6 sweet potatoes, peeled and cubed
¾ cup milk
½ cup butter
¾ cup maple syrup

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender, 20 to 30 minutes.
  • With an electric mixer on low, blend potatoes, slowly adding milk, about 1/2 a cup at a time. Use more or less to achieve desired texture. Add butter and maple syrup to taste. Blend until smooth. Serve warm.

These quick and easy, vegetarian, Ginger Mashed Potatoes are a perfect side dish for fall and lovely for Thanksgiving! They're creamy, rich and packed with warm flavors.

3 pounds sweet potatoes
6 tablespoons unsalted butter
2 tablespoons plus 2 teaspoons ginger pulp, (freshly grated (see notes))
2 teaspoons brown sugar
½ teaspoon ground cinnamon
6 tablespoons heavy cream
salt and freshly ground black pepper to taste

Steps:

  • Peel the sweet potatoes, and then cut them into bite-sized pieces, about 2-inch cubes.
  • Put a large steamer into a large pot with the water level just below it. Over high heat, bring the water to a boil and then add sweet potatoes to the rack. Turn the heat to low, cover, and steam until the sweet potatoes are very tender, about 15 minutes. (You can stick a fork into one of the pieces to see how tender they are -- it should easily slide right out when they're done.)
  • Add the sweet potatoes -- along with the butter, ginger, brown sugar, and cinnamon -- to a large mixing bowl and use a very large fork or potato masher to mash them. They can be as smooth or as chunky as you'd like -- mine are mostly smooth with a few chunks. (This must be done while they're still hot, so that the butter melts in nicely.)
  • Now mix in the cream and season to taste with salt and pepper. (Here's How.)

2 lbs yams (or sweet potatoes) sliced into ½ inch thick disks, skin on
water
2 tablespoons coconut oil, butter, ghee, or olive oil
1 shallot, finely diced
2 teaspoons fresh ginger, grated or paste
2 garlic cloves, minced
1 teaspoon salt
pepper to taste

Steps:

  • Slice sweet potatoes into disks and place them in a pot, cover with water, bring to a boil, cover with lid and simmer 12-15 minutes.
  • When the sweet potatoes are fork tender, drain, saving the water. In the same pot, heat olive oil, butter or coconut oil over medium heat and add shallots, ginger and garlic, stirring until fragrant and golden about 2-3 minutes.
  • At this point, you could add the sweet potatoes back into the pot and mash ( using a potato masher) adding some of the reserved sweet potato water to loosen it, or place it all in a food processor to whip until silky smooth.
  • I usually add about ½ cup liquid for a looser, almost saucy consistency. Season with the salt, pepper.
  • Top with maple pecans for a crunchy texture.

3 tablespoons grated fresh ginger
2 tablespoons walnut oil
1 teaspoon ground cardamom
½ teaspoon ground black pepper

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a large bowl, toss together the sweet potatoes, honey, ginger, walnut oil, cardamom, and pepper. Transfer to a large cast iron frying pan.
  • Bake for 20 minutes in the preheated oven. Stir the potatoes to expose the pieces from the bottom of the pan. Bake for another 20 minutes, or until the sweet potatoes are tender and caramelized on the outside.

3 medium-large yams
2 tablespoons extra virgin olive oil
sea salt
fresh coarsely ground black pepper
1 tablespoon butter
½ cup shallots, minced
4 tablespoons fresh ginger, minced
1 egg
1 tablespoon soy sauce
4 tablespoons yogurt
2 tablespoons milk

Steps:

  • Preheat oven to 375 (190 c). Rub the potatoes with one tablespoon of the olive oil, liberally salt and pepper them, and roast for about 40 minutes, or until tender. Meanwhile, in a small pan, heat the butter and remaining one tablespoon of oil, add the shallots and ginger, salt and pepper, and sauté for about 5 minutes, until soft. Transfer to a blender, add the egg and soy sauce, and blend. Remove the potatoes when done, let them cool a bit, and peel off the skins. Transfer to a large mixing bowl, add the yogurt and milk, and mix well, using a sturdy wooden spoon and plenty of elbow grease. Add the egg-ginger mixture from the blender, and again mix thoroughly. Salt and pepper to taste. Makes 6 or 7 large servings.
