SMASHED RED POTATOES WITH CABBAGE



Smashed Red Potatoes With Cabbage image

I set out to make a traditional Irish colcannon here, a mixture of mashed potatoes with cabbage and scallions. But I decided to go with a lighter carbohydrate load, using red boiling potatoes rather than starchier Idaho potatoes. Instead of making a purée of them, after cooking the potatoes in their skins I quarter them and, skin and all, smash them in a hot pan with a potato masher or the back of a spoon.

2 pounds red potatoes, scrubbed
Salt
1 pound cabbage (1/2 medium cabbage), quartered, cored and cut in thin shreds across the grain
2 tablespoons unsalted butter or extra virgin olive oil
2 heaped tablespoons chopped scallions (about 3 scallions)
2/3 cup low-fat milk (more as needed)
Freshly ground pepper
2 tablespoons minced chives (optional)

Steps:

  • Cover the potatoes with water in a saucepan, add about 1/2 teaspoon of salt and bring to a boil. Reduce the heat to medium, cover partially and cook until tender all the way through when pierced with a knife, about 30 minutes. Do not drain the water, but using a skimmer or a slotted spoon, transfer the potatoes from the pot to a bowl. Cover tightly and allow to sit for five to 10 minutes. Then, using a towel to hold the potatoes steady (because they're still hot), cut them into quarters.
  • Meanwhile, bring the water back to a boil, add more salt if desired and add the cabbage. Cook uncovered until tender, five to six minutes. Drain.
  • Heat the butter or oil over medium heat in a large, heavy nonstick skillet, and add the scallions. Cook, stirring, until they soften, about three minutes. Add the potatoes. Smash the potatoes to a coarse mash in the pan with a potato masher or the back of your spoon. Stir in the hot milk, and mix together well until the potatoes have absorbed all the milk. Stir in the cabbage, and season generously with salt and pepper. Add the chives, stir together until heated through and serve.

1 kg Potatoes (Peeled and cut into large chunks)
4 Cloves Garlic (Peeled and chopped (or use frozen preprepared as I do))
200 g Butter
300 g Cabbage (Finely sliced, I like Savoy but you can use whichever you prefer)
100 g Spring onions (Finely chopped, including the green parts)
100 ml Single cream
20 g Fresh chives (Chopped finely)
Plenty of sea salt flakes and freshly ground black pepper
A pat of butter and a sprinkling of fresh chives

Steps:

  • Boil the potatoes with the garlic for 15 - 20 minutes until cooked through.
  • While the potatoes are cooking, melt 100g of the butter in a small frying pan and saute the cabbage and spring onions for 3 - 4 minutes until softened.
  • Drain the potatoes and mash (leave the garlic in).
  • Add the cabbage and spring onions (including the butter they were cooked in) to the potatoes.
  • Meanwhile warm the remaining butter and cream until the butter is melted (I do this in the pan I fried the cabbage in). Add to the potato and cabbage mixture.
  • Add the chives and plenty of salt and pepper and stir until throughly combined. Serve immediately with extra butter and chives to garnish.

3 pounds potatoes (peeled & quartered)
½ cup cream (warmed)
¼ cup butter (melted)
6 slices bacon (optional, see note)
1 white onion (or 2 leeks)
½ head of cabbage ((approx. 6 cups))
3 tablespoons butter (melted)

Steps:

  • Bring a large pot of salted water to a boil. Cook potatoes 12-15 minutes or until fork tender.
  • If using white onion, dice into ½-inch pieces. If using leeks, cut off the dark greens and discard. Thinly slice the whites and light green parts, rinse well. Set aside. Cut cabbage into 1-inch pieces.
  • Meanwhile, if using, cook bacon in a large skillet until crisp. Set aside to cool, reserve drippings.
  • Add 1 tablespoon of butter to the bacon drippings. If you are not using bacon, add 3 tablespoons of butter to a large skillet.
  • Cook onion or leeks and cabbage over medium heat in the drippings or butter until onion is translucent and cabbage is tender.
  • Once cooked, drain the potatoes and place them back into the warm pot. Mash potatoes with a potato masher adding cream and ¼ cup butter as needed. Season with salt and pepper.
  • Gently fold together mashed potatoes, cabbage & onions. Top with additional melted butter if desired and crumbled bacon if using.

1 medium onion (chopped)
1 clove garlic (smashed and peeled)
1 small head savoy cabbage (cut into 1 inch pieces)

3 1/2 - 4 cups chicken broth (homemade preferred)

  • Heat a medium dutch oven over medium heat. Add 1/4 cup of olive oil to the pan along with the chopped onion and smashed garlic. Season with 1/2 teaspoon and salt. Cook the onions slowly, stirring often with a wooden spoon, until they are soft and tender, about 8 minutes. Add the chopped cabbage and an additional 1/2 teaspoon salt and stir to combine. Cook for 2 minutes or until the cabbage wilts. Stir in the potatoes and the enough broth to cover the mixture. Season with the remaining salt. Bring the mixture to a simmer and cook stirring often until the liquid is reduced by half, the potatoes are tender and the cabbage is silky and soft, about 30 - 35 minutes. ¼ cup milk
2 tablespoons mayonnaise

