SALLY'S SPINACH MASHED POTATOES
This was one of my mother's best recipes. It is very quick, easy and delicious. A good way for the little ones to eat their spinach!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium casserole dish.
- Cook spinach according to package directions. Place potatoes in a pot with enough water to cover, and bring to a boil. Cook 15 minutes, or until tender but firm. Drain, cool slightly, and mash.
- In a bowl, mix the spinach, mashed potatoes, butter, sour cream, onion, salt, and dill. Transfer to the prepared casserole dish. Top with Cheddar cheese.
- Bake 20 minutes in the preheated oven, until bubbly and lightly brown.

I LIKE this potato recipe because it's a make-ahead dish and when the company rings the bell, it can be placed in the oven. Of Swedish origin, it was first served to my husband and me when we visited our daughter in Michigan and this was part of her Easter meal. She had received it from a friend.

- Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Meanwhile, cook spinach in a small amount of water until wilted; drain well., Drain potatoes; place in a large bowl and mash. Stir in the spinach, sour cream, butter, chives and seasonings. , Transfer to a greased 2-1/2-qt. baking dish. Sprinkle with cheese. Bake, uncovered, at 400° for 20-25 minutes or until heated through.

- Preheat oven to 400 degrees F (200 degrees C). Grease a 2 quart casserole dish.
- Bring a large pot of salted water to a boil. Add potatoes and cook until tender, about 15 minutes. Drain and mash.
- In a large bowl combine mashed potatoes, spinach, sour cream, butter, green onions, salt and pepper. Spoon into prepared dish.
- Bake for 15 minutes. Top with cheese and bake 5 minutes longer.

MASHED POTATO CAKES WITH SPINACH AND CHEESE
Steps:
- Add cooked mashed potatoes to a large bowl. Set aside. Heat olive oil in a non-stick skillet over medium heat. Add garlic and onion. Sautee for 5 minutes.
- Add spinach and continue sautéing until spinach is wilted. Add spinach mixture to mashed potatoes. Stir to combine.
- Thoroughly mix the remaining ingredients plus 1 cup of panko crumbs, placing the rest of the panko in a shallow dish.
- Preheat oven to 350. Form potato mixture into small cakes, coat them in the panko, ad then transfer cakes to a nonstick baking sheet. Repeat with remaining mashed potato mixture.
- Bake for 15-20 minutes, or until cakes are browned on top. Serve immediately.

- Preheat oven to 400 degrees Fahrenheit.
- Peel and cook potatoes (slice 1/2-3/4 inch thick and boil for about 15 minutes) and put through ricer.
- Add salt, pepper, yogurt or sour cream, milk and butter (if using) to potatoes. Beat well until fluffy.

- Cook the poatoes in boiling water until very tender.
- Mash with a potato masher or a fork.
- In a large bowl, mix together the mashed potatoes with the butter, sour cream, salt and pepper.
- Set the oven to 350 degrees.
- Butter a 10 cup casserole dish.
- Wash the fresh spinach leaves (if using fresh spinach).
- Place the wet leaves in a microwave-safe dish; cover, and microwave on HIGH for 2-3 minutes, when cool, enough to handle, squeeze out all excess moisture.
- Chop coarsley, and place in a medium-size bowl; stir in the feta cheese and the garlic.
- Stir the spinach mixture into the potatoes.
- Spoon the mixture into the prepared baking dish (swirling the top slightly to design).
- Sprinkle with the grated Parmesan cheese.
- Bake, uncovered in the center of the oven at 350 degrees about 40-50 minutes, or until the top is golden.

- Clean the potatoes and put them to boil until tender in lightly salted water. Then drain, peel and mash them with 1 tablespoon of butter.
- Blanch the cleaned and torn into small pieces spinach for a few minutes in boiling water, then drain it and add it to the potatoes. Add in the milk , salt, black pepper and nutmeg and blend everything into a nice smooth puree.

- Dice the potatoes coarsely and boil them until tender.
- While the potatoes are boiling, render the bacon slowly. When it starts to brown add the spinach, raise the heat and evaporate all of the liquid.
- Drain the potatoes and mash them with stock or heavy cream until you have the desired consistency. Fold in spinach and bacon and add cheese to taste. Season with salt and pepper.
- Reheat leftovers in a microwave oven or in a double boiler.
