Yield Makes 24 hors d'oeuvre servings

Number Of Ingredients 20

For the apple-horseradish mayonnaise:
1 (2-inch) piece fresh horseradish root, peeled and finely grated
1/2 cup unsweetened applesauce
2 teaspoons apple cider vinegar
1 tablespoon Pommery or Dijon mustard
1 cup mayonnaise
For the latkes:
3 pounds Yukon gold potatoes, peeled
1 pound Jerusalem artichokes, thoroughly washed
1 large yellow onion, peeled
3 large eggs, beaten
2 tablespoons minced fresh flat-leaf parsley
1/4 cup all-purpose flour, plus more as needed
About 1 1/2 cups vegetable oil for frying
To serve:
1 (14-ounce) jar taramasalata*
2 tablespoons minced fresh chives
*Taramasalata is Greek carp roe mayonnaise, and is available at Middle Eastern and Mediterranean markets. Chef Todd Aarons recommends Krinos brand.
Special Equipment
Large baking sheet

Steps:

  • Make the apple-horseradish mayonnaise:
  • In a medium bowl, stir together the horseradish, applesauce, vinegar, mustard, and mayonnaise. Season with salt and pepper. DO AHEAD: The sauce can be made and stored, in an airtight container in the refrigerator, up to 3 days.
  • Make the latkes:
  • Line a large bowl with a clean cloth napkin or lint-free kitchen towel.
  • Working in batches, use the larger side of a box grater or a food processor fitted with a grater attachment to coarsely grate the potatoes, Jerusalem artichokes, and onion. As they're grated, transfer the vegetables to the towel-lined bowl. Gather the corners of the towel and wring as much excess liquid as possible from the vegetables. Transfer the wrung vegetables to a dry mixing bowl. Add the egg and parsley and stir to combine. While stirring the mixture, gradually add the flour, stirring well to incorporate.
  • Line a large baking sheet with paper towels.
  • In a large sauté pan over moderately high heat, heat 1/4 inch of oil until hot but not smoking. Test the latke batter by frying a small amount of batter in the hot oil-it should hold together and not fall apart when flipped. If necessary, add additional flour, 1 tablespoon at a time, but try to add as little flour as possible to create light latkes.
  • Working in batches, drop 2-tablespoon-size dollops of batter into the hot oil and use the back of a spoon to press the batter into 1 1/2-inch diameter pancakes. Season with salt and pepper and fry until golden brown, about 2 minutes. Flip the latkes and continue frying until golden brown, about 2 minutes. As they finish cooking, transfer the latkes to the paper-towel-lined baking sheet.
  • To serve:
  • Arrange the latkes on a large plate or platter and top half with apple-horseradish mayonnaise and half with taramasalata. Sprinkle with minced chives and serve immediately.

JERUSALEM ARTICHOKES

Jerusalem Artichokes image

Number Of Ingredients 0

Steps:

  • Unfortunately, there's no way to unmush them. For now, you'll just have to make either mashed Jerusalem artichokes (just like you make mashed potatoes) or cream of Jerusalem artichoke soup (blend with some broth and cream). Next time, watch your chokes very closely, since they can turn mushy in the blink of an eye.
  • If the color bothers you, make them into soup or cover them with sauce. They do discolor quickly, so next time, cook or eat them immediately after cutting. If you want to prepare them in advance or eat them raw but not immediately, either toss them with an acidic dressing or soak them in acidulated water (water with lemon juice or vinegar in it). And don't cook them in an aluminum or iron pan, as both can cause discoloration.

I found this one web surfing and thought it sounded intersting, since I love both artichokes and potatoes. ;) It didn't specify the size of can for the artichokes, but this is what I found for average non-marinated - adjust to taste. ;)

JERUSALEM ARTICHOKE AND POTATO CHIPS WITH MUSTARD SALT

Jerusalem Artichoke and Potato Chips with Mustard Salt image

Steak and chips is an Australian institution, and my take on this classic involves perfectly crisp Jerusalem artichokes sprinkled with a punchy mustard salt. They're the perfect partner for the robust T-bone.

Provided by Donna Hay

Yield 2 Servings

Number Of Ingredients 6

Mustard Salt
1 tablespoon yellow mustard seeds
1 tablespoon sea salt
Vegetable oil, for deep frying
2/3 pound waxy potatoes, thinly sliced (see Cooks' Note)
2/3 pound Jerusalem artichokes, thinly sliced (see Cooks' Note)

Steps:

  • To make the mustard salt, place the mustard seeds in a small frying pan over medium heat and cook, stirring, for 1-2 minutes or until fragrant. Place the mustard seeds and salt in a mortar and grind with a pestle until combined. Set aside.
  • Fill a large saucepan halfway with oil and heat over medium heat until the temperature registers 350°F on a deep-fry thermometer. Cook the potatoes, in batches, for 2-3 minutes or until golden and crisp. Drain on paper towels. Cook the artichokes, in batches, for 3-4 minutes or until golden and crisp. Drain on paper towels. Sprinkle the chips with the mustard salt and serve immediately.

MASHED POTATOES WITH CHIVES

Mashed Potatoes With Chives image

This is about as simple as it gets: classically prepared mashed potatoes - just potatoes, milk, butter and salt - get a generous handful of pretty chives stirred in. Be sure to add plenty of salt, and taste as you go; good mashed potatoes rely on it.

Provided by Pierre Franey

Categories     easy, weekday, side dish

Time 30m

Yield 4 servings

Number Of Ingredients 5

1 1/2 pounds russet potatoes
Salt to taste
1 cup milk
4 tablespoons butter
4 tablespoons chopped chives

Steps:

  • Peel the potatoes and cut them into 2-inch cubes.
  • Put the potatoes in a saucepan and cover with water. Add salt and bring to a boil. Simmer 20 minutes or until the potatoes are tender. Do not overcook them.
  • Meanwhile, heat the milk until it is hot.
  • Drain the potatoes and put them through a food mill or ricer or mash them well with a potato masher. Return them to the saucepan. Using a wooden spatula, add the butter and chives and blend well. Mix in the milk and keep warm until ready to serve.
