This recipe was handed down to me by my mother. It's so easy to make and always gets compliments. I like topping the nutty meringues with strawberries at Christmas, and I use peaches during the summer. -Ginger Clark of Hinesville, Georgia

4 egg whites
1/4 teaspoon cream of tartar
1 cup plus 1 tablespoon sugar, divided
1 cup finely chopped pecans
1/2 cup crushed saltines (about 12 crackers)
1 teaspoon vanilla extract
6 cups sliced fresh strawberries
2/3 cup reduced-fat whipped topping

Steps:

  • In a large bowl, beat egg whites and cream of tartar on medium speed until soft peaks form. Gradually beat in 1 cup sugar, 2 tablespoons at a time, on high until stiff glossy peaks form and sugar is dissolved., Fold in nuts, crackers and vanilla. Drop by rounded 1/3 cupfuls onto parchment-lined baking sheets. Shape into 3-1/2-in. rounds with the back of a spoon., Bake at 300° for 25-30 minutes or until set. Turn oven off; leave in oven with door closed for 2 hours. Toss strawberries with the remaining sugar; spoon 2/3 cup into each shell. Dollop each with whipped topping.

All-purpose flour, for surface
1/2 recipe Pate Sucree for Walnut Pie
4 large eggs
1 cup sugar
1 cup corn syrup
1 teaspoon pure vanilla extract
1/2 teaspoon salt
4 ounces walnuts, toasted and chopped (1 1/4 cups)
Whipped Cream, for serving

Steps:

  • Preheat oven to 325 degrees. On a lightly floured surface, roll pate sucree into an 11-inch round, about 1/8 inch thick. Fit into a 9-inch pie dish. Trim edges, leaving a 1-inch overhang. Tuck overhang under dough so edges are flush with rim, and crimp edges. Lightly pierce bottom of dough with a fork. Freeze until firm, about 15 minutes.
  • Stir eggs, sugar, corn syrup, vanilla, and salt in a medium bowl until well combined. Stir in walnuts, and spread mixture evenly over dough in dish.
  • Bake, rotating halfway through, until filling is just set in the center and crust is golden brown, about 1 hour and 10 minutes. Let cool completely in pie dish on a wire rack. Serve with whipped cream.

2 cups sifted cake flour, or 1 2/3 cups all-purpose flour, sifted ((7 ounces/200 grams))
1 tsp baking powder
1/2 tsp ground cinnamon
1/2 tsp ground cloves
1/4 tsp ground nutmeg
1/2 tsp salt
1 cup unsalted butter, softened (65 to 67°F) ((2 sticks/8 ounces/225 grams))
1 1/3 cups granulated sugar, or 2/3 cup granulated sugar and 2/3 cup packed light brown sugar ((9.25 ounces/265 grams))
4 large eggs, lightly beaten ((¾ cup/7 ounces/200 grams))
1/4 cup heavy cream or milk ((2.125 ounces/60 grams))
2 tbsp brandy or sweet wine ((such as Port))
2 tsp vanilla extract or rosewater
1 1/2 cups coarsely chopped raisins ((8 ounces/225 grams) )
1 1/2 cups dried currants ((8 ounces/225 grams))

Steps:

  • Position a rack in the center of the oven. Preheat the oven to 325°F. Grease a 9- by 5-inch loaf pan, 9-inch springform pan, 9-inch (9-cup) tube or Bundt pan, or four 5- by 3-inch (2-cup) loaf pans, line the bottom and sides with parchment paper, and grease again.
  • Sift together the flour, baking powder, spices, and salt.
  • In a large bowl, beat the butter on low speed until smooth, about 2 minutes. Increase the speed to medium, gradually add the sugar, and beat until light and fluffy, about 4 minutes.
  • Gradually add the eggs, beating well after each addition. Total time for beating in the eggs is about 4 minutes.
  • Add the cream, brandy, and vanilla.
  • In 3 additions, fold in the flour mixture.
  • Stir in the raisins and currants.
  • Pour into the prepared pan, smoothing the top. Bake until a tester inserted in the center comes out clean, about 1¼ hours for a large loaf pan or springform pan; 1 hour and 5 minutes for a tube pan; or 40 minutes for the small loaf pans.
  • Let cool in the pan for 10 minutes, then remove the cake to a wire rack and let cool completely, at least 1½ hours. Wrap tightly in plastic, then foil. Store at room temperature for up to 5 days or in the freezer for up to 2 months. Use a serrated knife to cut the cake into slices.

1/4 cup corn syrup
1 tablespoon sugar
1 tablespoon margarine or 1 tablespoon butter
3 cups kelloggs COCOA KRISPIES® cereal
1 (8 ounce) package cream cheese, softened
1 1/3 cups sweetened condensed milk
1/3 cup lemon juice
1 teaspoon vanilla flavoring
1 (32 ounce) can prepared cherry pie filling

Steps:

  • Combine corn syrup, sugar and margarine in 2 quart saucepan.
  • Cook over low heat, stirring occasionally until mixture begins to bubble.
  • Remove from heat.
  • Add Cocoa Krispies; stir until well coated.
  • Press mixture evenly and firmly around sides and in bottom of buttered 9 inch pie pan to form crust.
  • Chill.
  • Place cream cheese in mixing bowl; beat until fluffy.
  • Gradually add sweetened condensed milk; mix thoroughly.
  • Stir in lemon juice and vanilla.
  • Pour into chilled pie crust.
  • Refrigerate 1 hour; spread cherry pie filling evenly over cream cheese filling.
  • Return to refrigerator about 1 hour or until thoroughly chilled.
  • Cut into wedges to serve.

  • 1. Combine corn syrup, sugar, and butter in 2-quart saucepan. Cook over low heat, stirring occasionally, until mixture begins to bubble. Remove from heat. Add Kellogg's Rice Krispies® cereal. Stir until well coated. Press mixture evenly and firmly around sides and in bottom of buttered 9-inch pie pan to form crust. Chill. Place cream cheese in mixing bowl; beat until fluffy. 2 eggs, lightly beaten
1 teaspoon vanilla extract
1 tablespoon unsweetened cocoa powder
2 teaspoons baking powder
1 cup milk
2 cups all-purpose flour
¾ cup golden raisins
1 cup chopped walnuts
2 (9 inch) unbaked pie crusts
1 cup confectioners' sugar
½ teaspoon vanilla extract
4 tablespoons milk

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • To Make Filling: Mix butter, sugar, eggs, vanilla, cocoa and baking powder together until smooth; alternately mix in the milk and flour. Stir in raisins and walnuts.
  • Pour mixture into pastry shells and bake at 375 degrees F (190 degrees C) for 60 to 70 minutes. Do not underbake.
  • To Make Icing: Combine confectioners' sugar and vanilla. Gradually stir in milk until desired consistency is reached.
  • Spread icing on pie once its out of the oven and still warm.
