GARLIC HERB MASHED POTATOES
Garlic Herb Mashed Potatoes, made with roasted garlic, fresh herbs, and gold potatoes, are an easy side dish recipe perfect for dinner!

Steps:
- Clean potatoes and cut into 1-inch sized pieces. Cook in covered pot over medium heat in broth until very tender, about 30-40 minutes. Alternatively, cook on high pressure in electric pressure cooker for 12 minutes.
- Add cream cheese, butter, roasted garlic, herbs, salt and pepper to cooked potatoes and mash together until well blended. Add additional salt and pepper, if needed.

- 1 Preheat oven to 350°F (180°C). 2 Prick unpeeled potatoes in several places and place on a rimmed baking sheet. Bake until very tender, from 1 to 1¼ hours. Set aside until cool enough to handle. Then peel or scoop flesh out of skins and cut into chunks. 3 Pulse potatoes in a food processor along with butter, garlic, salt and pinches of paprika and cayenne until as smooth as you like. Or put potatoes through a food mill or mash; then mix in butter, garlic, salt and seasonings. Stir in basil. Taste and add more butter, salt or basil if needed. If not being served right away, potatoes can be left at room temperature for a couple of hours; or refrigerate them, covered, for up to 2 days. Warm in the microwave or an oven dish.

- Peel potatoes and chop into 2-inch pieces.
- Peel garlic cloves, and halve them if they are very large.
- Fill a large pot 3/4 full with water, salt lightly and bring to a boil.
- Add potatoes and garlic to the water and cook, until potatoes are fork-tender, about 20-25 minutes, then drain.
- Place potatoes in a bowl, and add butter.
- Mash potatoes and garlic, and add basil, chives, and enough milk to achieve a creamy but not runny texture.
- Season the potatoes with salt and pepper.
- Serve.

- Peel the potatoes and cut them into 3/4-inch cubes. Place the pieces in saucepan and cover with water. Add the garlic and salt.
- Bring to a boil and simmer for 15 minutes or until the potatoes are tender. Do not overcook.
- Drain. Discard garlic. Put the potatoes through a food mill or ricer, or mash them well with a potato masher.
- Add the olive oil, and beat to blend. Add the warm milk, basil and pepper. Blend well. Serve piping hot.

(Potatoes can be made in advance and refrigerated. Before serving, put potatoes in glass dish, cover with plastic wrap and reheat in microwave oven for 4 to 6 minutes on high setting.
