SARSON KA SAAG (INDIAN MUSTARD GREENS)

Sarson Ka Saag (Indian Mustard Greens) image

North Indian vegetarian recipe. Using ghee (Indian butter made from cow's milk) is important, since ghee gives that special taste.

Time 45m

Yield 6

Number Of Ingredients 12

2 large dried red chile peppers
2 bunches fresh spinach, washed and chopped
1 bunch mustard greens, washed and chopped
2 tablespoons ghee (clarified butter)
½ teaspoon cumin seeds
¼ cup finely chopped onion
½ teaspoon ginger paste
2 teaspoons garlic paste
½ tomato, chopped
salt to taste
½ teaspoon white sugar, or to taste
¼ cup water

Steps:

  • Place the chiles into a dry skillet over medium heat, and cook and stir until the chiles turn dark red-brown in color and give off their fragrance, 1 to 2 minutes. Remove from heat, allow to cool, and remove stems of chiles; shake out the seeds, and tear the flesh of the roasted chiles into pieces. Set aside.
  • Place the spinach into a saucepan over medium heat; place mustard greens into a separate saucepan. If leaves are dry, mix in 1 or 2 of tablespoons of water. If leaves are still wet, just cover the pans and simmer the greens until tender, about 10 minutes. Allow to cool.
  • Place greens together into the work bowl of a food processor, and pulse several times to break up the greens, then process to a paste, about 1 minute.
  • Heat ghee in a large saucepan over medium heat, and stir in the cumin seeds, stirring for about 30 seconds or until the seeds sizzle and turn a darker brown color. Mix in the onion, cook and stir until lightly browned, about 3 minutes, and mix in the roasted peppers, ginger paste, garlic paste, and tomato. Mix in the pureed greens, bring to a simmer, and stir in salt and sugar to taste. If dish is too thick, mix in up to about 1/4 cup of water, 1 tablespoon at a time, until the greens are the desired thickness.

SUVIR SARAN'S PALAK KI TIKKI (SPINACH AND POTATO PATTIES)

Suvir Saran's Palak Ki Tikki (Spinach and Potato Patties) image

These are adapted from Suvir Saran's potato patties called palak ki tikki, from his lovely cookbook "Masala Farm." They are a striking green because of all of the raw spinach that gets packed into them. The big, spicy burgers are incredibly easy to put together and to cook. Suvir serves them with chutney, either green or tamarind, but we both agree that they're delicious with plain old ketchup. I made a quick raita to serve with the burgers by stirring sweet pickle relish into plain yogurt.

Time 50m

Yield Makes 10 substantial burgers (about 3 1/2 inches)

Number Of Ingredients 11

2 pounds red boiling potatoes, scrubbed and quartered
4 firmly packed cups finely chopped, stemmed, washed spinach (about 3/4 pound leaves)
1 fresh, hot green chili, finely chopped
1/4 cup chopped fresh cilantro
1 teaspoon garam masala
1/2 teaspoon cayenne pepper
1/2 teaspoon ground black pepper
Salt to taste (Suvir Saran uses about 1 1/4 teaspoons)
2 tablespoons fresh lemon juice
1 cup panko or chickpea flour (you will not use all of it)
2 tablespoons grape seed oil

Steps:

  • Steam potatoes over 1 inch of boiling water until tender, about 15 minutes. Transfer to a wide bowl and mash with a fork. Add remaining ingredients except panko or chickpea flour and oil and mix well with your hands, squeezing the ingredients together. There will still be small chunks of potato and potato skin in the mixture. Taste and adjust seasoning.
  • Scoop out about 1/2 cup of the spinach-potato mixture, roll it with the palm of your hand to make a ball, and coat with panko or chickpea flour. Then press down to flatten to a 3 to 3 1/2-inch cake. Continue with remaining mixture. Chill for at least 1 hour.
  • When you're ready to cook, place a rack over a sheet pan. Heat 2 tablespoons of oil in a large frying pan over high heat. Swirl pan to coat with the hot oil. Lower heat to medium. Place 4 to 5 patties in the pan (do not crowd), and cook until well browned on one side, about 4 minutes. Turn and brown for about 4 more minutes. Remove to the rack. Heat remaining oil in pan and cook remaining patties. Keep patties in a low oven until ready to serve. Serve with a salad and your choice of toppings, such as the usual (ketchup, mustard, relish), or yogurt raita, garlic yogurt, or chutney.

Categories     Greens

Time 1h

Yield 4 serving(s)

Number Of Ingredients 18

4 cups mustard greens or 4 cups spinach, shredded
2 medium potatoes, peeled and cubed
1 teaspoon oil
1 teaspoon cumin seed
4 green onions
1 teaspoon garlic paste or 1 teaspoon minced garlic
1 -2 jalapeno, sliced into 5-10 rings (optional)
1/4 cup frozen peas
1/2 teaspoon mango powder
1/4 teaspoon ginger powder
1/4 teaspoon salt
1/8 teaspoon pepper, to taste
1/3 cup garbanzo flour
1/4 cup white poppy seeds (or breadcrumbs)
cooking spray (for frying) or dabs oil (for frying)
1/2 teaspoon cumin powder
1 teaspoon coriander powder
1/2 teaspoon paprika

Steps:

  • Steam the mustard greens or spinach until wilted. Set aside.
  • Boil the potatoes until cooked through. Mash and set aside.
  • Heat the oil until it is sizzle-hot. Add the cumin seeds. When they darken a few shades, add the green onions, garlic and jalapeno slices. Now add the masala. Sauté until the garlic is golden-brown.
  • Add the peas, ginger powder, mango powder and salt and pepper. Cook until the peas are heated through.
  • Dump the pan's contents into a large bowl and combine with the mashed potatoes, chickpea flour and wilted greens.
  • Form this batter into 2-inch size balls. (A little larger than a golf ball). Smash it into a patty. Put the breadcrumbs or white poppy seeds in a small bowl and hold the patty over the bowl while sprinkling both sides of it for a coating.
  • Spray a skillet with oil (or use a dab of oil). Place the patties in pan (we do ours one at a time) and spray more oil on the top of the patty. Alternately you can use dabs of oil. Fry each side until golden brown. Done.
