MARSHMALLOW CANDY SNOWMEN

These marshmallow snowmen are the perfect Christmas project for kids. They are quick, easy, and so cute.

4 ounces white candy coating
36 large marshmallows
3/4 ounce (21 grams) fruit leather (such as Fruit by the Foot, Fruit Roll-Ups)
1 gummy orange slice, or other soft orange candy
12 pretzel sticks
4 ounces chocolate candy coating
12 mini peanut butter cups

Steps:

  • Gather the ingredients.
  • Melt the white candy coating in a microwave-safe bowl. Once melted and smooth, glue 3 marshmallows together by spreading a dab of melted coating between them. Repeat until you have 12 snowmen, each made up of 3 marshmallows.
  • Place the snowmen on a baking sheet and refrigerate briefly to set the coating.
  • Carefully push a skewer into each snowman, making sure the skewer's tip stays hidden inside the marshmallow.
  • To make each snowman's scarf, slice the Fruit by the Foot into a narrow strip about 4 to 5 inches long and wrap it around the snowman's neck. A dab of candy coating will secure the scarf.
  • To make the nose, cut the gummy orange slice into small triangles and glue a triangle into the middle of each snowman's head with a drop of candy coating.
  • To make the arms, cut the pretzel sticks in half and dip the ends in the melted coating. Push the 2 pretzel pieces into opposite sides of each snowman's middle section.
  • Melt the chocolate candy coating in a microwave-safe bowl. Using a toothpick (or an extra skewer), draw each snowman's eyes, mouth, and buttons with candy coating. Chill all of the snowmen in the refrigerator.
  • Line a baking sheet with wax paper or parchment paper. To make each snowman's hat, drop a teaspoon of chocolate candy coating onto the baking sheet, then tap the sheet against the counter; the coating should spread into an even disc, about 1 inch in diameter.
  • Press 1 peanut butter cup upside down onto each chocolate disc, then chill in the refrigerator until set.
  • Remove the snowmen and hats from the refrigerator. To finish your snowmen, dab chocolate coating onto the bottom of each hat, then press it firmly onto a snowman's head.
  • Once the candy coating has set, your snowmen are ready to serve and eat.

18 white marshmallows
250g ready-to-roll white fondant icing
18 strawberry laces
250g icing made from royal icing sugar
6 Pontefract cakes
black writing icing
3 round black Liquorice Allsorts , halved
6 orange Tic Tacs
18 mini chocolate beans
24 mini white marshmallows
mini candy canes or pretzel sticks
roughly crushed sugar cube
6 lolly or cake pop sticks

Steps:

  • Take one cake pop stick and thread on a marshmallow, narrow end on first. Thread on a second marshmallow, wide end on first so the the two wide ends meet in the middle. Thread a third marshmallow on sideways so the narrow round end makes the snowman's face.
  • Knead the white fondant icing and divide into 6. Shape each one into a rough mound and stick the snowmen into these bases.
  • Take three strawberry laces and twist together. Tie around a snowman's neck and then trim off the excess with scissors. Repeat for the other snowmen.
  • Using a little royal icing stick a Pontefract cake on each head. Using a little black writing icing, stick a Liquorice Allsort on top of each Pontefract cake.
  • Pipe on two eyes using black writing icing. Using royal icing, stick a Tic Tac on each face for a carrot nose. Stick mini chocolate beans on the bodies as buttons.
  • Using royal icing, stick four mini marshmallows on each snowman to represent arms. Stick a candy cane or pretzel stick to the end of one of each of the snowmen's arms, attaching the bottom end to the icing mound.
  • Take a little royal icing and thin with a few drops of water. Brush or dab on the base and sprinkle over the crushed sugar cubes. Leave to set.

1 peanut butter cup
1 chocolate wafer cookie
1/2 tsp. creamy peanut butter
2 pretzel sticks
1 chewy fruit snack roll
5 candy-coated chocolate pieces

Steps:

  • Thread marshmallows on lollipop stick to resemble a snowman.
  • Attach peanut-butter cup to wafer with half of the peanut butter. Place on top of snowman for the "hat," securing with remaining peanut butter. Insert pretzel sticks into middle marshmallow for the "arms."
  • Cut fruit roll into desired length for the "scarf;" wrap around snowman. Decorate with candies as desired.

These cheerful snowmen have a secret -- they're flavored with peppermint extract for an extra dose of holiday cheer.

1 cup confectioners' sugar, plus more for dusting the pan and dipping the cutters
3 packets unflavored powdered gelatin (about 3 tablespoons)
1 1/2 cups granulated sugar
1 cup light corn syrup
1/8 teaspoon kosher salt
1/2 teaspoon peppermint extract
1/3 cup cornstarch
12 black licorice gumdrops
6 gummy straw candies, such as Sour Straws
6 pretzel sticks, broken in half
12 small orange candies, such as Tic Tacs
1/2 cup chopped semisweet chocolate or semisweet chocolate chips

Steps:

  • Dust an 11-by-15-inch baking dish liberally with confectioners' sugar. Pour 1/2 cup cool water into the bowl of an electric mixer fitted with the whisk attachment and sprinkle the gelatin over.
  • Meanwhile, combine the granulated sugar, corn syrup, salt and 1/2 cup water in a small saucepan. Bring to a boil over medium high heat and cook, swirling the pan occasionally without stirring, until the mixture reaches 240 degrees F on a candy thermometer, 6 to 7 minutes.
  • With the mixer on low speed, slowly pour the sugar syrup into the gelatin mixture. Once all of the syrup has been added, increase the speed to high and whisk until the mixture is bright white and forms very stiff peaks and the bowl has cooled and is just warm to the touch at the bottom, 8 to 10 minutes. Add the peppermint extract and mix to combine. Spread the mixture into the prepared pan, smooth the top and dust liberally with confectioners' sugar. Let sit overnight before cutting.
  • When ready to assemble, combine 1 cup confectioners' sugar and the cornstarch in a small sieve. Liberally dust a work surface with some of the mixture and unmold the marshmallow slab in one piece (you will need to guide it from the pan with an offset spatula and your fingers). Dust both sides of the slab well with the sugar-cornstarch mixture. Using 1-inch, 1 1/4-inch and 1 1/2-inch round cutters dipped in confectioners' sugar, cut 12 marshmallows of each size. Dust the marshmallows all over with the remaining sugar-cornstarch mixture.
  • Build the snowmen on the lollipop sticks, starting with the largest diameter marshmallows. Stick a licorice candy on top of each for a hat. With scissors, cut the gummy straws in half lengthwise. Flatten the pieces with a rolling pin to make flat scarves for the snowmen and tie them on. Stick the pretzel pieces into the middle marshmallows for "arms Use the orange candies to make noses.
  • Melt the semisweet chocolate in a small bowl in the microwave at 50 percent power in 15 second intervals, stirring after each, 45 seconds to 1 minute. Stir until completely smooth and transfer to a piping bag with a small plain tip. Pipe chocolate eyes, a mouth and buttons onto each snowman.
