COCONUT JAM SLICE
An easy Coconut Jam Slice made from scratch.

- Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Grease and line an 8-inch square pan with baking or parchment paper, ensuring two sides overhang (this will make it easier to remove the slice later).
- In a large mixing bowl, add sugar, flour and coconut. Whisk to combine. Add melted butter and stir until moist. Mixture should resemble wet sand.
- Place mixture into baking pan and press down to form one even layer. Bake in the oven for 10 minutes or until the crust is slightly golden on the edges. Remove from oven.
- While the base is still warm, spread over jam to form one even layer. In a medium-sized mixing bowl, add egg, sugar and vanilla. Give it a good whisk for 30 seconds or so until combined. Stir through shredded coconut.
- Spread this coconut meringue mixture over the jam. Spread out to form one layer - don't worry too much if it's a bit patchy here and there. Place bake in the oven for another 10-14 minutes or until topping turns golden brown.
- Remove from the oven and leave in pan to cool completely. Cut into small slices and serve fresh.

- Heat oven to 180C/160C fan/gas 4. Line a 20 x 30cm baking tray with baking parchment. In a large bowl, mix the desiccated coconut, sugar, eggs, white chocolate and glacé cherries until combined. Cook for 20 mins until golden brown and set, then cool in the tin before slicing into bars.

COCONUT MERINGUE SLICES

- Heat oven to 160c (325f) gas mark 3.
- Grease and line a tin 28x18cm (11x17inch).
- Cream margarine and sugar, beat in egg yolks, milk and essence.
- Fold in the flour and the salt and spread in the tin.
- Beat egg whites stiffly, fold in sugar and coconut.
- Spread mixture over base and sprinkle with cherries and nuts.
- Bake for about 45 min. Cut into slices when cool.
TRADITIONAL PEPPERMINT SLICE
A perfect 3 layer traditional peppermint slice! You can't go wrong with this all-time family favourite recipe... it's simply the BEST!

- Preheat oven to 170 degrees celsius (fan-forced).
- Line an 18cm x 28cm rectangular slice tin with baking paper and set aside.
- To make the base, sift the self raising flour into a bowl. Add the coconut and brown sugar and stir to combine.
- Add the melted butter and mix well until crumbly and completely combined.
- Press the mixture firmly into the base of the prepared tin and smooth with a spoon.
- Bake for 20 minutes or until lightly golden. Set aside to cool slightly.
- Meanwhile, melt the copha in the microwave. Sift over the icing sugar and add the milk, peppermint extract and green food colouring. Mix until smooth. If the mixture is too thick, add an extra tablespoon of milk and mix through.
- Spread the peppermint mixture over the top of the slightly warm slice base, then place tin into the fridge until completely cold (approximately 2 hours).
- Melt the chocolate and vegetable oil (or coconut oil) in the microwave on 50% power for 3-4 minutes, stirring every 30 seconds with a dry metal spoon.
- Pour the chocolate topping over the peppermint layer and chill for 30 minutes or until set. Cut into squares when the chocolate has hardened but not completely set.
- Preheat oven to 170 degrees celsius (fan-forced).Line an 18cm x 28cm rectangular slice tin with baking paper and set aside.
- Melt the butter in the Thermomix bowl for 3 minutes, Speed 2, 100 degrees.
- Add the self raising flour, coconut and brown sugar and mix for 15 seconds, Reverse, Speed 4. Scrape down the sides of the bowl and repeat for a further 15 seconds or until completely combined (use the spatula to help mix).
- Press the mixture firmly into the base of the prepared tin and smooth with a spoon. Bake for 20 minutes or until lightly golden. Set aside to cool slightly.
- Meanwhile, place the icing sugar into the Thermomix bowl and sift by mixing for 8 seconds, Speed 8. Pour the icing sugar into a separate bowl and set aside.
- Melt the copha in the Thermomix bowl for 4 minutes, 100 degrees, Speed 2. Add the sifted icing sugar, milk, peppermint extract and green food colouring. Mix for 10 seconds, Speed 4. Scrape down the sides of the bowl and repeat 2-3 times or until smooth. Note: If the mixture is too thick, add an extra tablespoon of milk.
- Spread the peppermint mixture over the top of the slightly warm slice base and place into the fridge to cool completely (approximately 2 hours).
- Place the chocolate melts into a clean Thermomix bowl. Grate for 10 seconds, Speed 8. Scrape down the sides of the bowl, add the vegetable oil (or coconut oil) and melt for 4 minutes, 80 degrees, Speed 2.
- Pour the chocolate topping over the peppermint layer and chill for 30 minutes or until set. Cut into squares when the chocolate has hardened but not completely set.

- Preheat oven to 180 degree C, Grease a 9x5 inch loaf pan with oil and dust it with flour and coat it on all sides and tap off the excess flour.
- Take flour in a bowl, add in baking powder, salt and mix well. Set aside.
- Take butter in a bowl, add in sugar, vanilla and beat till creamy and fluffy,
- Add in one egg at a time and whip till creamy.
- Now add in half of the flour mix and the milk and mix gently. Add remaining flour and whip this using a beater till combined.
- Now add in coconut and fold gently.
- Spoon this into the pan and bake for 1 hour or untill a tooth pick inserted comes out clean.
- Remove it from oven and let it cool for 10 mins. now unmould it and cool it completely before slicing.
- Slice and serve with a cup of tea.
CHERRY AND COCONUT CAKE

- Cream the butter or margarine with the sugar
- beat in the eggs and milk with a whisk (electric or hand)
- stir in the coconut and cherries
- fold in the self raising flour until mixture is a nice consistancy (not too runny not too stiff)
- line a loaf tin with greaseproof parchment paper and fill with mixture - sprinkle some more coconut on the top of the mixture
- place in preheated oven of 180 degrees C and cook for about 30 mins....after 30mins place some whole cherries onto the top of the cake and cook for another 10-15 mins...or until once cocktail stick comes out clean

- To make the pastry, measure the flour into a bowl and rub in the butter with your fingertips until the mixture resembles fine breadcrumbs. Add 2-3 tablespoons cold water gradually, mixing to form a soft dough. Preheat the oven to 180°C/fan 160°C/gas 4. Roll the dough out on a lightly floured work surface and use it to line a 30x23cm (12x9in) traybake or roasting tin. Measure all the sponge ingredients into a bowl and beat until well blended.
