EMPANADAS WITH CORN DOUGH



Empanadas with Corn Dough image

Empanadas with Corn Dough or Quesadillas are a delicious snack which can be eaten any day. They can be filled with a variety of fillings from farmer fresh cheese, squash flowers, potatoes, ground meat, shrimp, chicken, etc.

Number Of Ingredients 8

2 cups of masa harina
1-¼ cups of warm water (amount may vary depending on air humidity and other wheatear conditions.)
1/4 teaspoon salt
2 pieces of round plastic cut out from a bag. (freezer bags are ideal for this purpose.)
2 cups of filling (cooked chicken, ground meat or grated cheese)
2 cups of shredded lettuce
1 avocado diced
About 1 1/2 cup of vegetable oil for frying

Steps:

  • Prepare the dough in a bowl, mixing the masa harina, salt, and warm water to form a ball, knead dough until smooth. Divide the dough into 12 balls, and flatten and slightly cover with plastic wrap. Set aside.
  • Place one ball of dough between two pieces of plastic and press using a tortilla press, a heavy skillet or a dish. I know, you have seen the tortilla press, but somehow I love to use my glass dishes for this step. So, do not be afraid, use whatever you have.
  • Remove the top piece of plastic and spoon some of the stuffing onto the tortilla. Leaving enough room to seal the edges.
  • Using the piece of plastic fold the dough over to make a half moon shape turn over. Pinch the edges, making sure they seal to avoid any leaking of the mixture while frying. Remove the empanada from the plastic set aside on a large plate or tray and cover with a plastic wrap. Keep working with the rest of the dough making the empanadas.
  • Heat the oil in a skillet over high heat. It's frying time!
  • Deep fry the empanadas one or two at a time until golden brown.
  • About 2 minutes on each side. Drain on paper towels. Serve hot topped with lettuce and avocado. Eat them adding some salsa. After that, take a long walk.

Masarepa is cornmeal that has been precooked, dehydrated and ground into a fine powder. It's used all over Colombia, Venezuela and Bolivia for a variety of recipes, including arepas and empanadas.

2 cups yellow masarepa (about 10 ounces)
1 teaspoon kosher salt

Steps:

  • Combine masarepa, salt and 2 cups tepid water in a large bowl. Stir with your hands and massage into a smooth dough.
  • Take a small ball in your hand and press it flat. If the dough cracks, add more water, 1 tablespoon at a time, until it is smoother and workable. (Small cracks around the edges are OK.)
  • Cover masa and set aside to rest for at least 15 minutes before using. Masa can be made several days in advance and stored in the fridge in a zip-top bag.

Here's what you need: frozen fire-roasted corn, red bell pepper, orange bell pepper, jalapeño, red onion, fresh cilantro leaves, crumbled cotija cheese, mayonnaise, lime, kosher salt, freshly ground black pepper, red pepper flakes, ground cumin, egg yolk, whole milk, Pillsbury™ Original Crescent Rolls, crema, crumbled cotija cheese, fresh cilantro leaves

1 package frozen fire-roasted corn, thawed
½ cup red bell pepper, finely diced
½ cup orange bell pepper, finely diced
¼ cup jalapeño, finely diced, seeded
¼ cup red onion, finely diced
¼ cup fresh cilantro leaves, chopped
⅓ cup crumbled cotija cheese
¼ cup mayonnaise
1 lime, juiced
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
½ teaspoon red pepper flakes
½ teaspoon ground cumin
1 egg yolk
2 teaspoons whole milk
2 cans Pillsbury™ Original Crescent Rolls, 8 ounce (225 g)
¼ cup crema, plus more for dipping
¼ cup crumbled cotija cheese
2 tablespoons fresh cilantro leaves, chopped

Steps:

  • Preheat the air fryer to 350°F (180°C).
  • Make the street corn: In a large bowl, mix together the corn, red bell pepper, orange bell pepper, jalapeño, red onion, cilantro, Cotija cheese, mayonnaise, lime juice, salt, black pepper, red pepper flakes, and cumin until well combined.
  • Assemble the empanadas: Open and unroll one can of Pillsbury™ Original Crescent Rolls. Cut into 4 rectangles, then firmly press the perforated lines together to seal. Cut each rectangle in half to form 8 squares.
  • Scoop a heaping tablespoon of the street corn filling onto the center of each square and fold the dough over the filling to form a triangle. Firmly press the edges together with a fork to seal. Repeat with the remaining dough and filling.
  • In a small bowl, whisk together the egg yolk and milk until smooth and brush the empanadas with the egg wash.
  • Place 2-3 empanadas at a time in the air fryer basket and air fry until golden brown, 3-5 minutes. Transfer to a plate while you repeat with the remaining empanadas.
  • Arrange the empanadas on a serving platter and top with the crema, Cotija cheese, and cilantro. Serve immediately.
  • Enjoy!

  • Make your masa dough. Mix the masa harina with the hot water and knead into a cohesive dough, about 2 or 3 minutes. You may need slightly more or less water: What you want is a moist masa that does not stick to your hands.
  • Cut out two sheets of plastic from a supermarket produce bag; the flimsy ones. These are better than heavy plastic. Put one sheet on your tortilla press, then pull off about 40 grams of masa dough, a bit larger than a walnut, or exactly the size of a walnut in its husk. Roll it into a ball and set it on the plastic. Put the other piece of plastic over it and press down with your hand a bit to flatten the dough somewhat. Lever your tortilla press down hard, but not all the way. Flip the tortilla over and lever it down again. This makes an evenly flat tortilla.
  • Get a large frying pan or heavy pot and pour enough oil to come up at least 1 inch up the sides, and ideally 2 inches. Heat it to between 325°F and 350°F.
  • Peel off the top piece of plastic and spoon a heaping tablespoon, more or less, onto the side of the dough closest to the lever, leaving about 1/2 inch space from the edge of the dough.
