CINNAMON ROASTED POTATOES
A cinnamon stick broken into pieces gives these potatoes a bit of Middle Eastern flavor. Roasting them first at 325 degrees, and then turning the heat up to 450, gives them a perfect crispness.

Steps:
- Heat oven to 325 degrees. Put all the ingredients in a 10-inch cast-iron skillet and stir until combined.
- Transfer to the oven and roast, stirring once or twice, until potatoes are tender, about an hour and 15 minutes. Then raise the oven temperature to 450 degrees and cook until potatoes are crusty, brown and tender, about 15 minutes longer.

- Place potatoes in a saucepan and cover with water; bring to a boil. Cook until very tender, about 20-25 minutes. , Meanwhile, in a skillet over low heat, cook onion and sugar in butter until golden, stirring frequently. Drain and mash the potatoes. Add milk, salt and pepper. Stir in onion mixture. Garnish with parsley if desired.

- Peel and chop potatoes. Place in a pot, cover with cold water and bring to boil over medium heat. Cook until soft. Drain well, add butter and sour cream (or half and half) and mash. Season with salt and pepper to taste.
- In a large skillet, heat up olive oil. Add one tablespoon of butter and let melt. Add minced garlic and chopped onions. Saute, stirring often until fragrant, translucent and some pieces are golden.
- Add second tablespoon of butter. Stir in, melting, and cook onions until golden brown and caramelized. Add brown sugar and soy sauce. Stir in. Remove from heat.
- Stir in caramelized onions with mashed potatoes. Serve right away or cool completely, cover with saran wrap and store in the fridge for the next day.

- In a large saucepan, heat oil over medium heat. Add onions; cook and stir 6-8 minutes or until tender. Add couscous; cook and stir 2-3 minutes or until couscous is lightly browned., Add water, salt, cinnamon, curry powder, cumin and coriander; bring to a boil. Reduce heat; simmer, covered, 7-10 minutes or until liquid is absorbed and couscous is tender. Stir in currants, cilantro, mint and lemon zest; let stand 5 minutes Fluff with a fork. - Saute onions in olive oil till browned, adding pine nuts toward the end so they get toasted.
