MASHED BUTTERNUT SQUASH

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Pierce butternut squash skin with a small knife and place cut-side down in a baking dish; pour in enough water for a depth of 1/2 inch. Cover dish with aluminum foil.
- Bake in the preheated oven until squash is tender, about 1 hour.
- Scoop squash into a bowl; add 3/4 cup sour cream, butter, brown sugar, cinnamon, salt, and pepper. Mash mixture using a potato masher or fork until smooth. Garnish with parsley and 1 tablespoon sour cream.

THICK AND CREAMY MASHED BUTTERNUT SQUASH
An easy recipe for mashed butternut squash. Cook the squash in the microwave, then add butter, Parmesan, garlic, and salt. Simple and good!

- Place the butternut squash cubes in a large microwave-safe bowl. Add 1/2 cup water, cover, and microwave until tender, about 15 minutes. Drain well.*
- Place the cooked butternut squash along with the remaining ingredients in your food processor. **
- Process until smooth, 1-2 minutes, stopping to scrape the sides with a spatula as needed. Start processing on low, then process on high until smooth.
- Serve the mash immediately. Keep leftovers in the fridge, covered, for 3-4 days.

CINNAMON ROASTED BUTTERNUT SQUASH
Not only is roasted butternut squash a perfect side dish, it's perfect to add to rice bowls or to top hearty salads. We enjoy it cold and often save some for the following day to add to salad for lunch. If you've got lots leftover, make soup. Throw leftover roasted squash into a blender with a splash or two of stock and blend. This recipe can be used for other varieties of winter squash. Simply substitute other winter squash varieties for butternut squash in our recipe below.

- Heat oven to 425 degrees F and line two large baking sheets with aluminum foil.
- Toss squash cubes with olive oil, brown sugar, cinnamon, salt and the cayenne until well coated. Tumble coated squash onto baking sheets and spread into one layer. Try not to crowd them too much or else they will not brown.
- Bake squash, turning once and rotating pans once, until edges are lightly browned and centers are tender; 40 to 45 minutes. (Since ovens can often run hotter than you have heated them to, check the squash every so often to make sure they are not roasting quicker than expected).

MASHED BUTTERNUT SQUASH

- Place a rack in the center of your oven and preheat the oven to 350 degrees F. For easy clean up, line a rimmed baking sheet with parchment paper or aluminum foil.
- Wash and dry the squash. Trim off the top and bottom ends, then carefully slice it in half lengthwise. (No need to peel it.) Scoop out the seeds. Place it cut-side up on the prepared baking sheet.
- Brush the cut sides of the squash with 1 tablespoon of the olive oil and the maple syrup. Sprinkle with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Bake for 1 hour 15 minutes, or longer depending upon the size of your squash, until very tender and the squash pierces easily with a fork. Let rest until cool enough to handle.
- Carefully scoop out the flesh and place it in the bowl of a stand mixer or a large mixing bowl. Add the nutmeg, cayenne, milk, Parmesan, parsley, and remaining 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mash the butternut squash, either by hand with a potato mixer, or with an electric hand mixer on low speed, or the paddle attachment of a stand mixer on low speed, until it is as smooth as you like (we leave ours a bit chunky). Taste and adjust the seasoning as you like. Enjoy hot.

Steps:
- Cut squash lengthwise and scrape all seeds out.
- Line a baking dish with regular or release tinfoil. Place squash in dish with peeling facing up.
- Bake in a 350 degree oven for 30 minutes.
- Turn squash over and pour melted butter over both pieces. Sprinkle with cinnamon. Continue baking for another 30 minutes.
- Enjoy!

- Prep the squash. To easily peel the squash, I cut it into quarters and carefully use a knife to cut the peel off since it's very thick. Cut it into approximately 1.5" pieces.
- Place the squash on a large baking sheet and toss it with the olive oil. Season generously with salt & pepper. Roast for 25-30 minutes or until it's very tender. I like to toss it halfway through baking for more even color.

- Place the squash halves face up on a baking sheet. Sprinkle with salt, pepper, and dark brown sugar. Take a pat of butter and break it into pieces and put on 1 half of the squash. Repeat another pat of butter on the other half.
- Roast squash for approximately 30-45 minutes. Squash is done when you can easily poke the tip of a knife through it. It should feel soft and not give the knife any resistance.

- Peel your squash using a vegetable peeler. Start from the top and bring the vegetable peeler down towards you. Once peeled, carefully place it on the cutting board. Starting from the larger bulbous side, find the center and carefully insert your knife. Holding the base of the squash as you insert the knife fully through. Once it is through the center of the bulb end, carefully cut through the longer spot. Once you are done, you should have two halves. Using an ice cream scoop, remove seeds and excess pulp.To cube, flip the squash to cut side down. Slice starting with the bulb end and cut into cubes until complete. By keeping it cut side down, this helps to keep it steady and mitigate any kitchen accidents. Always be mindful of where your hands are in regards to your knife because cutting this like squash, and sweet potatoes is tough!
- Add 1 1/2 cups of water to a 16-quart stockpot, and add your steaming basket. Add squash cubes on top of the basket and cover pan. Turn heat to high and steam for about 15-18 minutes. I recommend checking for doneness with an oven-mitted hand at the 15-minute mark. Once pierced, the squash should be tender, and easy to insert your fork into. If it still feels hard, cover it back up and continue to cook it for the extra 3 minutes. Once tender, using oven-mitted hands, remove the pan from the stove, and drain any excess water. Remove steamer basket from the pan. You should now have bright orange tender cubes of cooked squash.
- Once the squash is ready, and drained it is time to add the butter, sour cream, sugar, and cinnamon directly to the pan. I prefer to mash my squash and potatoes this way because the pan is still hot and keeps the squash hot. It also allows the butter to melt, and the flavors to intensify. Plus, it makes clean up easier! Once your ingredients are in the pan, use a potato masher to mash the squash and mix the ingredients throughout. The end result should be mashed, fluffy, and flavorful squash. Enjoy warm!
