RED PEPPER QUICHE



Red Pepper Quiche image

Number Of Ingredients 16

1 refrigerated pie crust (from a 15-ounce package)
2 teaspoons olive oil
3 green onions, chopped (about 1/4 cup)
1 cup chopped cooked ham
1 clove garlic, minced
1 cup half-and-half (or whole milk)
2 tablespoons Dijon mustard
1 teaspoon soy sauce
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground pepper
2 large eggs plus 1 white
2 tablespoons chopped jarred roasted red peppers, rinsed and drained
1 tablespoon chopped fresh oregano
1 tablespoon chopped fresh basil
1 1/2 cups grated Swiss cheese
1/2 cup plus 2 tablespoons grated Parmesan cheese

Steps:

  • Preheat the oven to 425 degrees F.
  • Fit the piecrust into a 9-inch deep-dish pie plate according to the package directions; fold edges under and crimp. Prick bottom and sides of the pie crust with a fork.
  • Line the pastry with aluminum foil and fill with pie weights or dried beans. Bake for 7 minutes. Remove the weights and foil and bake until the bottom is golden brown, 3 to 4 more minutes. Reduce the oven temperature to 400 degrees F.
  • While the pie crust is cooking, heat the oil in a medium skillet over medium-high heat. Add the green onions and cook 2 minutes, stirring occasionally, or until tender. Stir in the ham and garlic and cook 1 minute longer until the garlic is fragrant. Let cool slightly.
  • Whisk together the half-and-half, Dijon mustard, soy sauce, salt, pepper, whole eggs and egg white in a medium mixing bowl. Then add the roasted red peppers, oregano and basil.
  • Sprinkle the Swiss cheese over the bottom of the pastry shell. Top with 1/2 cup of the Parmesan cheese and the ham mixture. Pour the egg mixture over the top. Sprinkle with the remaining 2 tablespoons Parmesan cheese.
  • Bake until the center is set, 35 to 40 minutes, shielding the crust with aluminum foil, if necessary. Transfer to a wire rack and let cool for 10 minutes before serving.
  • Tip: If your quiche isn't quite done but you're in a pinch to get it on the table, just stick it in the microwave for 60 seconds. This will help the eggs to set up.

COUNTY FAIR ORANGE CAKE

Nonstick cooking spray
All-purpose flour
1 (15.25-ounce) package yellow cake mix
1 (3.5-ounce) package lemon instant pudding mix
3/4 cup orange juice
1/2 cup vegetable oil
4 large eggs
2 teaspoons lemon zest
Orange Glaze (recipe follows)
1/2 cup sugar
1/3 cup orange juice
1/4 cup butter
1 teaspoon orange zest plus more for garnishing

Steps:

  • Preheat the oven to 350 degrees F. Spray a 10-inch Bundt pan with nonstick cooking spray and lightly dust with all-purpose flour.
  • Stir the cake and pudding mixes in a large bowl. Add the orange juice, oil, eggs and zest; beat on low with a mixer at low speed to combine. Scrape down sides. Beat at medium for 4 minutes.
  • Pour the batter into the prepared pan. Bake 45 minutes or until a toothpick inserted in the center comes out clean. Cool in the pan on a wire rack 15 minutes; remove from pan to wire rack. Cool completely, about 1 hour. Transfer to a platter and poke holes all over with a skewer. Pour warm Orange Glaze over the cake. Garnish with more orange zest for serving.
  • For the Orange Glaze: Cook the sugar, orange juice, and butter in a saucepan over medium, stirring, until the butter is melted. Cook 2 more minutes and remove from the heat; stir in the orange zest.
  • Tip: You can also make this in 2 (9-x-5-inch) loaf pans. Bake for the same amount of time.

3 tablespoons extra-virgin olive oil
1/2 medium onion, finely chopped
1/2 red bell pepper, seeded and chopped
1/4 medium jalapeño pepper, seeded and chopped (optional)
1 garlic clove, chopped
1 1/2 cups long-grain white rice
1 cup frozen corn, thawed
1 teaspoon ground cumin
Kosher salt and freshly ground black pepper
2 1/4 cups chicken stock
1/4 cup chopped fresh cilantro
1 tomato, seeded and diced

Steps:

  • Heat the oil in a heavy, large saucepan over medium-high heat. Add the onion, red peppers and jalapeño and cook, stirring often, until soft and translucent, about 4 minutes. Add the garlic and cook until fragrant, 1 minute, being careful not to let it burn.
  • Add the rice and corn and saute 1 minute, stirring constantly to toast the rice and coat with oil. Sprinkle with the cumin and 1 teaspoon each salt and pepper. Pour in the chicken stock, raise the heat to high and bring to a boil. Reduce the heat to low, cover and cook until the rice is tender, 12 to 15 minutes.
  • Fluff the rice with a fork and carefully fold in the cilantro and diced tomatoes. Season with additional salt and pepper to taste.
