2 lb yukon gold potato
½ cup whole milk
½ cup heavy cream
8 cloves garlic, crushed
½ cup unsalted butter, cubed, cold
2 teaspoons kosher salt
freshly ground black pepper, to taste
chive, finely chopped, for serving

Steps:

  • On a cutting board, peel the potatoes. Place the potatoes in a large bowl of cold water after peeling to avoid discoloration.
  • Cut the potatoes into 1-inch (2 cm) cubes.
  • Add the potatoes to a large pot and cover with cold water. Bring to a boil over high heat, then reduce the heat to low and simmer for 12 minutes.
  • In a small saucepan, bring the milk, heavy cream, and garlic to a simmer over low heat.
  • Remove the pot from the heat and strain the cream through a fine mesh sieve.
  • Drain the potatoes in a colander and transfer back to the pot.
  • Mash the potatoes with a potato masher, potato ricer, or by pushing through a fine mesh sieve with a spatula.
  • Add the cubed cold butter and salt. Stir to combine.
  • Gradually add the cream mixture to the potatoes, little by little, until fully incorporated.
  • Top with freshly ground black pepper and sprinkle with chives and serve.

5 pounds Yukon Gold potatoes, peeled and cubed
½ cup butter
¼ cup milk
1 (8 ounce) package cream cheese, softened
1 onion, grated
1 egg
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Add potatoes, and cook until tender but firm, about 15 minutes; drain.
  • In a large bowl, mash potatoes with the butter and milk. With a hand mixer, beat in cream cheese and onion. In a small bowl, beat the egg with a little bit of the mashed potatoes. Stir into potatoes, and season with salt and pepper. Transfer to a 2 quart casserole dish.
  • Bake 1 hour in the preheated oven, or until puffy and lightly browned.

These homemade mashed potatoes are perfectly rich and creamy, full of great flavor, easy to make, and always a crowd fave. See notes above for tips and possible recipe variations. And also, feel free to halve this recipe if you would like to make a smaller batch.

5 pounds potatoes (I use half Yukon Gold, half Russet potatoes)
2 large cloves garlic, minced
fine sea salt
6 tablespoons butter
1 cup whole milk
4 ounces cream cheese, room temperature
toppings: chopped fresh chives or green onions, freshly-cracked black pepper

Steps:

  • Feel free to peel your potatoes or leave the skins on. Then cut them into evenly-sized chunks, about an inch or so thick, and transfer them to a large stockpot full of cold water.
  • Once all of your potatoes are cut, be sure that there is enough cold water in the pan so that the water line sits about 1 inch above the potatoes. Stir the garlic and 1 tablespoon sea salt into the water. Then turn the heat to high and cook until the water comes to a boil. Reduce heat to medium-high (or whatever temperature is needed to maintain the boil) and continue cooking for about 10-12 minutes, or until a knife inserted in the middle of a potato goes in easily with almost no resistance. Carefully drain out all of the water.
  • Meanwhile, as the potatoes are boiling, heat the butter, milk and an additional 2 teaspoons of sea salt together either in a small saucepan or in the microwave until the butter is just melted. (You want to avoid boiling the milk.) Set aside until ready to use.
  • After draining the water, immediately return the potatoes to the hot stockpot, place it back on the hot burner, and turn the heat down to low. Using two oven mitts, carefully hold the handles on the stockpot and shake it gently on the burner for about 1 minute to help cook off some of the remaining steam within the potatoes. Remove the stockpot entirely from the heat and set it on a flat, heatproof surface.
  • Using your preferred kind of potato masher (I recommend this one in general, or this one for extra-smooth), mash the potatoes to your desired consistency.
  • Then pour half of the melted butter mixture over the potatoes, and fold it in with a wooden spoon or spatula until potatoes have soaked up the liquid. Repeat with the remaining butter, and then again with the cream cheese, folding in each addition in until just combined to avoid over-mixing. (Feel free to add in more warm milk to reach your desired consistency, if needed.)
  • One final time, taste the potatoes and season with extra salt if needed.
  • Then serve warm, garnished with any extra toppings that you might like, and enjoy!

