Who knew a 2 ingredient smoothie could be so delicious. I found it a little too thick to blend and added a bit of water, but otherwise this is terrific. Recipe courtesy of Martha Stewart Living. Serving size is estimated.

1/2 cup low-fat plain yogurt or 1/2 cup nonfat plain yogurt
2 cups cantaloupe, chopped (about a 1 1/2 lb cantaloupe)

Steps:

  • Combine yogurt and cantaloupe in a blender.
  • Blend until smooth.
  • Chill in an airtight container and use within 1 day.

MELON AND CUCUMBER SALAD

Puree any leftover melon from this Melon and Cucumber Salad in a blender with plain yogurt and honey to taste. For three cups of chopped melon, use two cups of yogurt and two to three tablespoons of honey. Serve over ice for a delicious summertime treat.

1/2 each golden watermelon, cantaloupe, canary melon, and Honey Kiss or Sugar Kiss melon, peeled, seeded, and cut into 1/4-inch slices
1/2 English cucumber, peeled and thinly sliced
Flaky sea salt, such as Maldon, and freshly ground pepper
Extra-virgin olive oil
Fresh mint leaves, for serving

Steps:

  • Arrange melons and cucumber on a platter; season with salt and pepper. Drizzle with oil. Just before serving, sprinkle with mint.

HONEYDEW COCKTAIL

A cocktail worthy of Fred Astaire -- honeydew, lime juice, mint, and vodka, whirred in a blender and poured over crushed ice.

1 large honeydew melon, seeds and rind removed, cut into large chunks
1/4 cup fresh lime juice
6 mint leaves
1/4 cup superfine sugar
1/2 cup vodka, (optional)
1 cup crushed ice

Steps:

  • Place melon, lime juice, mint, sugar, and vodka in a bar blender. Blend until smooth, about 45 seconds. Pour through a cheesecloth-lined strainer into a pitcher.
  • Place ice in 12-ounce glasses; pour liquid over ice. Swizzle and serve.

5 cups cubed seedless watermelon (about 1 1/2 pounds)
1 large English cucumber, peeled and cut into chunks
1/4 cup fresh lime juice (from 2 limes)
2 tablespoons honey
2/3 cup vodka
Ice
Cucumber slices, for garnish

Steps:

  • Set a large fine-mesh sieve over a large bowl or pitcher. In a food processor or blender, puree watermelon. Pour watermelon puree through sieve, pressing on solids with a rubber spatula (you should have about 2 cups juice). Puree English cucumber and pour through sieve into watermelon juice.
  • In a small bowl or measuring cup, stir together lime juice and honey. Add to watermelon and cucumber juices, along with vodka. Adjust sweetness with more honey if desired. To serve, fill four glasses with ice and top each with cocktail. Garnish with cucumber slices.
