- In a heavy-bottomed saucepan whisk egg yolks, sugar and cream; simmer over low heat for 2-3 minutes then cool.
- Fold in ricotta cheese and whipped cream until blended.

I tried out some other mascarpone substitute recipes but thought the cream cheese taste was overwhelming. I created this for a version of tiramisu I was making and have used it as a filling/topping in other desserts.

- Mix all ingredients together (it helps if cream cheese is room temperature) and chill. Sugar is optional, but adds the perfect hint of sweetness.

MASCARPONE CHEESE SUBSTITUTE
Ok, it's not perfect but it's so close that no one noticed a difference in my tiramisu. Mascarpone costs about four times as much as these ingredients at our local markets. Give it a try if you face the same costs and I doubt you'll have any regrets. The yield is almost 2 lbs. and of course a half recipe is right at a pound. Prep time doesn't include the hour or so needed for ingredients to reach room temp.

- Allow cream cheese and butter to reach room temperature.
- Beat until the butter is incorporated, add whipping cream and beat just until thoroughly blended.
- If you need to store leftover "mascarpone", keep refrigerated in tightly sealed containers filled as full as possible.
- On partly filled containers, putting a layer of plastic wrap directly on the cheese before sealing keeps it fresh longer.

- Cream cheese. If I don’t have mascarpone left in the fridge, my favorite substitute is always cream cheese. Mind you, using this doesn’t make any difference especially for kitchen emergencies.
- Cottage cheese. For a low-fat substitute, especially for those who are trying to watch their weight, cottage cheese is a healthier alternative. Also, you’ll get more protein from it than what you’re getting from mascarpone.
- Sour cream. Another low-fat alternative that you can also consider would be sour cream. It’s pretty much just like mascarpone in physical appearance but has a more tangy taste.
- Greek yogurt. A cheaper but still healthier substitute for mascarpone is the superfood greek yogurt. Cutting off extra calories and maintaining a healthy diet is important.

- Vegan cream cheese. Surprisingly, the first time I tried a vegan cream cheese I was blown away. You can’t even tell the difference from a nonvegan one.
- Soft tofu with vegan cream. If you thought that tofu can only be used in savory dishes, think again. This ingredient can help you make a protein-rich dessert.
- Coconut milk with vegan cream. If you can’t find coconut cream, coconut milk can be used instead. Just have it mixed with some vegan cream to achieve the same consistency as mascarpone.