2 cups finely chopped steamed cabbage (about 1 pound cabbage)
2 1/2 cups mashed potatoes (about 1 pound 2 ounces potatoes, peeled, cut in chunks and steamed until tender - about 20 minutes - then mashed with a potato masher or a fork)
1/2 cup chopped chives
1 tablespoon chopped fresh marjoram (optional)
1 teaspoon baking powder
Salt and freshly ground pepper to taste
1/4 cup all-purpose flour
2 eggs
3 to 4 tablespoons sunflower oil, grapeseed oil or canola oil for frying

Steps:

  • To prepare the cabbage, remove the outer leaves and quarter a small head or 1/2 of a larger head. Core and place in a steamer above 1 inch of boiling water. Steam 10 to 15 minutes, until tender when pierced with a knife or skewer. Remove from the heat and allow to cool, then squeeze out water, and chop fine. Mix with the potatoes in a large bowl. Add the chives, baking powder, marjoram if using, salt, pepper, and flour. Beat the eggs and stir in.
  • Begin heating a large heavy skillet over medium heat. Heat the oven to 300 degrees. Add 2 tablespoons of the oil and when it is hot carefully scoop up heaped tablespoons of the potato mixture and use a spoon or spatula to ease them out of the spoon into the pan. Gently flatten the mounds slightly with the back of a spoon or a spatula but don't worry if this is hard to do - if they stick -- because when you flip them over you can flatten them into pancakes. Brown on the first side - about 2 or 3 minutes - and using a spatula, flip the mounds over and gently push them down so that they will be shaped like pancakes. Brown on the other side and remove to a baking sheet. Continue with the remaining potato mixture, adding oil to the pan as necessary.

Steps:

  • Gather the ingredients.
  • Preheat the oven to 350 F/180 C/Gas 4. Add the mashed potato and swede to a large mixing bowl and set aside.
  • Melt 2 ounces of the butter in a frying pan over medium heat. Add the finely sliced cabbage or kale and cook gently for several minutes until softened but not brown.
  • Add the cooked cabbage or kale to the bowl of potato and swede along with the remaining butter and mash together thoroughly. Season with salt and pepper to taste. Potato can soak up salt, so be generous with it to add a good flavor.
  • Place the mashed vegetables in an ovenproof baking dish and sprinkle the cheese on top. Cover with a lid or aluminum foil and bake in the oven for about 30 minutes or until heated through.

  • Preheat oven to 425°F Lightly oil a 3-quart baking dish.
  • Place potatoes in a large heavy pot. Add salted water to cover and bring to a boil. Reduce heat to medium and cook until tender, 10 to 20 minutes.
  • Meanwhile, drop cabbage into a pot of boiling salted water and cook, stirring occasionally, until tender, about 6 minutes. Drain and set aside.
  • Drain potatoes and return to pot. Place over low heat and shake, uncovered, for about 30 seconds to evaporate excess moisture.

2 1/2 cups coarsely chopped cabbage
6 garlic cloves, peeled
1 chicken bouillon cube
1/2 cup reduced-fat cream cheese
1/4 cup milk
1/4 cup light sour cream
1/2 teaspoon salt
1/4 teaspoon black pepper
cooking spray

Steps:

  • Preheat oven to 350°.
  • Combine first 4 ingredients in a large stockpot; cover with water. Bring to a boil; cover, reduce heat, and simmer 30 minutes. Drain.

1 onion, sliced thin
3/4 pound yellow-fleshed or russet (baking) potatoes
1/4 cup milk
1 tablespoon unsalted butter, cut into bits

Steps:

  • In a large heavy skillet heat the oil over moderate heat until it is hot but not smoking and in it brown the kielbasa. Add the cabbage and the onion and cook the mixture, stirring occasionally, until the cabbage is browned. Add 1 1/2 cups water and simmer the mixture, covered partially, for 15 to 20 minutes, or until the cabbage is tender.
  • While the mixture is simmering, in a steamer set over boiling water steam the potatoes, peeled and cut into 3/4-inch pieces, covered, for 12 minutes, or until they are very tender, transfer them to a bowl, and mash them with a potato masher. Add the milk, scalded, 3 tablespoons hot water, the butter, and salt and pepper to taste and stir the potato mixture until the butter is melted. Serve the kielbasa mixture on the mashed potatoes.

Potatoes and cabbage have been sustenance foods in Ireland for ages. The classic Irish dish Colcannon (mashed potatoes with cabbage) combines the two.

3 cups finely shredded green cabbage
1 onion (finely chopped)
1/4 cup water
6 potatoes (cooked and mashed, or 4 cups prepared instant mashed potatoes )
1/4 cup milk
1/4 cup butter (or margarine)
Salt (to taste)
Freshly ground pepper (to taste)

Steps:

  • Gather the ingredients.
  • Place cabbage, onion, and water in a saucepan or Dutch oven and quickly bring to a boil. Reduce heat, cover, and simmer about 8 minutes until tender. Do not overcook.
  • Add mashed potatoes , milk, butter or margarine, salt , and pepper . Mix well, stirring often until heated through. Serve warm as a side dish.
  • Enjoy!
