ORANGE-GLAZED PORK CHOPS, ROASTED VEGETABLE MEDLEY AND ALMOND RICE PILAF
Marmalade brings some zing to everyday pork chops!

Steps:
- Heat oven to 425°F
- Line a rimmed baking sheet with parchment paper
- Dress the vegetables with olive oil, salt and pepper, and arrange on the baking sheet
- Roast veggies 18-20 minutes until tender and crispy at edges
- Douse with lemon juice and transfer to serving bowl
- For the rice, melt butter in a saucepot over medium heat
- Add nuts and spaghetti, and toast to golden
- Add rice and stir a minute more; season with salt and pepper
- Add stock, bring to a boil then stir and cover pan
- Reduce heat to a simmer and cook 15-18 minutes to tender
- Remove pot from heat and fluff rice with fork
- Meanwhile, heat a large, cast-iron skillet over medium-high heat
- Season pork chops on both sides with salt and pepper
- Add 1 turn of oil to the pan and brown chops on both sides, about 7-8 minutes turning occasionally; remove to a plate
- Add another turn of the pan of olive oil along with the shallots, garlic and thyme
- Stir 2 minutes, add stock and Worcestershire and whisk in marmalade
- Cook to thicken, about 1 minute, then add chops back in and turn to coat them in the sauce
- Simmer to thicken another minute or 2
- Serve chops and sauce with vegetables and rice alongside

Steps:
- In a bowl combine marmalade, chili sauce, mustard and cumin, mixing well to combine, then set aside.
- Heat oil in a non-stick skillet over medium high heat.
- Sprinkle chops with salt and pepper and brown in hot oil about 4 minutes on each side.
- Remove from pan and cover with foil to keep warm.
- Lower heat a bit and saute onion until softened, about 5 minutes, adding a little more oil if needed.
- Add marmalade mixture to onions, stirring well, and let cook for about 2 minutes.
- Return chops to skillet, turning to coat with the glaze and cook over low heat about 1 minute on each side.
- Serve hot.

- Preheat the oven to 350°F (180°C).
- In a medium bowl, mix together the cranberry sauce, orange marmalade, olive oil, ginger, red pepper flakes, 1 teaspoon of salt, and ½ teaspoon of pepper. Set aside.
- Season the pork chops on both sides with the remaining teaspoon of salt and ½ teaspoon of pepper.
- Heat the canola oil in a large cast-iron skillet over medium-high heat. When the oil is shimmering, sear the pork chops in batches until golden brown on both sides, about 2 minutes per side. Sear the fat side of the pork chops until lightly browned and some of the fat has rendered, about 1 minute more.
- Turn off the heat then arrange all of the pork chops in the pan. Spoon the cranberry mixture over the chops, spreading in an even layer.
- Transfer the pan to the oven and bake for 5-7 minutes, or until the internal temperature reaches 140°F (60°C). Let rest for 5 minutes.

- Preheat oven to 375 degrees F (190 degrees C).
- Place pork roast in a large roasting pan and season liberally with salt and black pepper. Spread half the orange marmalade over the roast; mix the remaining marmalade with rosemary in a large bowl. Stir orange juice and olive oil into rosemary mixture.
- Combine parsnips and onions in another bowl. Add about 2 tablespoons orange marmalade mixture; toss to coat. Arrange vegetables around pork roast.
- Bake pork in preheated oven for 30 to 45 minutes. Pour remaining orange juice mixture over pork. Increase oven heat to 450 degrees F (230 degrees C) and continue to cook until pork is slightly pink in the center, 15 to 20 more minutes. PORK CHOPS WITH ORANGE MARMALADE GLAZE
Using an Instant Pot® (pressure cooker) is a great way to cook pork chops because the result is always tender and moist. This recipe has an easy glaze with a slightly sweet Asian flavor. It uses a jar of orange marmalade as a shortcut and along with a 4-minute cooking time, this recipe is perfect for any day of the week.

- Pre-heat the pressure cooker using the BROWN OR SAUTE setting. Season the pork chops with salt and freshly ground black pepper. Add the oil and brown the pork chops on both sides. Remove the browned chops and set aside.
- Add the onion to the cooker and saute until the onion starts to brown and soften - about 8 minutes. Add the chicken stock and stir, scraping up any brown bits on the bottom of cooker. Add the carrots, water chestnuts, orange slices and 1/2 cup of orange juice into the cooker. Stir to combine, pushing the sliced down into the liquid. Return the browned pork chops to the cooker, placing them on top of the vegetables and liquid. Turn the cooker off.
- In a small bowl whisk together orange marmalade, soy sauce, honey, and two tablespoons of orange juice. Spoon half of this mixture onto the pork chops and reserve the other half to add to the sauce at the end. Lock the lid in place.
- Pressure Cook on High for 4 minutes.
- Let the pressure drop Naturally and carefully remove the lid. Transfer the pork chops and vegetables to a platter and cover loosely with foil. Reserve half a cup of the braising liquid from the pressure cooker and discard the rest. Return the pressure cooker to the BROWN OR SAUTE setting. Add reserved braising liquid, sugar snap peas and reserved orange marmalade mixture. Bring the sauce to a boil and simmer until it thickens - about 3 minutes. Serve the pork chops and vegetables over rice, pouring the sauce evenly over the top.

- 1. Preheat oven to 375 degrees. Wipe pork chops well. Make stuffing. In hot skillet add butter, cook onions and celery until tender, about 8 minutes. Add bread cubes and brown slightly. Remove from heat. Add parsley, salt, orange peel, 1 teaspoon seasoned salt and orange juice; toss mixture lightly to combine. Fill pocket of chops with stuffing. - BRINE PORK CHOPS: Combine brine ingredients in a container large enough to let pork chops submerge in brine solution completely or a large ziploc bag. Swirl around to let salt dissolve. Submerge the pork chops. Cover (or zip up bag) and let them sit in fridge for 30 minutes to 2 hours. Note 2. Remove the pork chops. Discard the brine. Rinse well and pat the pork chops dry with paper towels (very important!).
- GATHER GLAZE INGREDIENTS: Don't mix them together.
- PREPARE GRILL AND CHOPS: Clean grill grates and spray with oil. Or brush grates with a paper towel dipped in oil. Heat gas grill to medium-high heat (about 450F/232C). Brush pork chops with olive oil and mustard on both sides. Sprinkle lightly with salt (use more if brining period was short or if you skipped the brining). Sprinkle with pepper and dried rosemary.
- GRILL PORK CHOPS: Grill pork chops for about 2 - 4 minutes on first side. Cooking time will depend on the thickness of pork chops. Turn, then brush with half the marmalade. Grill another 2-4 minutes, just until the internal temperature reaches 140F/60C tested with an instant meat thermometer in thickest part of the meat not near bone (temp will rise to 145F/62/8C with resting). The important thing is not to overcook the chops. Pork should still have a bit of give or softness when pressed with a finger. Turn again for 1 minute to caramelize the marmalade if desired. Note 3 for pan/oven method. Remove from grill, place BBQ pork chops on cutting board or plate and let rest, tented loosely with aluminum foil, to keep warm for 5 minutes (or 10 minutes if chops are very thick). Resting is critical to juiciness and tenderness. It redistributes the juices in the meat to ensure a juicy pork chop.
