MASALA CHIPS
These spicy masala chunky fries are made from everyday pantry ingredients, and are ready in less time that it takes to get takeout. Addictively good, my masala chips are so easy to make at home.

Steps:
- Preheat the oven and cook the oven chips as per the packet instructions. I always get far better results if I use a mesh or crisper tray for cooking oven chips.
- Pour the oil into a medium skillet or frying pan. Saute the onion and garlic over a low heat, with a pinch of salt, until starting to turn golden.
- Add the spices, and fry for another minute until fragrant.
- Stir through the tomato sauce, the water and a grating of ginger. Bring to a simmer and cook for a minute, stirring all the time. You want a thick sauce that will coat the fries. Add a little more water if needed. Remove from the heat until the oven chips are cooked.
- Once the oven chips are cooked and golden brown, reheat the spicy sauce. Gently stir the chips through to coat them.
- Garnish and serve immediately.

Steps:
- Heat the oil in a large pan over medium-high heat, then add the red onion and cook for 5 minutes, until browned.
- Add the tomato, serrano, and garlic. Stir well, cover, and cook for 5 minutes, until the tomatoes have softened.
- Add the garam masala, turmeric, and cumin. Stir, reduce the heat to medium, and cook for another 10 minutes, or until the sauce clings to the potatoes and they soften slightly.
- Stir in the lemon juice and cilantro, then add the fries and salt. Toss well to coat. Serve immediately.
- Enjoy!

Steps:
- Bake the chips in oven or deep fry or air fry them according to packet instructions, until crispy golden.
- Heat the pan to low-medium heat, drizzle 1 tablespoon of oil, add chopped onion and stir fry few seconds. Follow with the chopped garlic and saute until light brown.
- Add turmeric, curry powder, chilli flakes, black pepper and stir fry few seconds until fragrant. Next add tomato ketchup, salt and water. ( Add more water if needed. )
- Stir well until the sauce starts to get thicken, add the fried chips. Toss well to combine everything evenly for 1 minute.
- Turn off the heat and sprinkle chopped coriander and chilli slices. Transfer to serving plate and serve immediately.

Steps:
- In a pan/ kadhai, heat oil and then add potato chips (cut into the shape of fries) to it. Fry them until they turn golden brown in color. Make sure you drain the soaked potato chips and then add them to the kadhai. Once fried, transfer them to kitchen paper to remove the excess oil.
- Now, to the same kadhai, add curry leaves and fry them for about 15-20 sec. Once done, switch off the gas flame.
- In a bowl, add fries, curry leaves, salt, black pepper, and cumin powder. Toss them together.
- Once done, serve them quickly. Your Masala Chips are ready. You can have them on their own or serve them with a dip.
