Time 18m

Yield 40 cookies

Number Of Ingredients 11

2 1/2 cups all-purpose white flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 3/4 cups packed dark brown sugar
3/4 cup unsalted butter, slightly softened
2/3 cup smooth peanut butter
1/4 cup white vegetable shortening
1/4 cup dark molasses (not blackstrap)
2 large eggs
1/2 cup finely chopped salted peanuts

Steps:

  • In medium bowl, thoroughly stir together the flour, baking powder, baking soda and salt; set aside.
  • In a large bowl with mixer on medium speed, beat together the brown sugar, butter, peanut butter, shortening and molasses until well blended and fluffy -- about 2 minutes. Add the eggs, and beat until very well blended and smooth.
  • Beat in half of the flour mixture until evenly incorporated. Stir in or beat in the rest of the flour mixture until evenly incorporated. .
  • Refrigerate the dough for at least 1 1/2 hours or up to 12 hours or until firmed up. Preheat the oven to 375*.
  • Grease several baking sheets or use nonstick spray.
  • Shape portions of the dough into generous 1 1/4" balls with lightly greased hands. Place the peanuts in a small bowl. Dip one half of each ball into the peanuts until some are embedded.
  • Place the balls, peanut side up on the baking sheets, spacing about 2 3/4" apart. Using your palm, press down on the balls until the tops are just flattened.
  • Bake the cookies, one sheet at a time in the upper third of the oven for 8-10 minutes or until lightly tinged with brown and just barely set when pressed in the centers. Reverse sheets halfway through baking from front to back to ensure even browning.
  • Transfer the sheets to a wire rack and let stand until the cookies firm up slightly. 1-2 minutes. With a spatula, remove cookies to wire racks to cool completely.
  • Store in an airtight container for up to 10 days or freeze up to 2 months.

MARY JANE'S BROWNIES

Mary Jane's Brownies image

This is a recipe from my best friend's mom. These are really fudgy brownies with icing. I never add the nuts, because I don't like nuts in my brownies, but if you like them go for it! The original recipe calls for an 11x13 pan, but we alway used a 9x13 pan or I use my deep dish baker from Pampered Chef. You can also do the melting in the microwave, which is what I do for the icing in a big batter bowl.

Number Of Ingredients 14

11 tablespoons butter
1/2 cup cocoa
2 cups sugar
3 beaten eggs
1 tablespoon vanilla
1/2 teaspoon salt
1 1/2 cups flour
1 cup chopped nuts (optional)
3 tablespoons water
3 tablespoons butter
2 tablespoons cocoa
2 tablespoons white Karo
2 cups sifted powdered sugar (measure after sifting)
1 teaspoon vanilla

Steps:

  • Pre-heat the oven to 350°F.
  • Prepare your pan (shortening, butter, spray etc.) See description for pan options.
  • Melt butter in saucepan and add cocoa and sugar. Stir and remove from heat.
  • Add the Flour, salt, vanilla and nuts.
  • Pour into pan and bake at 350 for 25 minutes for 11x13, 30 minutes for smaller pans. Do not over bake!
  • Five minutes before the end of cooking time start the icing.
  • Melt in saucepan the water, butter, cocoa, and karo syrup. Stir as it melts. Remove from heat and stir in the powdered sugar and vanilla. Stir to remove any lumps and pour over warm brownies. Let cool before slicing.

BLACK AND WHITE COOKIES

Black and White Cookies image

The black and white cookie is a bakery classic, especially in New York. This recipe delivers a big soft and cakey cookie loaded with vanilla, and topped with thick, sweet vanilla and chocolate icings. There's actually not a lot of work that goes into these cookies, but be patient and let the icing set to a nice matte finish before serving or storing. They're worth the wait!

Time 2h

Yield 12 black and white cookies

Number Of Ingredients 14

1 3/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
10 tablespoons unsalted butter, at room temperature
1 cup granulated sugar
2 large eggs, at room temperature
2 teaspoons pure vanilla extract
1/3 cup sour cream
2 3/4 cups confectioners' sugar
3 to 4 tablespoons milk
2 tablespoons light corn syrup
1 teaspoon pure vanilla extract
2 tablespoons unsweetened Dutch-process cocoa powder

Steps:

  • Make the cookies: Position racks in the upper and lower thirds of the oven and preheat to 350˚ F. Line two baking sheets with parchment paper. Whisk the flour, baking powder, baking soda and salt in a medium bowl until combined.
  • Beat the butter and granulated sugar in a large bowl with a mixer on medium-high speed until light and fluffy, about 3 minutes. Add the eggs, one at a time, then the vanilla, beating well after each addition.
  • Reduce the mixer speed to low and beat half of the flour mixture into the butter mixture until just combined. Beat in the sour cream, then beat in the remaining flour mixture.
  • Using a large ice cream scoop or 1/4 cup measure, scoop mounds of dough and place 3 inches apart on the baking sheets (6 cookies per pan). Bake, rotating and switching the pans halfway through, until the cookies are puffed and the bottoms and edges are just starting to brown, about 15 minutes. Let cool 5 minutes on the pans, then remove the cookies to a rack to cool completely.
  • Make the icing: Sift the confectioners' sugar into a large bowl. Add 3 tablespoons milk, the corn syrup and vanilla and whisk until smooth and very thick but still spreadable. Remove half of the icing (about 1/2 cup) to a separate bowl and stir in the cocoa powder until smooth, thinning with up to 1 tablespoon milk, if needed.
  • Turn the cookies flat-side up. Using a small offset spatula, spread the white icing on half of each cookie, making a straight, clean line in the center of the cookie. Return the cookies to the rack, and let sit, preferably in a cool place, until the icing is firm with a matte finish, at least 30 minutes. Spread the chocolate icing on the other half of the cookies. Let the icing set at room temperature, at least 2 hours and up to overnight.
