GRANDMA'S BANANA PUDDING
My grandma ran a country club and a restaurant in her day. She can make amazing food, but sometimes it's hard to get a recipe from her because she doesn't measure anything and makes everything from memory. While letting her talk it out, I was able to get this banana pudding and a few other recipes written down. Enjoy!

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Line the bottom of a baking dish with some wafers. Combine sugar, flour, and salt in a bowl.
- Beat yolks in a heavy saucepan over medium heat. Add flour mixture alternately with milk and vanilla extract, stirring constantly. Bring to a simmer and cook until slightly thickened, 8 to 10 minutes. Add butter; continue stirring until thickened to a pudding-like consistency, 5 to 7 minutes more.
- Layer a portion of banana slices over the wafers and cover with pudding. Repeat layers with remaining bananas, wafers, and pudding.
- Beat egg whites in a glass, metal, or ceramic bowl, gradually adding cream of tartar, until soft peaks form. Add sugar and continue beating on high speed until stiff peaks form. Fold in vanilla extract. Spoon meringue over the pudding.
- Bake in the preheated oven until meringue browns, 15 to 20 minutes. Let cool before serving.

Steps:
- mix your condense milk with 8 ounces of cream cheese with your hand mixer and put it in the frige while you are mixing your three cups of regular milk and large box of vanilla pudding together, then put that in the frige also until ready to put everything together.
- Drain your pineapples very good and slice your bananas in about one inch slices into a small bowl after this remove your cream cheese mixture and your pudding mixture from the frige fold them both together and then add the cool whip by folding it in also.
- you can use a clear bowl or a pretty dish which ever you perfere but add your vanilla wafers on the bottom layer and then add the pudding mixture and then add the banana and pineapple, make another layer the same way until you use up all the mixture you can add more vanilla wafers if you like, my family like a lot of wafers so I use two boxes, refrigerate or serve when finished since everything is already cold this recipe is so easy and tasty and you don't have to cook a thing

- In the bowl of a stand mixer, add in the heavy whipping cream, confectioners' sugar and vanilla extract and, using the whisk attachment, whip until stiff peaks form, about 5-7 minutes. Remove the whipped cream to a separate medium bowl and set aside.
- To the wiped out stand mixer bowl, add the cream cheese and, using the same whisk attachment, whip the cream cheese until fluffy, about 30 seconds. Add in the sweetened condensed milk and beat until smooth and no lumps of cream cheese remain, stopping to scrape the bottom and sides of the bowl as needed. Add in the dry pudding mix and mix well, then slowly stream in the milk and mix until fully combined.
- Add 2/3 of the whipped cream to the pudding mixture and fold it in gently until fully combined and no whipped cream streaks remain. Set aside.
