1 pound navy beans or Great Northern pea beans
1/2 medium onion, diced
1/2 cup dark brown sugar
1/4 pound bacon square (smoked hog jowls), diced
1/3 cup sorghum
1 tablespoon soy sauce
1 teaspoon Worcestershire sauce
1/2 teaspoon dry mustard
1/2 teaspoon salt

Steps:

  • Preheat oven to 275 degrees. Wash and clean the beans, then place them in a bowl and cover with water. Let soak overnight, adding more water if necessary. Drain the beans and wash again. Put beans in a saucepan, cover with fresh water, and bring to a boil. Boil until the beans are soft, then drain, reserving the broth. Layer the beans, onions, sugar, diced bacon square and all other ingredients in a bean pot or ovenproof dish, adding bean broth to bring beans to desired consistency. Bake uncovered for 5 to 8 hours, stirring occasionally. If beans seem to be getting too brown, put on cover while baking.

1 pound dried navy, pinto or pink beans
2 large onions, diced
12 ounces smoked pork or ham steak, chopped
3 cups chicken stock
1/4 teaspoon cayenne pepper
1/4 cup dark molasses
1/4 cup ketchup
3 tablespoons dark brown sugar, plus more as needed
Salt and pepper

Steps:

  • Soak the beans overnight in water in a large bowl.
  • Preheat the oven to 375 degrees F.
  • Saute the onions and pork over medium heat in a cast iron Dutch oven until the onions are tender, abut 10 minutes. Add the drained beans, pork, chicken stock, cayenne, molasses, ketchup, brown sugar, and salt and pepper to taste and bring to a boil.
  • Cover the casserole and transfer to the oven. Bake to 3 1/2 to 4 hours, until the beans are tender.
  • Serve topped with a sprinkle of brown sugar.

1 pound dried navy beans
1-1/2 teaspoons salt
4 quarts cold water, divided
1 cup chopped red onion
1/2 cup molasses
6 bacon strips, cooked and crumbled
1/4 cup packed brown sugar
1 teaspoon ground mustard
1/4 teaspoon pepper

Steps:

  • In a large saucepan or Dutch oven, bring beans, salt and 2 qt. water to a boil; boil for 2 minutes. Remove from the heat; let stand for 1 hour. Drain beans and discard liquid. Return beans to pan. Cover with remaining water; bring to a boil. Reduce heat; cover and simmer for 1-1/2 to 2 hours or until beans are tender. Drain, reserving liquid. In a greased 2-1/2 qt. baking dish, combine beans, 1 cup liquid, onion, molasses, bacon, brown sugar, mustard and pepper. Cover and bake at 325° for 3 to 3-1/2 hours or until beans are as thick as desired thickness, stirring occasionally. Add more of the reserved cooking liquid if needed.

4 tablespoons vegetable oil
6 slices bacon, diced, such as John Mull's Meat Brand
1 large yellow onion, finely chopped
1 green bell pepper, seeds removed and finely chopped
One 55-ounce can baked beans, such as Bush's Best Original Baked Beans
1/4 cup ketchup
2 tablespoons Coyote Bait Spicy Flavored BBQ Sauce, recipe follows
2 tablespoons light brown sugar
1 tablespoon lemon juice concentrate, such as ReaLemon from concentrate
1 tablespoon mustard
1 cup table salt
1 teaspoon hickory flavored liquid smoke
3/4 cup ground black pepper
3/4 cup granulated sugar
5 tablespoons granulated garlic
5 tablespoons powdered mustard
4 tablespoons granulated onion
4 tablespoons ground paprika
1 tablespoon flavor enhancer seasoning, such as Accent
1 tablespoon ground red pepper
4 tablespoons olive oil
1 large yellow onion, finely chopped
2 tablespoons freshly minced garlic
Two 29-ounce cans tomato puree
2 cups red wine vinegar
2 cups brown sugar
1 cup molasses
1/2 cup hickory flavored liquid smoke
5 tablespoons Coyote Bait Hickory Flavored Campfire Seasoning, recipe above
2 tablespoons crushed red pepper, optional
2 tablespoons lemon juice concentrate, such as ReaLemon from concentrate

Steps:

  • Sprinkle the ground chuck with 1 tablespoon Coyote Bait Hickory Flavored Campfire Seasoning. Refrigerate for 20 minutes.
  • Heat 2 tablespoons of the oil in a large saucepan over medium heat. Cook the ground chuck until fully browned. Remove the ground chuck from the saucepan and strain off the oil.
  • Heat the remaining 2 tablespoons oil in a large saucepan over medium heat. Cook the bacon, stirring constantly with a wooden spoon, until browned. Cook the onions and peppers, about 10 minutes. Add the beans. While stirring constantly, add the ketchup, Coyote Bait Spicy Flavored BBQ sauce, sugar, lemon juice and mustard. Continue stirring, about 10 minutes. Add the ground chuck and remaining 1 tablespoon Coyote Bait Hickory Flavored Campfire Seasoning. Stir constantly, about 15 minutes. Reduce the heat to low and allow the beans to simmer, stirring occasionally, about 20 minutes.
  • Congratulations! Your beans are complete. Take your time, savor the flavor.
  • Combine the salt and liquid smoke with a whisk in a large mixing bowl. Blend until there are no clumps. Add the black pepper, sugar, garlic, mustard, onion, paprika, flavor enhancer seasoning and ground red pepper. Whisk until thoroughly blended. Place the seasoning in a 1-quart storage container with the lid tightly sealed.
  • Heat the oil in a large sauce pan over medium heat. Cook the onions and garlic, stirring occasionally, until the onions become translucent, about 7 minutes. Do not brown or caramelize the onions. Add the tomato puree. While mixing the puree with the onion mixture, stir in the vinegar. Cook, stirring occasionally, about 10 minutes. Fold in the sugar and molasses using a wooden spoon. Stir from the bottom of the sauce pan in an upward motion to prevent the sugar from scorching or sticking to the pan. Cook until the sugar and molasses have liquefied, about 10 minutes. Thoroughly mix in the liquid smoke and Coyote Bait Hickory Flavored Campfire Seasoning. Cook, stirring occasionally, about 15 minutes. Add the crushed red pepper if using and the lemon juice. Reduce to a simmer and stir occasionally, about 15 minutes. The sauce is done when the pigment has darkened and bubbles have formed at the surface.

Steps:

  • Preheat the oven to 350 degrees F.
  • Add the bacon to a large skillet and fry over medium heat until browned, 8 to 10 minutes. Remove the bacon to a paper towel-lined plate and remove all but 4 tablespoons bacon fat from the skillet.
  • Add the beans, ketchup, molasses, brown sugar, dry mustard and onions to an 8-by-8-inch casserole dish. Add in the bacon fat from the skillet. Lay the reserved bacon strips on top of the bean mixture. Bake until heated through, 30 to 45 minutes.
