ENDIVE SLAW



Endive Slaw image

Tarragon leaves and pomegranate seeds add distinction to this tangy slaw.

Number Of Ingredients 7

1 1/2 tablespoons champagne vinegar
3 tablespoons extra-virgin olive oil
Salt and freshly ground pepper
3/4 pound endive, trimmed
1 red bell pepper, cored and trimmed
20 fresh tarragon leaves
1/3 cup fresh pomegranate seeds (about half a pomegranate)

Steps:

  • In a small bowl, whisk together the vinegar and olive oil until smooth. Add salt and pepper to taste. Set aside.
  • Cut endive lengthwise into 1/8- to 1/4-inch-wide pieces. Transfer to a medium bowl. Cut pepper lengthwise into 1/8-inch-wide pieces. Transfer to bowl with endive. Just before serving, toss endive mixture with reserved vinaigrette. Top with tarragon and pomegranate seeds.

ENDIVE SALAD

Colorful endive leaves are drizzled with an easy, no-cook dressing.

3 green endives
3 red endives
1 lemon, juiced (about 3 tablespoons)
3 tablespoons extra-virgin olive oil
1/2 teaspoon coarse salt

Steps:

  • Trim ends of endives. Halve endives lengthwise and thinly slice lengthwise. Toss in salad bowl with lemon juice, olive oil and salt. Salad can be made a few hours ahead and kept chilled in the fridge until ready to serve.

ENDIVE AND APPLE SALAD



Endive and Apple Salad image

The ingredients for this cool, crisp salad are available all winter long. The anchovies may be omitted, if desired.

Number Of Ingredients 9

3 canned anchovy fillets, rinsed
1/2 teaspoon Dijon mustard
1 tablespoon plus 3/4 teaspoon lemon juice
Freshly ground pepper
2 tablespoons extra-virgin olive oil
3 stalks celery
1 Granny Smith apple
2 heads Belgian endive, leaves separated
Salt

Steps:

  • Chop anchovies and place in a bowl with mustard. Add 1 tablespoon of the lemon juice and pepper to taste, and mix well. Slowly whisk in the olive oil. The dressing can be made a day ahead of time.
  • Peel the celery to remove the strings. Cut each stalk into thirds and julienne. Set aside. Quarter and core the apple, but do not peel. Thinly slice each quarter and place in a serving bowl. Sprinkle remaining 3/4 teaspoon lemon juice over apples and toss to coat.
  • Julienne endive leaves. Add celery and endive to the apples and toss with dressing. Season to taste with salt and pepper. Serve immediately.

RADICCHIO AND ENDIVE SLAW

1 head radicchio
2 heads Belgian endive
2 tablespoons red-wine vinegar
2 tablespoons extra-virgin olive oil
1 tablespoon honey
Coarse salt and freshly ground pepper

Steps:

  • Halve and core radicchio, and thinly slice lengthwise. Trim off the ends of the endives; halve crosswise, and thinly slice lengthwise.
  • In a large bowl, whisk together vinegar, oil, and honey; season with salt and pepper. Add radicchio and endive; toss to coat, and serve.

SIMPLE COLESLAW

6 cups shredded cabbage (from about 1/2 head), a mix of red and green, if desired
2 cups julienned carrots (from about 4 medium carrots)
2/3 cup mayonnaise
2 tablespoons Dijon mustard
2 tablespoons white-wine vinegar
Coarse salt and freshly ground pepper

Steps:

  • In a bowl, toss together cabbage, carrots, mayonnaise, mustard, and vinegar. Season with salt and pepper. Refrigerate until ready to serve, up to 1 day.

1/4 head (about 1 pound) green cabbage
2 carrots
1/3 cup mayonnaise
1/3 cup sour cream
1 tablespoon cider vinegar
1 tablespoon sugar
1/2 teaspoon celery seed
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Shred cabbage with a sharp knife. Grate carrots; combine with cabbage in a large bowl.
  • In a small bowl, whisk together mayonnaise, sour cream, vinegar, sugar, celery seed, salt, and pepper. Add dressing to cabbage mixture, and toss to combine. Serve immediately, or store in the refrigerator for up to 2 days.

SHAVED FENNEL, ZUCCHINI, AND CELERY SALAD

1 bulb fennel, very thinly sliced (about 3 cups)
1 small zucchini, halved lengthwise, then thinly sliced crosswise (about 1 1/2 cups)
1/2 cup extra-virgin olive oil
1/4 cup white-wine vinegar
1 can (15.5 ounces) butter beans, drained and rinsed
Coarse salt and freshly ground pepper
1/2 cup almonds, toasted and coarsely chopped

  • Combine celery, fennel, zucchini, oil, vinegar, and beans in a bowl. Season with salt and pepper. Refrigerate 1 hour.

1 tablespoon sugar
1 teaspoon coarse salt
1/2 cup mayonnaise
1/4 cup sour cream
1 small green cabbage, (about 1 3/4 pounds), finely shredded
2 medium carrots, cut into 1/8-inch-thick matchsticks or coarsely grated
1 small onion, coarsely grated (optional)

Steps:

  • Whisk together mustard, vinegar, lemon juice, sugar, salt, mayonnaise, and sour cream in a small bowl. Refrigerate dressing, covered, until ready to use, or up to 2 days.
  • Put cabbage, carrots, and onion (if desired) in a large bowl. Pour in dressing, and toss thoroughly. Refrigerate, covered, until slaw begins to soften, 1 to 2 hours. If not using immediately, refrigerate, covered, up to 2 days. Just before serving, toss coleslaw again.