1 medium potato, peeled and cubed
1-1/4 teaspoons active dry yeast
2 tablespoons warm water (110° to 115°)
3/4 cup sugar
1/2 cup warm 2% milk (110° to 115°)
1/4 cup shortening
6 tablespoons butter, softened, divided
1 large egg, room temperature, lightly beaten
3/4 teaspoon salt
3 to 4 cups all-purpose flour
1/3 cup apricot cake and pastry filling
1/3 cup raspberry cake and pastry filling
2/3 cup confectioners' sugar
4 teaspoons 2% milk

Steps:

  • Place potato in a small saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Drain, reserving 1/2 cup cooking liquid. Mash potato; set aside 1/2 cup (discard or save remaining potato for another use)., In a large bowl, dissolve yeast in warm water. Add the sugar, milk, shortening, 4 tablespoons butter, egg, salt, reserved cooking liquid and mashed potato. Beat in 2 cups flour until smooth. Stir in enough of the remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 45 minutes., Turn onto a well-floured surface. Shape into 1-1/2-in. balls; place 2 in. apart on greased baking sheets. Flatten to 1/2-in. thickness. Cover and let rise for 15 minutes or until almost doubled. Melt the remaining butter., Brush each roll with butter. Bake at 400° for 5 minutes. Remove from oven and carefully make a 1-inch round indentation in the center of each roll with the back of a spoon. 2 ¼ teaspoons yeast (or 1 packet)
1 pinch ginger (ground)
1 teaspoon sugar
3/4 cup milk (110F, divided use)
4 tablespoons butter (cut into small chunks)
2 1/2 cups bread flour (you may need up to 3 1/2 cups)
1 teaspoon kosher salt
1/4 cup sugar
1/4 cup instant potato flakes (unflavored)
1 egg (room temperature)
1 can fruit pie filling - your choice
1/3 cup sugar
2 tablespoons flour
1/2 teaspoon cinnamon
3 tablespoons melted butter

Steps:

  • Add the yeast, 1 teaspoon sugar, and ginger to 1/4 cup warm milk and set aside.
  • Put the remaining milk and butter in a microwave-safe bowl and heat until the butter melts.
  • Let cool to 110F. It should feel comfortably warm to when you drop a few drops on your wrist.
  • In the bowl of a stand mixer fitted with a paddle attachment combine 2 cups of the flour with the salt, sugar, and potato flakes.
  • Add the yeast mixture and the cooled milk mixture and stir until blended.
  • Add the egg and blend it in.
  • Add another 1/3 cup of flour. The dough will be sticky.
  • Switch to the dough hook.
  • Add flour a tablespoon or two at a time until the dough doesn't stick to the sides of the bowl.
  • Knead until dough is smooth and elastic, about 5 minutes. It will still be a little sticky especially on the bottom.
  • Remove from the mixer bowl and form into a ball.
  • Rub the ball with melted butter then place it in a greased bowl.
  • Turn the ball over once.
  • Cover the bowl loosely with a clean tea towel.
  • Let it rise for 1 hour, or until doubled in bulk.
  • Punch dough down.
  • Divide the dough into 10 equal pieces
  • Roll into balls and arrange them 2 inches apart on a baking sheet lined with parchment.
  • Brush with butter, cover loosely with tea towels or plastic wrap, and let rise for 1 hour.
  • Make indentations in the buns and fill with cheese mixture or fruit filling.
  • Sprinkle with crumb mixture.
  • Bake at 425F for 8 to 10 minutes or until golden brown. Watch carefully.

1 cup potato, hot mashed
1/2 cup butter
1/2 cup water, cold
1/2 cup milk, powdered
2 teaspoons yeast
1 1/2 teaspoons salt
2/3 cup sugar
2 eggs
4 1/3 cups flour, divided

Steps:

  • Boil and mash potatoes.
  • While hot add potato water.
  • Mash so there are no lumps; add butter.
  • Add cold water with the powdered milk, sugar and eggs.
  • Add yeast when not too hot.
  • Add 2 cups flour; mix.
  • Add rest of flour; mix until smooth.
  • Put in a covered container so that it is only 1/4 full.
  • Put in refrigerator overnight.
  • Next day make buns size of walnut; put on cookie sheet.
  • Work with dough while cold.
  • If you don't want to work with all the dough at one time, return rest to refrigerator and use next day; this dough is supposed to last in refrigerator for 6 days.
  • Grease the buns with pure lard or oil.
  • Let rise until nearly double.
  • Make dents in the center and put in the filling.
  • Bake at 450 degrees Fahrenheit for 10 to 12 minutes until golden brown.
  • Remove from oven; grease with shortening; cool.
  • If to be frozen, cool slightly and pack in air tight contaners.
  • Before they get too cold, freeze; if packed slightly warm it keeps in the freshness.

