
- Bring to a simmer over medium to high heat. Stir continuously with a wooden spoon so it does not burn.
- Turn the heat down cook over medium to low heat until the mixture thickens. Continue to stir occasionally with a wooden spoon so the mixture does not burn.
- The sauce will thicken as it cools. To check the thickness, transfer a small amount to a small cup and place it in the freezer until cool.
- Place in a sterile jar or container and let cool completely. Keep in the refrigerator for up to 4 weeks. Or process in a water bath canner to make it shelf stable.

LOOING MASTER SAUCE
This master sauce is used over and over again to braise beef, poultry and pork. Makes wonderful leftovers for use in stir-fry or soup noodles. After using, strain and keep refrigerated or frozen until next loo session.

- Add meat, reduce heat and simmer covered for 15 minutes each side.
- Bring to a boil, turn off heat. Keep covered and let sit for 3 hours or until internal temperature reached appropriate doneness.

- Separately, mix the tomato paste with the other wet ingredients which are vinegar, Worcestershire sauce, garlic and onions.
- Combine the dry and wet ingredients in a sauce pan, and simmer for about 20 minutes on low heat.
- Puree all the ingredients together, and then go back and simmer the mix again.
- Allow for the sauce to thicken, or serve at room temperature.

- 1. Heat a saucepan over medium heat, then add the fat. Once the fat has coated the pan and begins to shimmer, add onion and cook until soft and translucent, about 6–8 minutes. Add the garlic and continue to cook over medium heat until the onion has started to brown and the garlic has started turning crisp, about 3 minutes more.
- 2. Add the brown sugar and cook, stirring frequently until the sugar melts and starts to form a glaze, about 2–3 minutes.
- 3. Stir in the apple cider vinegar, ketchup, paprika, mustard, salt, and pepper. Bring to a simmer and cook for 3–5 minutes, or until the sauce has thickened slightly, then add the Worcestershire sauce and simmer for 1 more minute.
- 4. Transfer the sauce to a blender and blend at high speed until the sauce is smooth and takes on an orange hue, approximately 1 minute. Be careful, as hot liquids are liable to splatter in a blender. Pulse once or twice before proceeding to a full blend. Transfer to an airtight container and allow to cool to room temperature. Store in a refrigerator for up to 1 month.
