MARTINA MCBRIDE'S NO-BAKE PEANUT BUTTER-CHOCOLATE COOKIES

Steps:
- Line 2 baking sheets with waxed or parchment paper.
- Melt the Country Crock® Spread in a 3 1/2-quart saucepan over medium heat. Stir in the sugar and milk; bring to a full rolling boil. Boil vigorously for 2 minutes.
- Remove from heat and immediately stir in the peanut butter, vanilla, and oats, stirring to combine. Add chocolate, stirring just until combined.
- Drop the dough into mounds by rounded tablespoonfuls onto the prepared baking sheets. Do not flatten. Let the cookies stand for 30 minutes, or until set.

PEANUT BUTTER INCREDIBLES

Steps:
- Grease a 13-by-9-inch baking dish with butter.
- Melt the butter in a medium saucepan over low heat. Stir in the peanut butter until smooth. Add the sugar, then the graham cracker crumbs, and stir well to blend. Press the mixture over the bottom of the prepared baking dish.
- Melt the butterscotch chips and chocolate chips in separate bowls in the microwave on high in 30-second increments, stirring each time, until the mixtures are melted and smooth, about 2 1/2 minutes total. Pour the melted chocolate over the crust and spread evenly. Dollop the melted butterscotch evenly over the chocolate and drag a butter knife or skewer through it to make a marbled effect. Refrigerate until the topping has set, 20 minutes. Slice into bars and store at room temperature.
NO-BAKE PEANUT BUTTER-CHOCOLATE COOKIES
Steps:

- Drop the dough by rounded tablespoonfuls on the prepared baking sheets. Let the cookies stand until set, about 30 minutes.
MARTIAN COOKIES (ZUCCHINI & LOTS OF OTHER STUFF!)
I found these online many years ago. I think they are called martian cookies because of the green zucchini flecks. My husband loves them and has asked for them repeatedly, but I had lost the recipe. I haven't made them in awhile and therefore the serving size is approximate.

Steps:
- Preheat the oven to 350.
- Beat the butter until soft.
- Add the sugar and beat until fluffy.
- Add the eggs& vanilla and beat it all well.
- In another bowl mix the flour, cinnamon, baking soda and salt.
- Using a mixer on low add the flour mixture to the butter mixture.
- Beat until blended.
- Use a spoon to add the rest of the ingredients.
- Drop onto an ungreased cookie sheet and bake for 10-12 minutes or until they are brown.

MARTINA COOKIES
Perfect little shortbread cookies. Dip them in chocolate and top with nuts, coconut, and crushed candy canes. Not too sweet and a great Christmas cookie! Freezes well and dough can be made a day or two ahead. These are good plain, or you can melt some chocolate chips (milk, semi-sweet, or white) and dip one end of the cookie. You can then dip the chocolate end in chopped nuts, crushed candy canes, coconut, jimmies, or decorating sugar. Or, add a little grated orange peel or chopped candied ginger to the chocolate when you melt it for another great flavor. Place on waxed paper to harden.
