- Heat oven to 425°F or Gas Mark 7 and grease a baking sheet.
- Sift the flour and salt into a bowl and rub in the butter.
- Mix in the sugar and cinnamon.
- Add the treacle or molasses and sufficient milk to make soft dough.
- Turn on to a floured surface and knead gently- the dough should be fairly moist and elastic.
- Roll out to about ½-inch thick, and cut into rounds with a 2½-inch pastry cutter.
- Place on the baking sheet, brush with a little milk and bake for 10-15 minutes until golden in coIour.
- Cool on a wire rack.
- Serve split in half and buttered.
- Store at room temperature in an airtight container.

Treacle tart is a British classic, and Mary Berry shows you how to make it to perfection. This version has a fancy lattice woven top to show off to all your guests. But Mary makes it very easy.

- First make the shortcrust pastry: measure the flour into a large bowl and rub in the butter with your fingertips until the mixture resembles fine breadcrumbs (alternatively, this can be done in a food processor). Add about three tablespoons of cold water and mix to a firm dough, wrap in cling film and chill in the fridge for about 20 minutes.
- Preheat the oven to 200C/400F/Gas 6 and put a heavy baking tray in the oven to heat up. Grease a deep 18cm/7in loose-bottomed fluted flan tin with butter.
- Remove about 150g/5½oz of pastry from the main ball and set aside for the lattice top.
- Roll the rest of the pastry out thinly on a lightly floured work surface and line the prepared flan tin with the pastry.
- Prick the base with a fork, to stop the base rising up during baking.
- Place the reserved pastry for the lattice top on cling film and roll out thinly. Egg wash the pastry and set aside to chill in the fridge (the cling film makes it easier to move about). Do not cut into strips at this stage. Do not egg wash the strips once they are on the tart as it will drip into the treacle mixture.
- To make the filling, heat the syrup gently in a large pan but do not boil.
- Once melted, add the breadcrumbs, lemon juice and zest to the syrup. (You can add less lemon if you would prefer less citrus taste.) If the mixture looks runny, add a few more breadcrumbs. Pour the syrup mixture into the lined tin and level the surface.
- Remove the reserved pastry from the fridge and cut into long strips, 1cm/½in wide. Make sure they are all longer than the edges of the tart tin.
- Egg wash the edge of the pastry in the tin, and start to make the woven laying lattice pattern over the mixture, leave the strips hanging over the edge of the tin.
- Once the lattice is in place, use the tin edge to cut off the strips by pressing down with your hands, creating a neat finish.
- Bake on the pre-heated baking tray in the hot oven for about 10 minutes until the pastry has started to colour, and then reduce the oven temperature to 180C/350F/Gas 4. If at this stage the lattice seems to be getting too dark brown, cover the tart with tin foil.
- Bake for a further 25-30 minutes until the pastry is golden-brown and the filling set. Remove the tart from the oven and leave to firm up in the tin. Serve warm or cold.
BLACK TREACLE SCONES
This is a very old recipe. Serve these flavorful scones warm with butter. They may be a little heavy for modern tastes but you can lighten the texture up by using an egg in place of some of the milk if you like.

- Preheat oven to 425 degrees F (220 degrees C). Lightly grease a baking sheet.
- In a large bowl, sift together flour, baking soda, cream of tarter, salt, cinnamon, allspice, cloves, nutmeg and ginger. Cut in butter with a fork or pastry blender. Combine milk and molasses in a small bowl; stir into flour mixture until moistened. Turn dough out onto a lightly floured surface and knead briefly. Roll dough out into a 1/2 inch thick round. Cut out circles with a medium biscuit cutter and place pieces on prepared baking sheet so that they are barely touching.
- Bake in preheated oven for 10 to 12 minutes. Move to a wire rack to cool slightly before serving. For soft scones, cover with a dry cloth for 10 minutes. For crisp scones, do not cover.

- Sift the flour, baking soda, cream of tartar and sugar into a bowl. Rub in butter until it is in crumb-sized pieces. Make a well in the center and pour in the treacle and milk. Steps:
- Rub the butter or baking spread into the flour and stir in the remaining dry ingredients.
- Measure the treacle into a bowl or jug and add a little milk. Heat in the microwave for 30 seconds or until the treacle has become more liquid.
- Add the egg and beat together
- Add the treacle egg mixture to the dry ingredients with enough milk to make a soft dough
- Pat the dough out onto a floured surface to about 13 mm (1/2 in) thick. Cut into rounds with 63 mm (2 1/2 in) cutter.
- Place the scones on a floured baking tray or line the tray with a non-stick baking mat.
- Brush the tops of the scones with a little milk.
- Bake at 180C (fan oven) 200 C, 400 F for 15-20 minutes

- Preheat oven to 210 degree c.
- Take flour, baking powder, baking soda, cinnamon, salt, currants in a bowl and mix well.
- Take butter, molasses, in a sauce pan and heat gently till it is melted.
- Take it off the heat and cool it down. Add buttermilk and mix well.
- Now add the melted butter mix into the flour and mix gently.
- Spoon the whole mix into the floured surface.
- Flatten it gently.
- Cut into triangles.
- Arrange it in a parchment lined baking pan, brush with butter and sprinkle with some sugar.
- Bake for 15 to 20 mins.
- Remove and brush with more butter.

- 1. Pre-heat oven to 200c/400f.ligth dust a flat baking sheet with flour. Leave the tin of treacle in a bowl of warm water for a few minutes, this will help soften treacle and make it easier to spoon out of tin. Heat the treacle and butter milk in a low heat just slightly warm .
- 2. Mix all dry ingredients together in a bowl. Add sufficient liquid to mix ,to a soft dough then onto a floured surface and lighting knead. Shape into a round circle, place onto the flat baking sheet and make a cross on top of dough with a knife.
- 3. Place into pre-heated oven and bake for about 40 minutes. Treacle bread is a traditional Irish favourite. When baked the bread will have a hallow sound if trapped on the base. cool on wire tray for 5 minutes.
- 4. Then get a clean ,dry tea towel and wrap the treacle bread up in it, this will help to give a softer crust on your bread..
- 5. NOTE= when completely cooled serve with a spread of butter and a cup of tea....:)
