HAM AND CHEESE STRATA
This hearty make-ahead breakfast is infused with Dijon mustard and bakes up to a fluffy, golden finish.

Steps:
- Butter a 2 1/2- to 3-quart baking dish. In a large bowl, whisk together the eggs, milk, mustard, paprika, and salt.
- Place half of the bread in the bottom of a baking dish. Top with half each of the ham, scallions, and cheese. Repeat with a second layer of the remaining ham, scallions, and cheese, pressing down as necessary to fit in the baking pan.
- Carefully pour the egg mixture over into the bread. Cover and refrigerate overnight.
- Preheat the oven to 350 degrees Fahrenheit. Pull strata out of fridge and let come to room temperature for 15 minutes. Bake the strata, uncovered, until puffed and lightly golden brown, about 1 hour to 1 hour and 20 minutes. Let rest for 5 minutes before serving.
ENGLISH MUFFIN BREAKFAST STRATA
We had this breakfast casserole at a bed and breakfast in Branson, MO (Anchor Inn on the Lake) and absolutely loved it. I don't like breakfast casseroles that are too dry or too eggy and this one is perfect!

Steps:
- Heat a large skillet over medium-high heat and stir in sausage. Cook and stir until sausage is crumbly, evenly browned, and no longer pink, about 10 minutes. Drain and discard any excess grease.
- Lightly grease a 9x13-inch baking dish.
- Spread butter on the inside of each English muffin half. Arrange buttered English muffins in the prepared baking dish; top with half the sausage, half the Cheddar cheese, and half the mozzarella cheese.
- Whisk eggs, sour cream, and green chilies together in a large bowl; pour evenly over sausage and cheese layer. Top with remaining sausage, Cheddar cheese, and mozzarella cheese. Cover and chill for 8 hours.
- Preheat oven to 350 degrees F (175 degrees C).
- Bake strata in the preheated oven until lightly browned and set in the middle, about 35 minutes. Let stand for 10 minutes before serving.

- Prepare 9x13 baking dish with cooking spray and set aside. In the dish, alternately arrange muffin halves and meat, overlapping slightly. Sprinkle with cheddar and Parmesan cheeses. Set aside. In a large bowl: whisk together eggs, egg whites, milk, sour cream and pepper until combined. Pour over muffin, ham and cheese layers. Cover entire dish tightly with plastic wrap. Refrigerate at least 2 hours and up to overnight. Preheat oven to 350 degrees fahrenheit. Bake strata, uncovered, until puffed and set in the center, approximately 60-80 minutes. If strata begins to brown before puffing up, cover loosely with foil to prevent burning. Let stand 10 minutes before cutting and serving.
MULTIGRAIN ENGLISH MUFFINS
These English muffins are made with a mix of whole-wheat and white flours, along with rolled oats and a sprinkling of flaxseed and caraway seeds. Low-fat buttermilk gives the muffins a slight tang and a light texture. But unlike whole-milk dairy products, it contains very little saturated fat.

- Combine warm water, honey, yeast, and butter in a bowl. Let stand for 5 minutes, until foamy.
- Combine flours, oats, wheat germ, salt, and flaxseed, and caraway seeds if desired, in a large bowl. Add yeast mixture and buttermilk, and mix with your hands until flours are almost fully incorporated. Turn out mixture onto a clean surface, and knead until smooth, about 3 minutes.
- Lightly coat a large mixing bowl with cooking spray, and place dough in bowl. Cover with plastic, and let rise in a warm, draft-free spot until doubled in size, about 1 hour.
- Turn out dough onto a lightly floured surface, knead for about 1 1/2 minutes, and roll to 1/2-inch thickness. Using a 3-inch round cutter, cut out rounds. Roll and cut scraps once. Line a rimmed baking sheet with parchment, and dust with cornmeal. Place rounds on sheet, cover with plastic, and let rise in a warm, draft-free spot until puffy, about 20 minutes.
- Heat a large griddle or 12-inch skillet over low heat. Working in batches, place rounds 1 1/2 inches apart. Cook until golden brown and dry, about 7 minutes per side. Let cool for 30 minutes; split with a fork. Toast, and serve with butter and preserves if desired.

CANADIAN-BACON STRATA
This savory breakfast pudding looks a little like a pizza when it comes out of the oven. It can be prepared the night before through step 2 and baked the next morning.

- Butter a 2-quart shallow baking dish (oval or square); set aside. In dish, alternately arrange, cut side down, muffin halves and Canadian bacon. Sprinkle with cheddar and Parmesan cheeses. Set aside.
- In a large bowl, whisk together eggs, milk, mustard, 1/2 teaspoon salt, a pinch of pepper, and hot sauce until combined. Pour over muffins and bacon; cover tightly with plastic wrap. Refrigerate at least 2 hours and up to overnight.
- Preheat oven to 350 degrees. Place baking dish on a rimmed baking sheet; remove plastic wrap. Bake until puffed and set in the center (see note below), about 1 hour and 30 minutes. (Tent loosely with foil if strata starts to brown too quickly.) Let stand 10 minutes before cutting and serving.

- Preheat oven to 325°F.
- Separate the eggs.
- Tear muffins in to bite-size pieces.
- Place half bottom of an 8" square baking dish coated with cooking spray.
- Scatter ham over top. Sprinkle with half the cheese.
- Sprinkle remaining muffin pieces over cheese.
- Top with remaining cheese.
- In a medium bowl, whisk together milk, egg yolks and chives and parsley(your amount preference) to egg yolks.
- Beat egg whites to fluffy.
- Fold in egg white mixture with milk-yolks-herbs mixture.
- Pour mixture over all in pan.
- Cover and refrigerate 8 hours or overnight. Uncover and bake for 1 hour or until a knife inserted in center comes clean.
- Let stand 15 minutes.
- Sprinkle with more chopped herbs, if desired,.
