1 can (8 ounces) unsweetened pineapple chunks
1/2 cup water
1/2 cup soy sauce
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon ground ginger
1/4 teaspoon paprika
1 pound beef top sirloin steak, cut into 1-inch pieces
16 medium fresh mushrooms
1 large onion, cut into chunks
1 medium green pepper, cut into 1-inch pieces
1/2 cup butter, melted

Steps:

  • Drain pineapple, reserving juice; refrigerate the pineapple. In a large resealable plastic bag, combine the water, soy sauce, garlic powder, salt, ginger, paprika and reserved pineapple juice; add steak. Seal bag and turn to coat; refrigerate for at least 30 minutes. , Drain and discard marinade. On metal or soaked wooden skewers, alternately thread the steak, mushrooms, onion, green pepper and pineapple. Grill, covered, over medium-hot heat or broil 4-6 in. from the heat for 4-5 minutes on each side or until meat reaches desired doneness, basting frequently with melted butter.

1 teaspoon grated lime peel
2 tablespoons lime juice
2 tablespoons reserved pineapple juice from can of pineapple
1/4 teaspoon salt
1/4 teaspoon red pepper sauce
2 cloves garlic, finely chopped
3/4 lb uncooked deveined peeled large shrimp, thawed if frozen
1 can (8 oz) pineapple chunks in juice, drained, 2 tablespoons juice reserved for marinade
1 orange bell pepper, cut into 12 pieces
4 medium green onions, cut into 1 1/2-inch pieces

Steps:

  • In shallow glass or plastic dish or resealable food-storage plastic bag, mix marinade ingredients. Add shrimp, pineapple, bell pepper and onions; stir to coat. Cover dish or seal bag; refrigerate 15 to 30 minutes, turning once or twice.
  • Heat gas or charcoal grill. Carefully brush vegetable oil on grill rack. On each of 4 (12- to 14-inch) metal skewers, thread shrimp, pineapple, bell pepper and onions alternately, leaving small space between each piece. Reserve marinade.
  • Place kabobs on grill over medium heat. Cover grill; cook 5 to 7 minutes, turning and brushing with marinade once, until shrimp are pink and vegetables are tender. Discard any remaining marinade.

1 can (6 ounces) unsweetened pineapple juice
1/3 cup honey
1/3 cup soy sauce
3 tablespoons cider vinegar
1-1/2 teaspoons minced garlic
1-1/2 teaspoons ground ginger
1-1/2 pounds beef top sirloin steak, cut into 1-inch pieces
1 fresh pineapple, peeled and cut into 1-inch chunks
12 large fresh mushrooms
1 medium sweet red pepper, cut into 1-inch pieces
1 medium sweet yellow pepper, cut into 1-inch pieces
1 medium red onion, cut into 1-inch pieces
2-1/2 cups uncooked instant rice

  • In a small bowl, combine first six ingredients. Pour 3/4 cup into a large resealable plastic bag; add beef. Seal bag and turn to coat; refrigerate 1-4 hours. 1 (12 ounce) bottle Italian-style salad dressing
10 ounces skinless, boneless chicken breast, cut into bite-size pieces
10 large shrimp, peeled and deveined
1 green bell pepper, cut into bite-size pieces
1 red bell pepper, cut into bite-size pieces
1 sweet onion, cut into bite-size pieces
10 ounces fresh mushrooms, halved
1 clove garlic, minced
1 package bamboo skewers, soaked in water for 60 minutes

Steps:

  • Gently stir the pineapple chunks in juice, Italian-style salad dressing, chicken, shrimp, green bell pepper, red bell pepper, sweet onion, mushrooms, and garlic together in a large bowl. Cover the bowl with plastic wrap; allow to marinate in refrigerator for 8 hours or overnight.
  • Preheat an outdoor grill for medium heat, and lightly oil the grate.
  • Drain the mixture in a colander over a bowl to catch the liquid; shake to remove excess liquid. Alternately thread the chicken, red bell pepper, onion, green bell pepper, onion, pineapple, mushroom, and shrimp onto a skewer until each skewer is full; repeat until all ingredients are used.
  • Pour the strained marinade into a small saucepan and bring to a boil over high heat. Reduce heat to medium-low, and simmer for 10 minutes; set aside.
  • Cook the skewers on the preheated grill, turning frequently, until the chicken is no longer pink in the center and the juices run clear, about 15 minutes. Baste skewers generously with the reserved marinade as they cook.

3 Tbsp soy sauce
3 Tbsp brown sugar
1 Tbsp sesame oil
1/4 tsp ground ginger
1 tsp garlic powder
8 boneless chicken breast, cut into 2" pieces
1 20 oz can(s) pineapple chunks, drained
1/2 c your favorite bbq sauce (I love Sunset Gourmet's sweet & spicy brown sugar bourbon sauce)

Steps:

  • 1. In a shallow glass dish, mix the soy sauce, brown sugar, sesame oil, ginger, and garlic powder.
  • 2. Stir the chicken pieces and pineapple into the marinade until well coated.
  • 3. Cover and marinate in the refrigerator for at least 2 hours.
  • 4. Preheat grill to medium-high heat. Lightly oil the grill grate. Thread chicken and pineapple alternately onto skewers.
  • 5. Grill 15 to 20 minutes or until chicken juices run clear.

1-2 fresh pineapples cut into chunks (dispose of top, shell, and core)
2 T brown sugar
1/2 tsp. ground cinnamon
good olive or canola oil

Steps:

  • Soak skewers in water for at least 10 minutes to prevent burning.
  • Preheat grill to high or 400 degrees.
  • Poke the skewers through 8-10 fresh pineapple chunks each, depending on the size of the chunks. Lay them out on a baking sheet or tray when finished.
  • Brush lightly on all sides with good olive or canola oil.
  • Mix brown sugar and cinnamon together in a small bowl and lightly sprinkle onto the skewers. I just do this lightly on one side, but you can do more, and on both sides if you want a sweeter result.
  • Place skewers onto preheated grill. Monitor carefully as they cook. Flip every 2-3 minutes until warmed/cooked through. I flipped my skewers a total of 3 times. The individual chunks may flip and have a mind of their own. It is totally okay if some sides get cooked more than others.

1/3 cup orange juice
1/4 cup fresh ginger (peeled and chopped)
16 ounces marlin steaks (1-inch thick)
3 tablespoons fat-free mayonnaise

Steps:

  • Peel and core the pineapple.
  • Cut part of the flesh into 12 (1-inch) cubes and reserve.
  • Coarsely chop the rest of the pineapple and place in a blender.
  • Add the orange juice and ginger.
  • Puree.
  • Pour into a bowl or shallow baking dish.
  • Cut the Marlin into 16 cubes.
  • Add to the pineapple mixture, toss to coat, cover and allow to marinate in the refrigerator for 1 hour.
  • For each serving, alternate four Marlin cubes and three pineapple cubes on an 8-inch skewer.
  • Reserve the marinade.
  • Place the skewers on a lightly oiled broiler pan.
  • Broil about 4 inches from the heat for 4 to 5 minutes, turning three times to evenly broil all sides.
  • Sauce.

  • Whisk in the mayonnaise until smooth.
