CHUNKY ORANGE MARMALADE COOKIES

My mother had this recipe in her cookie collection and she and I began baking these when I was a young teen. There is no sugar among the ingredients, just the subtle taste of marmalade to add sweetness. It's a soft cookie with an interesting combination of orange and chocolate.

1/4 cup shortening
1 egg yolk
1/2 cup orange marmalade
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup semisweet chocolate chips
1/2 cup chopped pecans

Steps:

  • In a small bowl, cream the shortening, egg yolk and marmalade until light and fluffy. Beat in vanilla. Combine the flour, salt, baking powder, baking soda, cinnamon and nutmeg; add to creamed mixture and mix well. Stir in chocolate chips and pecans., Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 350° for 12-15 minutes or until lightly browned. Remove to wire racks.

1/2 cup shortening
1 cup sugar
2 large eggs
1 cup sour cream
1/2 cup orange marmalade
4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
FROSTING:
1/2 cup butter, softened
1/4 cup orange marmalade
3 cups confectioners' sugar

Steps:

  • In a large bowl, cream shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine sour cream and orange marmalade; set aside. Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with sour cream mixture and mix well., Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 375° for 10-12 minutes or until lightly browned. Remove to wire racks to cool completely., For frosting, in a small bowl, combine butter and marmalade. Gradually beat in confectioners' sugar until blended. Frost cookies.

Just a simple cookie recipe I found online while searching for recipes that use orange marmalade. My son loved them, as he said they reminded him of the Orange Crescent Swirls (recipe #94879), posted by winkki, that he dearly loves. Results may vary depending on the type of the marmalade you use, and whether it is on the sweet or bitter side. Textures also vary, and if your marmalade is the type that has large pieces of peel, I would suggest chopping them up before mixing in the batter.

1/3 cup unsalted butter, softened
2/3 cup granulated sugar
1 egg
6 tablespoons orange marmalade
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder

Steps:

  • Preheat oven to 375°F Grease a cookie sheet (I just use parchment paper).
  • In a large mixing bowl, cream together the butter and sugar. Add the egg and orange marmalade and mix until thoroughly combined. Add additional marmalade if the batter is too stiff.
  • In another bowl, sift together the flour and baking powder. With the mixer running, slowly add the flour mixture to the creamed mixture until blended.
  • Drop by spoonfuls on the cookie sheet; do not crowd the cookies as the batter will spread during baking. Bake until the cookies spread out and are lightly browned, 8-10 minutes.
  • Cool a minute or two on the cookie sheet before transferring to a wire rack to cool.
  • *The original yield was 40 cookies, but I must have made them a little large, because I only ended up with 22.

½ cup butter, softened
½ cup sifted confectioners' sugar
2 teaspoons lemon zest
1 teaspoon vanilla extract
1 cup all-purpose flour
½ cup toasted hazelnuts
¼ teaspoon salt
¼ teaspoon ground cinnamon
3 tablespoons lemon marmalade

Steps:

  • In a mixing bowl beat butter and 1/2 cup sugar with an electric mixer until smooth. Beat in lemon peel and vanilla.
  • In a food processor, finely grind flour, nuts, salt and cinnamon. Add to butter mixture and mix just until dough holds together.
  • Gather dough into a ball and flatten into a disk. Wrap in plastic and chill for about 1 hour or until firm.
  • Preheat oven to 325 degrees F. Butter cookie sheet.
  • Roll dough on a lightly floured surface to 1/4-inch thick. Cut out cookies with a 3-inch round cookie cutter. Gather scraps into a ball and re-roll to 1/4-inch thick. Cut out cookies, forming total of 12. Transfer cookies to the cookie sheet.
  • Using a 1-inch round cookie butter, cut out the center of 6 cookies and remove. Bake about 20 minutes or until golden. Cool on rack for 5 minutes.
  • Leaving a 1/8-inch border, spread 1 1/2 teaspoons of marmalade evenly over each cookie without a hole. Sift additional powdered sugar over cookies with holes. Place cookies with holes sugar side up atop jam-covered cookies.

½ teaspoon almond extract
½ teaspoon vanilla extract
1 egg
1 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon ground cinnamon
¼ teaspoon ground cloves
½ teaspoon salt
1 cup orange marmalade

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease an 8-inch square pan.
  • In a large mixing bowl, cream the shortening with the sugar, vanilla, and almond extract. Stir in the egg and mix until well blended. In a separate bowl, mix together the flour, baking powder, cinnamon, cloves and salt. Add to the first mixture and mix well. Spread half of the dough into the pan. Cover with a layer of marmalade. Spread the remaining dough over the top
  • Bake for 25 minutes. Let cool before cutting into bars.

2 3/4 cups all-purpose flour
1 teaspoon baking powder
3/4 cup salted butter, at room temperature
1 cup sugar
1 large egg
1/2 cup orange marmalade
1 (8 ounce) can mandarin oranges, chopped and drained
1 cup white chocolate chips
powdered sugar (optional)

Steps:

  • Preheat oven to 300 degrees F & Line cookie sheets with parchment paper or silpats.
  • Whisk together flour and baking powder in a medium bowl; set aside.
  • Place butter and sugar in a large mixing bowl and blend with an electric mixer on medium speed until the mixture appears grainy but well-mixed.
  • Add egg and orange marmalade, beating until smooth; reduce mixer speed to low and add flour mixture and mandarin oranges.
  • Mix only until combined; do not overmix.
  • Fold in white chocolate chips; chill mixture for 30 to 60 minutes to firm up.
  • Drop tablespoons of dough onto prepared cookie sheets, placing cookies 1-1/2 inches apart.
  • Bake 15 to 18 minutes, until bottoms just begin to brown.
  • Let rest on cookie sheets for 5 minutes before using a spatula to move them to racks.
  • Cool to room temperature and dust with powdered sugar, if desired.

Number Of Ingredients 10

1 1/2 tsp freshly grated orange zest or lemon zest
1 egg (slightly beaten)
1/2 c bakers sugar
1/3 c butter, not quite room temp.
1 tsp orange or lemon juice powder (i get mine at king arthur)
3 Tbsp orange or lemon marmalade...you can use any flavor you like
1 c all purpose flour
1/2 tsp baking powder
1/3 tsp salt
powdered sugar for dusting or make a citrus icing

Steps:

  • 1. Fluff the flour, salt and baking powder together in a bowl with a whisk. Set aside.
  • 2. Cream butter and sugar. Add the egg and grated orange or lemon zest. Add the powder orange or lemon juice and mix in. Add the marmalade and the beat until light.
  • 3. Add the flour mixture to the butter mixture and mix well.
  • 4. Grease cookie sheets. Preheat oven to 400*. Drop by a teaspoon the dough on to prepared cookie sheets. Bake until lightly golden brown. Let set on cookie sheets a few minutes then remove to cut paper bag to cool completely. Sprinkle with powdered sugar.
  • 5. I have made a Lime Marmalade and use this recipe for Lime Marmalade cookies. You can use any Marmalade, fruit butter or Jam you like. Try using Cranberry Marmalade for the holidays.

  • For the icing, combine orange and lemon zests and juices in a bowl. In the bowl of an electric mixer fitted with a whisk attachment, beat butter on low speed. Add one cup (100 grams) of the powdered sugar and blend thoroughly. Gradually add the remaining sugar, salt and citrus juice mixture and mix until smooth. Ice cookies evenly with a teaspoon or butter knife and allow icing to set for an hour before serving. You can layer cookies between waxed paper in an air-tight container if you are packaging for gifting.
