"My husband is a big meat eater, so when he's out of town, I try to cut back on meat and make this hearty chili," relates Eve Visser of South Bend, Indiana. "It's very quick and easy."

1 can (16 ounces) hot chili beans, undrained
1 can (15 ounces) black beans, rinsed and drained
1 can (14-1/2 ounces) Mexican stewed tomatoes
1 cup frozen corn, thawed
1/2 cup chunky salsa
1/2 cup coarsely chopped green pepper
1/2 cup coarsely chopped sweet red pepper
1 tablespoon ground cumin
2 teaspoons chili powder
4 tablespoons fat-free sour cream
4 tablespoons shredded reduced-fat cheddar cheese

Steps:

  • In a large saucepan, combine the first nine ingredients. Bring to a boil. Reduce heat; cover and simmer for 15 minutes or until vegetables are crisp-tender. Top each serving with sour cream and cheese.

2 tablespoons extra-virgin olive oil
1 medium yellow onion, diced medium
4 garlic cloves, roughly chopped
1 1/2 teaspoons ground cumin
1 teaspoon chipotle chile powder
Coarse salt and ground pepper
1 medium zucchini, cut into 1/2-inch dice
3/4 cup (6 ounces) tomato paste
1 can (15.5 ounces) black beans, rinsed and drained
1 can (15.5 ounces) pinto beans, rinsed and drained
1 can (14.5 ounces) diced tomatoes with green chiles
1 can (14.5 ounces) diced tomatoes

Steps:

  • In a large pot, heat oil over medium-high. Add onion and garlic; cook, stirring frequently, until onion is translucent and garlic is soft, about 4 minutes. Add cumin and chile powder, season with salt and pepper, and cook until spices are fragrant, 1 minute. Add zucchini and tomato paste; cook, stirring frequently, until tomato paste is deep brick red, 3 minutes. Stir in black beans, pinto beans, and both cans diced tomatoes. Add 2 cups water and bring mixture to a boil. Reduce to a medium simmer and cook until zucchini is tender and liquid reduces slightly, 20 minutes. Season with salt and pepper.

1 can black beans
1 can chickpeas
1 c. frozen corn kernels
1 jar smooth chipotle or roja salsa
1 can tomato sauce
2 tbsp. unsweetened cocoa
2 tbsp. salt-free chili powder
2 tsp. ground cumin
1/2 c. fresh cilantro
Sour cream, shredded cheese and toasted pumpkin seeds, for serving

Steps:

  • In a 3- to 4-qt slow cooker, combine the onion, pepper, garlic, beans, chickpeas, corn, salsa, tomato sauce, cocoa chili, chili powder, cumin and 3/4 cup water.
  • Cook, covered, until vegetables are tender and flavors are blended, 6 to 8 hours on low or 4 to 5 hours on high.
  • Stir in the cilantro and serve with sour cream, cheese and toasted pumpkin seeds, if desired.

Number Of Ingredients 13

1 1/2 lbs ground beef
1/2 lb ground pork
1 onion, diced
1/2 cup chili sauce
1/2 cup corn flake crumbs
2 eggs, slightly beaten
1/4 cup milk
1 tablespoon fresh minced garlic (or use 1-1/2 teaspoons garlic powder)
3 tablespoons Worcestershire sauce
1 tablespoon garlic plus seasoning
4 tablespoons apple cider vinegar
2 -4 tablespoons brown sugar, packed firm (to taste)
1/2 cup ketchup

Steps:

  • Set oven to 350°F.
  • Prepare a 9 x 5-inch baking pan and a baking sheet covered with foil to place underneath to catch any drippings.
  • In small mixing bowl add the eggs, milk, garlic, Worcestershire sauce & Garlic Plus seasoning, stirring constantly until blended well.
  • Using a large mixing bowl, dump in the mixed ingredients from the small bowl and add the diced onion, corn flake crumbs and chili sauce, mixing well.
  • The apple cider vinegar, brown sugar and ketchup are for the sauce. DON'T mix them in with meatloaf.
  • Last, using clean hands mix the beef and pork into the bowl, continuing until all ingredients are well combined.
  • Pack the mixture into prepared pan.
  • Place the pan on a foil-lined baking sheet to catch any spills.
  • Bake for 1 hour.
  • While baking, mix together the apple cider vinegar, brown sugar and ketchup for the sauce.
  • After the 1 hour of baking, remove the meat loaf (at this point you can carefully drain off some of the fat if desired) and spread the sauce over the top.
  • Place back in the oven and bake for another 20-30 minutes, or until the meat loaf is pulling away from the sides of the pan. (Meatloaf should be 140°F at centre.).
  • Enjoy!

1 (8 ounce) can tomato sauce
3/4 cup water
2 tablespoons cocoa, chili spice blend or 2 tablespoons unsweetened cocoa
2 tablespoons salt free chili powder
2 teaspoons ground cumin
1/3 cup chopped cilantro

Steps:

  • In 3 quart slow cooker mix all ingredients except cilantro. Cover and cook on low for 6 to 8 hours or until vegetables are tender and the flavors have combined.
  • Stir in cilantro. Top with sour cream, cheese, or toasted pumpkin seeds.

  • To a 6-quart or large Instant Pot, add the olive oil. Turn to SAUTE and let the oil heat. Once the oil is hot, add the onion and cook until beginning to soften, about 3 minutes. Add the sweet potatoes, bell pepper, garlic, chili powder, chipotle chili powder, cumin, and kosher salt. Cook for 1 to 2 additional minutes, until the garlic is fragrant.
  • Add half of the vegetable broth and stir, scraping up any stuck-on bits of food (this will prevent a burn warning). Stir in the remaining broth and the quinoa. Pour the tomato sauce on top (do not stir again).
  • Cover and seal the Instant Pot. Cook on manual (HIGH) pressure for 8 minutes. Immediately release the pressure. Carefully open the Instant Pot.
  • Turn the Instant Pot to OFF. Stir in the black beans, kidney beans, and sugar. Place the lid back on top and let stand 10 minutes to thicken. Uncover. Taste and adjust seasoning as desired. Serve hot, with any and all the toppings!
