MASHED CANDIED YAMS



Mashed Candied Yams image

I had these at an appreciation dinner at Treasure Island Casino in Minnesota and later asked the banquet manager to give me the recipe. These were delicious and very easy to make. They taste like candy and melt in your mouth . If you like you can thicken them up with instant mashed potatos, this gives them a bit smoother texture and enables you to use a pastry gun to plate the yams for a fancier presentaion.

8 yams
1 cup brown sugar
2 cups sugar
1 tablespoon apple cider vinegar
1/4 cup butter
1 tablespoon water
3 tablespoons flour
3 tablespoons maple syrup
4 eggs
instant potato flakes (optional)

Steps:

  • Peel and halve yams then boil until cooked through and drain.
  • Mash yams and cover to keep warm while cooking the rest.
  • Combine all ingredients except the yams and eggs in a seperate pan and cook on the stove top over medium high to high heat until it comes to a slow boil and simmer for a just couple more minutes.
  • Add mashed yams and and eggs and stir until combined.
  • Thicken with instant mased potatos if desired and serve.

I was tired of plain old mashed potatoes. Tried this as an alternative. Now, we eat more yams than white potatoes!

2 -3 medium fresh yams
3 tablespoons butter or 3 tablespoons margarine
1 tablespoon granulated sugar (can substitute brown sugar)
1 teaspoon cinnamon

Steps:

  • peel and cut yams into cubes.
  • boil until tender (about 30 mins).
  • drain.
  • add butter, sugar, cinnamon.
  • mix until smooth (I use the hand mixer but my mom prefers the stand mixer).

On a whim one night I threw some avocado into my mashies to stir things up a bit and was surprised at how much I liked them. My general rule of thumb is a quarter of an avocado per large russet potato, but feel free to use other spuds. It's a good, healthy way to make the potatoes creamy without bad fat. You can leave out the butter if you like. Make sure that if your avocado is a Reed that you only use half of it since they are usually quite large.

4 large russet potatoes (scrubbed or peeled)
1 avocado
1 tablespoon butter
salt and pepper

Steps:

  • Cut the potatoes into quarters.
  • Drop them in a quart of salted, boiling water and let cook for 10-15 minutes or until easily pierced by a fork.
  • Cut the avocado into four parts lengthwise and discard the rind and pit.
  • When the potatoes are done, drain them and immediately add the butter, avocado, salt and pepper to ensure the potatoes are still hot for best mixing.
  • Mash the ingredients together so that the avocado is mixed evenly throughout - I prefer a hand-held mixer with a blender or whisk attachment.

1/2 lb butter
1 lemon, quartered
2 garlic cloves, whole
2 avocados, mashed
1 1/2 lbs potatoes
salt
pepper

Steps:

  • Peel and quarter the potatoes, then wash them thoroughly.
  • Place the potatoes in a large pot with enough cold, salted water to cover them and bring to a boil. Reduce heat and simmer for 20 min, or until cooked through, and drain.
  • Meanwhile put butter, lemon and garlic in a saucepan over very, very low. Let it simmer for 20-30 minutes. Discard lemon and garlic.
  • Gently mash the avocado.
  • When potatoes are done, drain and mashed to your liking. Fold in avocado and butter.
  • Season with salt and pepper to taste.
  • If you like creamer mashed potatoes, you can add some milk.

1 avocado
1/3 cup nonfat yogurt
1/4 cup pistachios, crushed

Steps:

  • Bake yams at 350 for 40-60 minute until soft. Let cool.
  • Scrape cooled yams into bowl; mash.
  • Add yogurt; whip.
  • Quickly chop and blend in avocado.
  • Move mixture to casserole.
  • Top with crushed pistachios.
  • Bake at 350 for about 20 minute.
