PEANUT BUTTER CHIP COOKIES

Deliciously thick, soft, and chewy peanut butter cookies that are LOADED with flavour, and stuffed full of peanut butter chips. These super easy cookies are a peanut butter lover's dream!

2 cups (250g) plain/all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons cornflour/cornstarch
1/4 teaspoon salt
1/2 cup (115g) unsalted butter, melted
3/4 cup (150g) light brown sugar
1/4 cup (50g) caster/granulated sugar
1 large egg
2 teaspoons vanilla extract
1/2 cup (125g) smooth peanut butter
1 cup (175g) peanut butter chips

Steps:

  • Preheat the oven to 180C/350F/Gas 4. Line a baking tray with parchment paper or a silicone mat, and set aside.
  • Whisk together the flour, baking powder, baking soda, cornflour, and salt. Set aside.
  • In a separate large bowl, whisk together the melted butter and sugars until combined.
  • Add the egg, vanilla, and peanut butter, and mix until combined.
  • Add the dry ingredients, and mix until just combined. Fold in the peanut butter chips.
  • TIP: If you find the cookie dough too crumbly, add milk (1 tablespoon at a time) and mix until it comes together and is easier to manage.
  • Roll the dough into 2-oz balls (or use a medium cookie scoop), and place onto the prepared baking tray. Bake for 10 - 12 minutes.
  • Allow to cool on the baking tray for 5 - 10 minutes before transferring them to a wire rack to cool completely.

1/2 teaspoon baking soda
1/4 teaspoon salt
2 cups plus 2 tablespoons all-purpose flour (spooned and leveled)
1/2 cup (1 stick) unsalted butter, room temperature
1 cup packed light-brown sugar
1 1/2 cups smooth peanut butter
1 large egg
1/2 cup whole milk
1/2 cup granulated sugar

Steps:

  • In a bowl, whisk together baking soda, salt, and 2 cups flour; set aside. In a large bowl, using an electric mixer, beat butter, brown sugar, and 1 cup peanut butter until light and fluffy; beat in egg. With mixer on low, gradually add flour mixture, beating just until combined (do not overmix).
  • Form dough into two 8-inch-long rectangular logs. Wrap each log in waxed or parchment paper; freeze until firm, about 1 hour.
  • Preheat oven to 350 degrees, with racks in upper and lower thirds. With a sharp knife, slice dough 1/4 inch thick; place on two baking sheets, 1 inch apart. Bake until cookies are puffed, 12 to 15 minutes, rotating sheets halfway through. Transfer to wire racks; let cool.
  • Make filling: In a saucepan, whisk milk and 2 tablespoons flour over medium until thickened, 2 minutes; let cool. In a bowl, using mixer, beat together 1/2 cup peanut butter and granulated sugar; beat in cooled milk mixture. Spread smooth sides of half the cookies with 1 tablespoon filling; sandwich with remaining cookies.

8 tablespoons (1 stick) unsalted butter
3/4 cup smooth peanut butter
1/2 cup granulated sugar
1/2 cup packed dark-brown sugar
1 large egg
1/2 teaspoon pure vanilla extract
1 cup all-purpose flour
3/4 teaspoon baking soda
Dry-roasted, salted peanuts, for sprinkling (optional)

Steps:

  • Heat oven to 350 degrees. Line several baking sheets with parchment paper, and set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream butter, peanut butter, and both sugars together until light and fluffy. Add egg and vanilla, and mix on medium speed until well combined.
  • In a medium mixing bowl, sift flour and baking soda together. Add to the butter mixture, and beat just to combine.
  • Scoop out 2 tablespoons of dough, shape into a ball, and place on one of the prepared baking sheets. Repeat with remaining dough, placing scoops 3 inches apart. Dip the tines of a fork in warm water; press the dough balls lightly with the back of the fork to flatten them slightly (dip the fork back in the water for each dough ball, to prevent sticking). Sprinkle with a few peanuts, if desired.
  • Transfer to the oven, and bake until golden brown, 18 to 20 minutes, rotating the baking sheets between the oven shelves halfway through baking. Transfer baking sheets to a wire rack to cool. Store in an airtight container at room temperature up to 1 week.

CLASSIC PEANUT BUTTER COOKIES

2 1/2 cups all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, softened
1 cup granulated sugar
1 cup packed light-brown sugar
2 large eggs
1 1/2 cups smooth peanut butter

Steps:

  • Preheat oven to 350 degrees. Whisk flour, baking soda, and salt in a medium bowl.
  • Put butter and sugars into the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until pale and fluffy, 2 to 3 minutes. Mix in eggs, then peanut butter.
  • Reduce speed to low. Add flour mixture in 3 batches, mixing until just combined after each addition. Cover with plastic wrap, and refrigerate 30 minutes.
  • Using a 1 1/2-inch ice cream scoop, drop dough onto baking sheets lined with parchment paper, spacing about 1 1/2 inches apart. Press cookies with fork tines to flatten and create a cross-hatch pattern. Bake until golden brown, 14 to 16 minutes. Let cool on sheets 5 minutes. Transfer cookies to wire racks to cool completely.

Steps:

  • Preheat oven to 350 degrees. In a medium bowl, whisk together flour and baking powder; set aside.
  • In a large bowl, beat peanut butter, sugar, and butter until smooth. Beat in egg. Gradually add flour mixture, beating to combine.
  • Pinch off dough by the tablespoon; roll into balls. Place 2 inches apart on parchment-lined baking sheets. Using a fork, press balls in a crisscross pattern, flattening to a 1/2-inch thickness.
  • Bake cookies, rotating halfway through, until lightly golden, 18 to 22 minutes. Cool cookies on a wire rack.

1 cup firmly packed light brown sugar
1 large egg
1/2 teaspoon vanilla extract
1 cup smooth peanut butter

Steps:

  • Sift together the dry ingredients and set aside. Cream the butter and sugar in the bowl of an electric mixer using the paddle attachment. Add the egg and vanilla and beat until combined. Add the peanut butter and continue beating on low speed. Add the sifted dry ingredients and beat until just blended. Cover the dough with plastic wrap and transfer to the refrigerator. Chill until firm, about 1 hour.
  • Heat the oven to 350 degrees. Line a baking sheet with a silpat. Form dough into 1-inch balls. Place balls on cookie sheet about 2 inches apart. Press down slightly with the palm of your hand. Using the tines of a fork, make a criss-cross pattern in the dough. Bake until rich golden brown, about 10 to 12 minutes. Transfer to a rack to cool.

I got this recipe from a woman I worked with. These are by far the best peanut butter cookies I've ever eaten. They're amazingly fluffy, and the PB chips take them to a whole other level of peanut buttery goodness. I like to make them large.

1 cup shortening
1 cup white sugar
1 cup brown sugar
2 eggs
1 cup peanut butter
2 cups all-purpose flour
2 teaspoons baking soda
1/4 teaspoon salt
1 (270 g) package peanut butter chips

Steps:

  • Preheat the oven to 375°F.
  • Cream softened shortening until fluffy. Add sugar gradually, mixing until creamy. Beat in eggs, one at a time and mix well. Add peanut butter and blend well.
  • In another bowl, measure flour. Add soda and salt and stir thoroughly to blend. Add to peanut butter mixture and mix thoroughly. Add peanut butter chips and stir.
  • Drop dough from spoon onto ungreased baking sheet. Bake in a 375 F oven for 12-15 minutes. Makes about 3 dozen large cookies.
