1 pound (total) turnips and radishes
Salt
2 tablespoons butter or flavorful oil, like olive or peanut

Steps:

  • Peel vegetables, or not; quarter turnips if necessary to make them about same size as radishes. Put in saucepan with pinch of salt, butter or oil, and water to come up about halfway to their height. Cover and turn heat to medium-high.
  • Simmer until vegetables are just about tender, 10 to 20 minutes. Uncover and continue to cook until vegetables are shiny and glazed with their juices. Add more salt if necessary and serve hot.

4 tablespoons butter
2 pounds baby turnips with greens, turnips quartered and greens chopped
2 pounds baby turnips with greens, turnips quartered and greens chopped
1 cup chicken stock
2 tablespoons cider vinegar
Salt and freshly ground black pepper

Steps:

  • Add the butter to a large skillet set over medium-high heat. Add the turnips to the pan and cook until slightly browned and just tender, about 10 minutes. Add the greens and stock, and simmer until the turnips are cooked through and greens are tender, 10 to 12 minutes. Stir in the vinegar and season with salt and pepper to serve.

My Chicken Broth-Braised Baby Turnips image

These small turnips are perfect with duck or roast chicken.

Number Of Ingredients 7

14 ounces small new turnips, all about the same size for even cooking, peeled
1/4 ounce superfine sugar
1 pinch fine salt
3 tablespoons butter
1 1/4 cups chicken broth, preferably homemade
3-6 tablespoons pan drippings from a roast chicken, or 2 tablespoons olive oil
1 tablespoon flat-leaf parsley, chopped

Steps:

  • Peel the turnips and put them in a large bowl with the sugar and pinch of fine salt. Toss to coat the turnips thoroughly.
  • In a large pot, melt the butter. When it is blond and foamy, add the turnips to the pot in a single layer and brown on all sides. When they are golden brown, add a third of the chicken broth and cook, covered, over low heat until the broth has been completely absorbed. Repeat a second and then a third time: When this is done, the turnips are cooked. (Turnips should never be left dry in the pot. If the broth reduces too quickly, add a bit of water when necessary.)
  • Drizzle with a few spoons of chicken jus or olive oil and bring to a simmer. When it begins to bubble, sprinkle with parsley and serve immediately.

Turnips are appreciated in Algeria not only for their faithful ubiquity but also for how their characteristics change throughout the winter-sweet and mild at the beginning and assertively earthy toward the end. Here, to emphasize their natural nuttiness and complexity, they're gently glazed with butter, then sprinkled with garlicky toasted bread crumbs and abundant poppy seeds.

3 tablespoons unsalted butter
2 pounds medium turnips (not Japanese), peeled and cut into 1-inch-thick wedges
1 1/2 cups water
1 tablespoon fresh lemon juice
2 tablespoons extra-virgin olive oil
1 garlic clove, minced
1 cup fine fresh bread crumbs from a baguette
1 tablespoon poppy seeds
1 tablespoon chopped flat-leaf parsley

Steps:

  • Melt butter in a 12-inch heavy skillet over medium heat, then add turnips, water, lemon juice, and 1/2 teaspoon salt and bring to a boil. Reduce heat to low and simmer, covered, 30 minutes. Increase heat to medium and stir turnips, then briskly simmer, uncovered, until all of liquid has evaporated and turnips are glazed and just tender, 20 to 35 minutes (they should be cooked through but still retain their shape).
  • Heat oil in a large heavy skillet over medium heat until it shimmers, then cook garlic, stirring, until pale golden, about 1 minute. Add bread crumbs and poppy seeds and cook, stirring frequently, until golden, 4 to 5 minutes. Stir in parsley and salt to taste. Just before serving, sprinkle bread crumbs over turnips.

  • Heat the oil in your wok over low heat. Add the star anise and Sichuan peppercorns. Let them infuse the oil for 10 minutes, taking care not to let them burn.
  • Scoop out and discard the aromatics, and leave the oil in the wok. Add the ginger, garlic, and the white parts of the scallion, and turn up the heat to medium-high. Stir for a minute or so. Add the ground meat, and stir-fry until browned. Next, add the turnips and shiitake mushrooms. Stir and mix everything well.
  • Add the Shaoxing wine, salt, dark soy sauce, light soy sauce, oyster sauce, sugar, and 2 cups of water. Mix everything well, cover, and let simmer for about 15 minutes over medium heat--until the turnips are cooked through and translucent. While the contents of the woks are simmering, prepare the cornstarch mixture and set aside.
  • Once the turnips are fully cooked through, uncover, turn the heat up to high, add the cornstarch mixture. Stir-fry for a minute––the mixture should thicken into a sauce. Stir in the green parts of the scallions and then serve over rice.
