EASY POUND CAKE

Steps:
- Pre-heat oven to 180C/160C fan/gas 4 and line a 900g loaf tin with parchment paper (mine was 19cm x 9cm x 6cm). Put all of the ingredients except those for the icing into a large bowl and beat together, either using an electric hand whisk or a wooden spoon until smooth and combined. Pour the mix into the loaf tin and spread evenly with the back of spoon. Bake for 40 - 45 mins.
- Once out of the oven, leave to cool and make the icing. Combine the icing sugar and vanilla paste with three tbsp of water - you may need more but add it gradually to get a thick icing. Spread it over the top of the cake; it's fine if it drips down the edges. Allow to set and then slice.

Steps:
- Preheat the oven to 325 degrees and grease and flour a 12 bundt or tube pan.
- Combine all ingredients in a large mixing bowl and blend at low speed till mixed then for 3 minutes on medium speed. Pour into the prepared pan and bake for 60-70 minutes until the top of the cake springs back with lightly touched in the center. Cool the cake upright in pan for 15 minutes then remove from pan and cool completely.
- Pour glaze on once it is completely cooled.

MARY JARRELL'S POUND CAKE
This is a recipe for the BEST POUND cake I have ever had. This was my Grandmothers recipe. She recently passed at the ripe old age of 100 and I think she would have liked to share this with the world. She would bake 10 of these at a time and give them to everyone including the mailman, paperman and anyone she would meet. So since she is no longer to bake them, I will spread the joy she would have this way. Please give it a try. Serve it plan, with your favorite fruit, ice cream or chocolate sauce or whatever you would like. The possibilities are limitless. Or better yet make two and give one as a gift.

Steps:
- Preheat oven to 300 degrees.
- Grease and flour one 10" tube pan or two 9"x5"x2 1/2" loaf pans.
- Cream margarine slowly adding sugar.
- Add sifted flour, baking powder, and salt alternately with milk.
- Add vanilla and almond extract last and blend until well mixed.
- Bake for 1 hour and 50 minutes or until done.
- Turn out of pan(s) immediately and cool on wire rack.

MARY'S DELICIOUS CREAM CHEESE POUND CAKE
I like to use all Land O'Lakes Pure Butter not Margarine; and Domino Sugar,& Philadelphia Cream Cheese. I use Swan's Down Cake Flour for all of my cakes instead of regular flour. This cake was 1st baked by me just on a whim. I was in the store with a good friend of mine one night and wanted some good pound cake. The store did not have any and I decided I would make my own. The next morning I did just that and it turned out perfectly and Delicious!!!. I called my friend told her to come over I had a surprise. She was thrilled. I was nominated every since to bake one of my famous pound cakes for most every birthday or Special Occassion or Church Dinner. I even sold them for awhile. I usually add a frosting to this cake, but it is so delicious that I have been known to cut it straight from the oven with a glass of cold milk. Whether you like frosting or just like it plain, you can't go wrong!! Everyone was pleased.

Steps:
- Place 3 sticks of Butter and Cream Cheese unwrapped in a bowl until it gets soft.
- Sift Swan's Down Cake Flour 5 Times before measuring into a Medium-Sized bowl. Set aside.
- Spray a Bundt Cake Pan or a 10-Inch Tube Pan with Bakers Joy. You may use shortening & Flour instead if so desired. Set Aside
- Measure 3 Cups of Domino Sugar. Set Aside
- Cream together Butter and Cream Cheese. Add Sugar one cup at a time until fluffy. Mix Well.
- Alternately Add 1 cup of flour and 2 eggs to Mix Beating on Low Speed to incorporate into mix. Do this until all eggs and Flour have been added to batter. Then Mix on High or Surge for about 5 Minutes.
- Stir in Flavor
- Pour Batter into either a Pre- Sprayed or Floured & Greased 10-Cup Bundt Cake Pan or a 10-Inch Tube Cake Pan. Bake in a Pre-Heated Oven at 300 Degrees for One and on-half hours or until toothpick inserted into center of cake come out clean. Cook Time may vary depending on your oven. Be Careful not to overcook resulting in a dry cake.
- May Frost Three Different Ways: I usually am requested to put Lemon, Vanilla, or Chocolate Frosting. For Vanilla I use 1 Box of Domino Confectioners Sugar; 1 Stick of Butter or Margarine (For Richer taste I use Butter) Approximately 1/4 Cup Milk; 1 tsp of Pure Vanilla Extract. In a large bowl with mixer at low speed, Combine Domino Confectioner's Sugar, Butter, Milk and Vanilla. Beat at Medium Speed for 1-2 Minutes until creamy. If desired, add more milk until frosting is at desired spreading consistency. For Lemon Frosting use same steps. I Add a little yellow food coloring for a perfect effect. Can Also Make a Lemon Glaze by adding lemon juice to Confectioners Sugar instead of Milk & Butter. For Chocolate Frosting I use 2/3 Cups Hersheys Baking Cocoa; 1 stick of pure butter (Melted); 1 box Domino Confectioner's Sugar; 1/3 cup of Milk; 1 teaspoon Vanilla Flavor Melt Butter. Stir in cocoa. Alternately Add Powdered Sugar and Milk, Beating to spreading consistency. Add small amount of additional milk if needed. Stir in vanilla. Makes about 2 cups of Frosting.
MARY'S SUGAR POUND CAKE
I've been making this pound cake for at least ten years and although I've tried others, this is my favorite. The crust that is formed from coating the pan with sugar rather than flour is incredible. The cake is moist and adapts itself to a fruit or syrup topping and it's good all by itself.

Steps:
- Preheat oven to 350 degrees.
- Generously grease a 10-inch bundt pan.
- Coat the bundt pan with 4 tsp sugar.
- Sift together flour and salt and set aside.
- Cream together with electric mixer butter, shortening and sugar.
- Add eggs, one at a time, beating for about two minutes after the addition of each egg (for a total of about 10 minutes beating).
- Add vanilla.
- Mix together evaporated milk and water.
- Add dry ingredients to creamed mixture alternately with milk/water mixture.
- Pour into prepared pan.
- Bake for 1 hour 25 minutes.
- Cool in pan for 20 minutes then remove and cool on cake rack.