1.5 kg / 3 lb potatoes, peeled and cut into 2.5cm/1" cubes ((Preferably Sebago, Russet or Maris Piper, Note 1))
1 tbsp salt ((for cooking))
60g / 4 tbsp unsalted butter (, chopped)
1/3 cup milk (, preferably warmed)
1/2 tsp salt
Extra melted butter
Chives or parsley (, chopped)

Steps:

  • Place in a large pot with 1 tbsp salt. Add water so it's 10cm / 4" above potatoes.
  • Bring to a boil over high heat then reduce heat so it's simmering rapidly. Cook 15 minutes or until potatoes are very soft (jab with fork to test, they should fall apart).
  • Drain well, return into pot. Leave for 1 minute, shaking pot every now and then, to encourage evaporation of water.
  • Add Flavourings then mash well, using milk to make it looser if desired.

flour for dredging ((about 1/4 cup))
3 cup (630 grams) cooled mashed potatoes ( (fresh, leftover or store bought))
1 cup (110 grams) grated cheese ((I use a cheddar cheese-gruyere combination))
1/4 cup finely chopped green onion (or more) (1-2 green onions)
1/4 cup (6 grams) chopped fresh parsley
1/4 cup (31 grams) all purpose flour ((or less if mashed potatoes are dry))
1/4 teaspoon garlic powder
1 large egg

Steps:

  • MAKE POTATO MIXTURE AND PANCAKES: Combine all potato pancake/latke ingredients in a medium bowl or large bowl. Mix well. Taste and adjust seasoning. Using your hands, form mixture into about 12 balls about 2-2 1/2 inches (6 cm) in diameter for medium latkes. Place dredging flour on a plate. Roll each ball in flour, move it to a cutting board and press down to form a pancake 1/2 inch (1.27cm) thick. Repeat with all 12 balls.
  • FRY POTATO PANCAKES/LATKES: Heat large nonstick skillet or cast iron if you have to medium-high heat, then lower it to Medium heat. Add 2 teaspoons butter and 2 teaspoons oil to the hot skillet. When sizzling, add half the latkes. Don't overcrowd pan. Fry for about 3-4 minutes, flip over and fry another 3-4 minutes. Drain on plate lined with paper towels. Heat the remaining butter and oil. Repeat with remaining potato pancakes/latkes.
  • SERVE: Serve immediately plain or with caramelized onions, a dollop of sour cream or apple sauce.

2 pkg (4-1/2 teaspoons) active dry yeast
1 tsp sugar
3/4 c lukewarm water (100 degrees f.)
2 c lukewarm milk
3/4 c instant potato flakes
1 Tbsp salt
3/4 c sugar
2 large eggs
1/2 c canola oil
4 to 5 c all purpose flour
STREUSEL TOPPING:
1/2 c all purpose flour
1/4 c butter, room temperature (2 ounces)
1/2 c sugar
1/2 c finely chopped coconut (optional)

Steps:

  • 1. To make the dough: In a small bowl, dissolve yeast and sugar in 3/4 cup warm water, blending with a fork. Set aside.
  • 2. In a blender or food processor, place warm milk, potato flakes, salt, 3/4 cup sugar, eggs and oil. Blend until well mixed.
  • 3. Place 4 cups flour into a large bowl or stand mixer bowl fitted with a paddle attachment. Add mixture from blender and mix. Add yeast and up to 1 additional cup of flour if dough is too sticky. Mix until the dough is smooth. It should be a LITTLE sticky. Cover with greased plastic wrap and let rise until doubled.
  • 4. Using a medium cookie scoop, portion out equal-sized pieces of dough, and roll into a ball. Place on parchment-lined baking pan, brush with oil and cover with plastic wrap and let rise until almost doubled.
  • 5. Meanwhile, make the streusel topping. In a medium bowl, cut 1/4 cup butter into flour that has been mixed with sugar and coconut (if using) until coarse crumbs result. Set aside. Using the bottom of a floured glass or with your fingers, make an indentation in the tops of the Kolace and dollop with your favorite filling. Add streusel on top and bake for 10 to 12 minutes.
  • 6. Remove from oven and brush sides of Kolace with a mixture of 3 Tablespoons hot water mixed with 1 Tablespoon sugar, or melted butter. These will freeze well but, because they don't contain preservatives, they will stale quickly at room temperature or when refrigerated, but try microwaving them briefly to warm them for a just-baked taste.
  • 7. In some parts of the United States today, particularly in TEXAS, Kolace have become savory affairs stuffed with ham and cheese, and other fillings. This recipe calls for instant potato flakes, which hardly seems traditional, but many early recipes call for mashed potatoes in the dough, so this is just a modern concession. As is the use of a blender to speed things up!

  • To prepare your potatoes, you can either scrub them clean and leave them unpeeled (like I did) or rinse and peel them (for smooth, skin-free mashed potatoes). Then cut the potatoes into even chunks about 2” in size (see photos).
  • Place the potato chunks in a large Dutch oven or soup pot. Add 1 teaspoon of the salt, and enough water to cover the potatoes by 1 to 2 inches.
  • Bring the mixture to a boil over high heat. Continue cooking, reducing the heat as necessary to prevent overflow, until the potatoes are easily pierced through by a fork, about 10 to 15 minutes.
  • Carefully drain off all of the water and return the potatoes to the pot. Mash the potatoes until they reach your desired consistency (I like mine a little chunky, but you can mash them completely smooth if you prefer).
